IL MODICANO was born not just to create another business inthe world of chocolate, but to propose products that reflects alife-style concerned with organic products, the protection of theenvironment and not least, one’s health and welfare. We believe we can offer something new and are convinced thatthe use of the best organic ingredients can give birth to intenseflavours, certainly unique and different from anything tastedbefore related to chocolate.

Our goal is to live in a world where organic is the norm andconsumers can choose organic products as an alternative toprocessed ones. To achieve this goal we try to make organicproducts more accessible to everyone.Our mission is to bring innovation and to create high qualityproducts, while at the same time encouraging an organic andsustainable agriculture with no use of GMO ingredients. Ourphilosophy applies to the entire production chain, starting fromthe choice of raw materials and the selection of specific suppliersand ending in the care of the recyclable packing.

Every singleaspect of our manufacturing process is checked by us.We can therefore guarantee that every step, every ingredient,everything in it is definitely special.

ORGANIC - VEGAN - GMO FREE

ORGANIC. Till some years ago not many people paid attention towhere food came from, or to where the ingredients had beencultivated. However, the extensive use of pesticides and theintroduction of GMO products have had increasingly negativeeffects on the quality of the products, on the environment and onthe consumers. Nowadays people are more aware that “we arewhat we eat” and so clients are very concerned and deeplyinterested in knowing what exactly they are going to buy and howthe product has been made.We only use 100% organic ingredients, selected with care and ofvery high quality.

All our products are VEGAN. Veganism is a philosophy and wayof life that seeks to exclude, as far as possible and practical, allforms of exploitation and cruelty to animals for food, clothing,entertainment or any other purpose. In terms of consumption, thismeans a vegan avoids all products containing any animalderivedingredients in food, healthcare, skincare, clothing, household andother products. Vegans also avoid products tested on animals andthose that have employed animal products in the productionprocess. Our products do not contain any ingredients of animalderivation or any that may contain traces of milk.

We do not make use of any GMO in any of our chocolate products.This means that they are free from genetically modified organisms.We believe consumers have the right to know what is in their food!

MODICA CHOCOLATEROUGH GROUND CHOCOLATE

The origins of "Modica chocolate" lie far in the past when chocolate was the food of the Gods for theMaya and Aztec peoples.Legend has it that 'QUETZALCOATL', a divinity of precolumbian Mexico, gave a cocoa plant that hehad cultivated in his sacred garden to the indigenous people. They soon learnt how to toast cocoabeans on a 'metatl', a curved stone resting on two bases that was heated from below with wood. Thecocoa paste obtained was flavoured with spices and rubbed on the 'metatl' with a special stone rolling-pin until it hardened. It could then be broken into pieces and dissolved in water to prepare a drink thatis still called 'XOCOATL (xoco-bitter, atl-water, so bitter water) by the locals in Central America.

The Aztec Emperor Montezuma II believed that the arrival of Hernán Cortés in 1519 was actually thereturn of the god Quetzalcoatl and so he didn't dare to oppose the Spanish conquistador, welcominghim with all honours, including the sharing in friendship of the mysterious drink made from cocoa.The Spanish brought the recipe back with them, added cane-sugar and soon 'chocolate' spread throughall the courts of Europe as a classy and healthy drink.

During the Spanish domination of Sicily in the 16th century, they introduced this method of makingchocolate to the flourishing County of Modica. On the contrary to the rest of Europe, here theproduction was never industrialised, so it preserved the artisan tradition of its production and thegenuineness and purity of the ingredients over the centuries.The special cold working technique (max 40°C) maintains the sugar crystals intact, giving the producta friable and granular texture, and an aromatic and unmistakeably strong flavour, making it originaland unique.

Today at last we bring you the organic version for the first time.It can be savoured also as hot chocolate, dissolved in a mug of boiling water.

CHARACTERISTICSDark "rough ground" chocolate, according to the typical method ofprocessing cocoa in Modica: cocoa mass is worked cold (max 40° C) together with the brown sugar, no emulsifiers or other additivesare added. Thanks to this slow and lengthy process which excludesthe phase of the conching, the sugar crystals remain intact withinthe mass, giving the product glossy reflections. It looks crumblyand granular, while the flavor is rounded and velvety, lingering andunmistakable. Any patches on the surface are a normalcharacteristic of this type of cold working.

AGAVE BARThe result of a long period of research and experimentation, this bar is truly innovative and combines a series ofsolutions in alternative to the usual ingredients of normal chocolate bars; agave juice substitutes sugar, agaveinulin and powdered soya substitute milk. The result is surprisingly creamy with a sweet, delicate flavour.

Agave is a plant that grows mainly in Mexico and in particular at Jalisco where the best environmental conditionsare found for growing the blue agave. Agave nectar is produced from the starch of the plant contained in thebulbous root. It is obtained by a completely natural extraction and concentration process. The juice is filtered toremove solids, then it is heated so that the carbohydrates (starch) are transformed into sugar (fructose) and thenit is concentrated to make a syrup, slightly more fluid than honey, but tasteless, with a sweetening capacity 25%higher that white sugar. The agave syrup has a re-mineralising action because it contains high levels of calcium,magnesium, potassium and iron. Although it is made up of c. 90% fructose (whose main carbohydrate is inulin),it maintains one of the lowest glycemic indexes amongst natural sweeteners. Its low calorie count makes it idealfor low-calorie diets. The beneficial properties of agave were known during the period of the Aztecs and it was used to heal woundsfor its anti-bacterial and anti-microbic properties. Recent studies show that the main carbohydrate, inulin, reducesthe risk of osteoporosis, lowers colesterol, favours a sense of satiety and restores the immune system.

IL MODICANOHOT CHOCOLATE

The first XOCOÀTL (xoco=bitter, àtl=water, so“bitter water”) is believed to have been createdby the Mayas around 2,400 years ago, whenthey ground toasted cocoa seeds into a pastemixed with water and pepper. The drink wasserved hot during important ceremonies.

It then became commonly used in the Aztecculture where the God Quetzalcoatl, thecustodian of cocoa and dispenser of strengthand wealth, was worshipped. Only in the XVIcentury did hot chocolate become popular inEurope, having been introduced from Mexicoin the New World, thanks to the Spaniard,Hernan Cortez. Initially, the cocoa drink wasn'tgreatly appreciated because of its bitter tasteand fatty consistency, but at the Spanish courtthey tried adding sugar and other spices, thusobtaining an exclusive delicacy for the nobility.

Until the 19th century, hot chocolate was evenused medicinally to treat ailments such asstomach diseases. Today, hot chocolate isconsumed throughout the world and comes inmultiple variations.
