DIY ICE CREAM CONE WRAPPERS

Melissa’s Styling Tip:Top the cupcakes with cactus cutouts! The cactus cupcake toppers are made from fondant using a super simple process. Just draw out whatever size and shape of cactus you’d like on paper, then use a scriber needle to prick around the outside of the cactus to create an outline. Place the outline on top of light green fondant, cut out your perfect shape, and attach the fondant to a toothpick to insert into your cupcake. Make these cute toppers a day in advance to leave time to dry and don’t forget to pipe details, such as an outline around the cactus, beforehand. Such an easy process!

ICE CREAM SOCIAL RECIPES

COOKIE TRUFFLES

1 11.9-ounce package chocolate sandwich cookies with white filling (30 cookies), finely crushed1 8-ounce package cream cheese, softened1 pound white baking chocolate, coarsely chopped Colored sugar (optional)

1. Line a large baking sheet with waxed paper or foil; set aside. In a large bowl combine crushed cookies and cream cheese. Beat with an electric mixer on low speed until well mixed. Shape mixture into 1-inch balls. Cover and chill or freeze until firm.2. In a large saucepan cook and stir white chocolate over low heat until melted; cool slightly.3. Dip each ball into melted white chocolate; let excess drip back into pan. Place dipped truffles on the prepared baking sheet.

Melissa’s Styling Tip:Don’t forget the pink and white sprinkles on top! Looking for a fun way to display your treats? Try placing each truffle in a cupcake liner for extra flair.

CRISPY CEREAL TREATS

Nonstick spray coating3 tablespoons butter1 10-½-ounce package (about 6 cups) tiny marshmallows6 cups fruit-flavor rice cereal

1. Line a 13x9x2-inch baking pan with foil, extending the foil over edges of pan. Spray foil with nonstick coating. Set pan aside.2. In a large saucepan melt butter; add marshmallows. Cook and stir over low heat until marshmallows melt and mixture is smooth. Remove from heat; stir in cereal. Using the back of a buttered spoon, press cereal mixture into prepared pan. Cool.3. Use foil to lift cereal mixture out of pan. Using a 2-½-inch cookie cutter, cut into desired shapes. (Or cut into serving-size pieces using a knife.)

Melissa’s Styling Tip:Add 1-½ teaspoons banana extract as you stir in the cereal. Cut the treats into triangles for pretty presentation!

YELLOW CUPCAKES

⅔ cup butter or margarine2 eggs2-½ cups all-purpose flour2-½ teaspoons baking powder½ teaspoon salt1-¾ cups sugar1-½ teaspoons vanilla1-¼ cups milk

1. Allow butter and eggs to stand at room temperature for 30 minutes. Meanwhile, line thirty 2-1/2-inch muffin cups with paper liners. In a medium bowl combine flour, baking powder, and salt; set aside.2. In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Gradually add sugar, about ¼ cup at time, beating on medium speed until well combined and scraping sides of bowl. Beat on medium speed for 2 minutes more. Add eggs, one at a time, beating after each addition (about 1 minute total). Beat in vanilla. Add flour mixture and milk alternately to beaten mixture, beating on low speed after each addition just until combined. Fill each cup half full. 3. Bake in a 375 degree F oven for 18 to 20 minutes or until a wooden toothpick inserted in center of a cupcake comes out clean. Cool on wire racks. Makes about 30 cupcakes.
