In the song, each verse mentions two things that he would do for love, followed by one thing that he will not do. Each mention of "that" is a reference to the particular promise that he made earlier in the same verse. The four times he says, “I won’t do that” refers to:

At the end of the song, the female vocalist says two more things he will do:

You'll see that it's time to move on

You'll be screwing around

WhyI grew up listening to some of his songs and I remember seeing his album in my mom’s CD collection. And was horrified that such a pretty songs came from a scary looking album cover. I never knew who the singer was except his name. I remember I loved listening to a few of his songs and his voice was very comforting.

Fast forward almost 2 decades and I saw him on Celebrity Apprentice with Donald Trump. I was able to link the music to a face. Since then I was able to learn more about him and his music.
