As I have traveled around Iowa and the greater Midwest, I have noticed some folks out there who are doing a really great job making wine. I notice that most of the wine makers making great wine have something in common, they do their own basic lab work and ask good questions about their wine making based on their lab results. However, I notice some of the newer wine makers are not always comfortable with the “SCIENCE” of making wine, they are intimidated by lab equipment, and are often hesitant to ask for this most basic of help or training.

Spring is either here or just around the corner which means “bud break” will soon begin and “here we go” into another season of grape growing and wine making. As I have traveled around Iowa and the greater Midwest, I have noticed some folks out there who are doing a really great job making wine. I notice that most of the wine makers making great wine have something in common, they do their own basic lab work and ask good questions about their wine making based on their lab results. However, I notice some of the newer wine makers are not always comfortable with the “SCIENCE” of making wine, they are intimidated by lab equipment, and are often hesitant to ask for this most basic of help or training.

Well FEAR NOT any longer, I have a simple, easy and inexpensive solution to your basic wet-chemistry problems! No doubt the most important tool in the lab is the pH meter. It is pretty easy to use really, but it is only as good as its condition and maintenance. The probe or “electrode’ can get dirty and needs to be cleaned periodically and stored in proper fresh

storage-solution. And users need to periodically buy and use fresh pH buffer-solutions to ensure a precise calibration. If you can handle that, you are on your way to making great wine. BUT, lab work does not end there, and this is where I start to see new wine makers’ eyes start to “glaze over”. The next two tests of most importance are TA or Total Acidity and SO2 or “Sulfite” testing. Actually, from what I have seen and tasted, the testing of free sulfur in wine is probably the most important test around. SO2 is the number #1 “cheap insurance” to protect the long-term quality of your wine. But, traditional “aeration-oxidation” testing is a real pain. It

Presentations from the 2016 NGP Symposium, 2-24 in Kalamazoo, MI The 2016 Northern Grapes Symposium was hosted by the Michigan Grape and Wine Industry Conference on February 24th in Kalamazoo, Michigan. Nine Northern Grapes Project team members lead six sessions, encompassing all four of the projects’ objectives. Some of the talks focused on results of specific research projects, such as training systems studies, deacidification strategies for cold hardy wines, and marketing, branding, and tasting room studies. Others, however, were more general in nature, and covered topics such as the past 15 years of viticulture in Iowa and the viticultural and enological characteristics of Marquette, Frontenac, Brianna, and La Crescent, including tasting two examples of each wine.
