I visited the Sage on Sep 23 2010.I hoped to gain a new appreciation for how the Sage runs.I learned that it takes everyone working together and talking about what they are doing and what has been done so that everyone in the dining room gets what they ordered.I learned that they have different managers ensuring things in their area are running as smooth as possible.I learned that the line is really different stations and everyone has a different job and it is not a free for all.Most of all I learned the you have to do your prep work before the Sage opens or you are already behind the power curve.

Every time I have been at the Sage someone is doing prep work getting ready for something. Don’t wait until it’s ordered to start working on
