IAITC Through the Seasons
A seasonal guide to agricultural lessons and workshop opportunities.
Page 2
The IAITC Through the Seasons booklet is designed to help agricultural literacy professionals organize and plan teacher workshops and classroom presen-tations. This concept began as a workshop series helping teachers bring agricultural lessons into their classrooms during the appropriate or logical seasons of the year. The booklet will provide brief background information, activity suggestions which can be found at www.agintheclassroom.org, books and videos to help teachers educate their students on the topics provided.

Soil and Earthworms A study of seeds and plant growth wouldn’t be com-plete without learning about soil composition and its im-portance to plant development. Illinois is a major agricultural leader because of our rich soils. Activities on soil particles, tex-ture and quality are important to understanding the importance of this natural resource. While digging through soil, students are likely to find earthworms. These fascinating little creatures play a big role in soil quality.

PUMPKINS Illinois farmers grow more pumpkins than anywhere
else in the world! In fact, they grow 90% of the pumpkins used for processing. Most of that processing takes place in Morton, Illinois at the Libby Pumpkin plant.
References to pumpkins date back many centuries. The name pumpkin originated from the Greek word for "large melon" which is "pepon." Early American settlers used to make pumpkin pie inside of the pumpkin shell. First, they sliced off the pump-kin’s top. Then they removed seeds and filled the insides with milk, spices, and honey. It was baked in hot ashes of a fireplace.

SOYBEANS and SEED GERMINATION
As spring planting begins, it is an excellent opportunity for educators to discuss soybean
production here in Illinois. There are a number of activities that correspond with germination and seed structure lessons already being taught in the classrooms.
Not only are soybeans one of Illinois’ largest crops, but they are also large seeds that make seed dissection and study very easy. Lessons about the many uses of soybeans can lead into studying the variables of germination and plant growth as well as pollination and bees.

APPLES
Did you know that apple trees can live for over 100 years and there are over 7,500 different varieties of apples in the world? An apple tree can produce about
20 bushels of apples per year, depending upon the weather and management practices. Americans eat an average of 19 pounds of fresh apples each year.
The apple was brought to the United States by the Pil-grims in 1620. While the Native Americans taught the early set-tlers how to grow corn and vegetables, the settlers taught the Na-
Page 5
tive Americans how to grow apples with apple tree seeds, seed-lings, and small trees. They used apples to make apple juice, apple cider, dried apples, apple butter, and vinegar. The apples were even food for the pigs, cows, and horses.
Thirty-six states in the United States, including Illinois, grow apples in commercial production. There are 20,000 apple growers that use about half-a-million of our acres to produce ap-ples. These apple growers produce an average of 260 million bushels per year. Most commercial apples are grown in northern states such as Washington, Michigan, and New York.

HARVEST
One common sign of the fall season here in the Midwest is the begin of harvest. Com-bines roll through the brown fields and grain trucks deliver the newly harvested crop to local elevators. Fall decorations not only include pumpkins and apples, but also bundles of corn stalks. The harvest season provides an excellent
opportunity to discuss one of Illinois’ greatest products—corn.
Topics to be discussed can range from the history of corn produc-tion and the Native Americans to the use of corn as a renewable resource to make biodegradable plastics or fuels. Also, provide
Page 8
information about corn processing and products as well as Illi-nois place in the global corn market.
Modern day agriculturists know it as the genius of the Indians, who inter-planted pole beans and squash with corn, using the strength of the sturdy corn stalks to support the twining beans and the shade of the spreading squash vines to trap moisture for the growing crop. Re-search has further revealed the additional benefits of this "companion planting.'' The bacterial colonies on the bean roots capture nitrogen from the air, some of which is released into the soil to nourish the high nitrogen needs of the corn. To Native Americans, however, the meaning of the Three Sisters runs deep into the physical and spiritual well-being of their people. Known as the "sustainers of life," the Iroquois consider corn, beans and squash to be special gifts from the Creator. The well-being of each crop is believed to be protected by one of the Three Sister Spirits. Many an Indian legend has been woven around the "Three Sis-ters" - sisters who would never be apart from one another- sisters who should be planted together, eaten together and celebrated together.

Livestock
While snow covers the ground and very little is growing in Illinois, it is an excellent
time for teachers to include lessons on livestock in their classroom planning. Students should gain the basic knowledge of the products animals provide for us as well as processing, feeding and animal science.

THANKSGIVING
Thanksgiving dates back to the early settlers and gives students an opportunity to look at foods of past and present and the technologi-cal improvements of crop propagation and
preparation over the years. Teachers can strengthen their histo-ry lessons with facts and activities about the food that we associ-ate with this American holiday.

SNOW
Everyone knows that no two snowflakes are the same! The snow that falls in Illinois in the winter actually plays an important part in the agriculture

industry. The exciting study of those one-of-kind snowflakes can lead into the importance of water and the water cycle in crop production.
