preferable at all times Vanilla ice cream sponge and fruit cake will bo needed Lie > cakes are cut from loaves and should be an Inch thick when sliced said should fit nu oblong mold When time cream Is frozen to a mush pack an inch layer In the mold then place the fruit cake on this then cov- er ¬ with another layer of the cream over which lay the sponge cake and then adtJ the last cream layer which I u o I VANILLA ICE CREAM WITH SPONGE AND F11UIT CAKE should fill and overflow the mold Lay over this an oiled paper A buttered one will do or three thicknesses of paraffin paper Put the cover over this allowing the paper to come down placet then cover and the pan to prevent all pos ¬ Ing Pack In salt and ice for three or four hours When ready to servo remove the coverings wipe the outside of the mold with a hot cloth and Invert the mold on to n cold dish when the cream loaf will slip out An extra addition can be served in the whipped cream sauce tinted with yellow or pink using egg yolk for the first and n bit of boiled beet juIce In the latter Instance this being placed In the cream before whipping But this dessert Is just as tasty with ¬ out the sauce Should this be found too much should fill and overflow the mold Layover this an oiled paper A butteredone will do or three thicknesses ofparaffin paper Put the cover overthis allowing the paper to come downplacetthencover and the pan to prevent all pos ¬IngPack In salt and ice for three or fourhours When ready to servo removethe coverings wipe the outside of themold with a hot cloth and Invert themold on to n cold dish when thecream loaf will slip out
