It’s the first year Bar Gyu’s open in summer! How has it been?Hisashi: It has been a lot of fun! Unlike winter, the pace is slower, and it allows us to chat with customers. Ioanna: In one word, challenging. But the challenge was worth it! We were able to make so many great connections with businesses in Sapporo with our collaboration events.Yusuke: I’m enjoying the different atmosphere.Shin: And I’m having fun making new cocktails!Mel: Fun, eventful and experimental!

What’s your summer cocktail menu like? Hisashi: Summer is about fruits and freshness. We offer cocktails using summer fruits and local herbs.Ioanna: We made a lot of our own cordials, syrups with local fruits and started to preserve some for our winter cocktails too, like brandied cherries for our winter Manhattans. Mel: Think tropical delights with homemade tinctures!

What should we not miss at Bar Gyu this season?Hisashi: A basil cocktail taken from the garden!Yusuke: Our pop up events!Mel: Two words: Carribean Negroni.Shiori: Our classic Hokkaido/Niseko ‘Northern Gin Tonic’.

What are some of the events that you’re doing?Ioanna: We collaborated with international stars last season, such as Angela Dimayuga (who you can find in Vogue’s September issue at the moment), Arielle Johnson, and Boychild. This summer, we participated in the first ever Hokkaido Whisky Fes. We also set up a pop up bar at Untapped Hostel in Sapporo.Mel: We’ve also participated in a number of local matsuris. Our premier event for the season was a foodies dream: a menu from the tiny, backstreet izakaya in Sapporo, Spice no Ana Mujina, with a drinks menu curated by the team here at Bar Gyu+.

Bar Gyu + (aka The Fridge Door Bar) celebrates its 20th anniversary this year. Bar Gyu has come to be one of the best and most iconic bars in Niseko (and a local’s favourite) with its laid-back, jazzy atmosphere, great cocktails, and, of course, it’s unusual fridge door entrance. We met up with the team from Bar Gyu, to chat about their first summer being open, and their super cool new Birdhouse Cinema.

Tell us a little about Birdhouse Cinema.Mel: Birdhouse Cinema is a revival of Ioanna and Hisashi’s Sunday Monday Cinema (Kutchan). The aim is to give locals and visitors a scene for cultural activities, along with those that just want to enjoy a great film! We’ve been lucky to partner with local photographers (Junichiro Watanabe), farmers (La La La Farm), sake breweries (Niseko Shuzo) and even skate parks (Lowstar). No one screening is the same! Shiori: Birdhouse Cinema adds a dimension of fun and play to Niseko. It’s not only cuturally enriching, it’s exciting too.

What’s next for Bar Gyu? Hisashi: I started Bar Gyu when I was 24, and so we kinda grew up together. I’d like to have a tattoo when I turn 50, so I’d need to workout [to have a buff bod] for that!Ioanna: We would like to focus on making connections, doing more collaborations both internationally and locally. And do stay tuned for details on our 20th anniversary event!

冷蔵庫のドアのバーとして知られるバーギュータスは今年で20周年を迎えます。緑を眺めながらまったりとしたジャジーな雰囲気の中、種類豊富なウィスキーや素敵なカクテルを揃えたフリッジドアバーはニセコのアイコンとして観光客のみならず地元民からも大人気。今回バーギュータスのチームに初めての試みの夏営業からとっても素敵なバードハウスシネマについて色々とお話しを伺ってきました。

今回、夏営業は初めての試みですが、如何ですか？仙司: 冬と違い日本人の観光客の方、働いているスタッフの方とゆっくり話しができ、とても楽しいです。ヨアンナ: 一言で言うと、チャレンジ。チャレンジして良かったと思ってます！コラボイベントをやった事で札幌にある企業と繋がりが出来ました。雄亮: 初めての夏営業なので、冬と違った雰囲気を楽しめています。慎: 冬より時間があるので、新しいカクテルを作ったりイベントの出店など充実しています。メル: 楽しい、充実、実験。

バーギュータスの夏のカクテルメニューについて教えてください。仙司: 冬にはない、夏のフルーツや地元のハーブを使ったカクテルを提供しています。

バーギュータスの今シーズンのイチオシは？仙司: 庭から取ったバジルのカクテル！雄亮: 残り1週間ですが札幌でのPop-up Barには是非来て頂けたらと思います。メル: 二言、カリブ・ネグロニ。志緒里: 外せないメニューは、北海道・ニセコの魅力が詰まったノーザンジントニック。

どんなイベントを開催していますか？ヨアンナ: 昨シーズンはアンジェラ　ディマユガ（9月号Vogue誌に掲載されています）やアリエル　ジョンソン、ボイチャイルドらの国際スターとコラボしました。この夏は初めて北海道ウェスキーフェス２０１８に参加し札幌にあるアンタプトホステルでpop up Barをやっています。メル: 様々な地元の祭りにも参加しました。今シーズンのプレミアイベントは食通の夢：札幌の隠れ家的居酒屋スパイスノ穴ムジナのドリンクメニューを監修出来た事です。

バードハウス シネマについて教えてください。メル: バードハウスシネマは元々イオナと仙司さんが倶知安で開催していた”サンデー、マンデーシネマ”のリバイバルなんです。観光客や地元の人たちへ文化活動の場を提供する事や、ただ単にいい映画を楽しんでもらいたいという想い、目的があります。幸いに地元の写真家（渡辺淳一郎氏）、農家（ラララファーム）、酒蔵（二世古酒造）、スケートパーク（ロースター）をパートナーに迎え、毎回違う映画を上映する事が出来ています！ 志緒里: 遊びの延長のような場所。都市に比べ娯楽が少ないニセコで、カルチャーを発信しながら、皆がワクワクする事をしたいから始めました！

今後のプランを教えて下さい。仙司: 24歳で始めたbarが成人を迎えて、大人になった感じです。僕自身は50歳になったらtattoo を入れたいので、身体を鍛えたいです。ヨアンナ: 海外からの観光客と地元民とのコラボを積極的に行い、色々な繋がりを作り上げる事にフォーカスしたいと思ってます。20周年記念イベントもお楽しみに！
