Before using your Mixmaster® Bench MixerBeforeassemblingyourmixer,besurethepowercordisunpluggedfromthepoweroutletandthespeedcontroldialisinthe'Off'position.

1.Pressthe'tilt'button,locatedatthetopoftheneckofthemixer.Whilethebuttonisdepressed,holdthehandle(1)andeasetheheadofthemixerback.Themixerheadwilllockintothistiltposition(2).

2.Selectthedesiredattachmentsdepending

onthemixingtasktobeperformed;

–Beatersforcreamingbutterandsugar,plusmixingheavycakemixes.

–Whisksforwhiskingcream,eggwhites,lightbattersandpacketcakemixes.

–Doughhooksforkneadingdoughandotherheavymixtures.

3.Insertselectedattachment;

Beaters–selectthetwobeaters.Takethebeaterthathasapointier,curvedbottomandhasaredcolouredbandaroundthetopofthebeater–illustratedasbeater(A).Insertbeater(A)intotheleftholeontheundersideofthemixerhead,theholeisidentifiedbyareddotbesideit(3).

Takethebeaterwiththeangular/flatbottom,illustratedasbeater(B)andinsertintotheremaininghole.

Note:Besurebothbeatersclickfirmlyinplace,youmayneedtotwistthebeaterslightlytoengageitinpositionpriortopushingitinplace.

Takethedoughhookthatisstraightatthebottom,illustratedasdoughhook(B)andinsertintotheremaininghole.

4.Dependingontheamountofingredientsrequiredformixing,selectbowlsize.Ifyouhaveselectedthelarge4.4litrebowl,slidethebowlselectortothefarright(6a).Ifyouhaveselectedthesmaller2.1litrebowl,slidethebowlselectortothefarleft(6b).

5.Onceyouhaveselectedthebowlyouwishtouse,placeitontherotatingbase.Gentlyrotatethebowlinananti-clockwisedirectionuntilitdropsintopositionorissittingflat(a).Thenrotatethebowlclockwisetolockitintoposition(b).Thebowlshouldfeelfirmwithnomovement(7).

2.Thespeedcontroldialturnsthemixer'On'and'Off',controlingthebeaterspeedsandalsothebowlrotationspeed.Turnthespeedcontroldialtotherightorupwardstocommencemixing(10).

Tip:Startmixingatslowspeedsandincreasespeedgraduallytopreventingredientssplashingoutofthemixingbowl.

Whenaddingdryingredients,particularlyflour,lowerthespeedtemporarilyuntilingredientsarecombined.

Tip:Whenkneadingyeastdough's,usespeed1-5toachievebestresults.Formorespecificinstructionsfortheuseofthedoughhookssee'HelpfulHintsforaSuccessfulDough'onpage14ofthisbook.

3.Whenmixingiscomplete,turnthespeedcontroldialtotheleftordownwards,untilyouhavereachedthe'Off'position(11)andunplugthecordfromthepoweroutlet.

4.Holddownthe'tilt'buttonandeasetheheadofthemixerbackuntilthemixerheadislockedintothetiltbackposition(seediagrams1and2onpage4).

5.Toremovetheparticularattachments(eitherbeaters,whisksordoughhooks)placefingerslooselyaroundtheattachmentsandpresstheejectbuttonlocatedatthefrontofthehandle(12).

Sunbeamlaunchedits3-waybeatingactioninthelate1920swhichrevolutionisedmixingattheturnofadial.The3-waybeatingactionisdeterminedbyeachofthetwobeatersturningagainsteachother,plusthenthebowlalsorotating.

Ourlatestinnovationofthishistoric3-waybeatingactionhasbeentheintroductionofanadditionalmotorintothedesign.Onemotorislocatedintheheadofthemixer.Thisdrivestheindividualbeaters,turningeachinoppositedirections.Thesecondmotorislocatedinthebaseoftheneckofthemixeranddrivestheturntable,inturnrotatingthebowlagainstthedirectionoftheoutsidebeater.Thespeedofthebowlrotationisautomaticallydetermineddependingonthemixingspeedselected.Thereforeasthemixingspeedincreasessodoesthespeedofthebowl,andasthemixingspeedisdecreased,thebowlspeedalsoslows.Theseactionscombinetoensureamorepowerfulandthoroughmixingresult.Thistwin-motordesignispatentpending.

Beforecleaningyourmixer,ensurethatthepoweristurned'Off'atthepoweroutlet,thenremovetheplug.Wipeovertheoutsideareaofthemixerincludingtheheadandbase,withadampenedclothandpolishwithasoftdrycloth.Wipeanyexcessfoodparticlesfromthepowercord.Washthemixingbowls,beaters,whisksanddoughhooksinwarmsoapywaterandwipedry–useabrushifnecessarytoremoveanystickyfoodparticles.Thestainlesssteelmixingbowls,beaters,whisksanddoughhooksmaybewashedinthedishwasher.Theturntablecanberemovedforthoroughcleaning.Thisshouldbedoneoccasionallytokeepyourmixerclean.

Maintenance ServiceYourmixershouldberegularlychecked.Afterapproximatelyfouryearsofdomesticuse,thegreaseinthegearcompartmentshouldbeexamined.WesuggestatthattimeyousendthemixertoyournearestSunbeamApplianceServiceCentretoensureefficient,correctservicing.

ShorteningShorteningisanyoneofthesolidfats(animal,vegetable,oracombinationofboth)whicharesuitableforgeneralcookingpurposes.Somearemoresuitedthanotherstoparticularrecipesandarethereforespecified.Wherethetermshorteningisused,selecttheonemostpleasingtoyourpalate.

ButterButterismadefromapproximately80%milkfat(cream),andischurnedoveraperiodoftimetoproduceasolid(butter).Butterisusedtostabilise,texturiseandaddflavour.Itisavailablesalted,unsaltedandclarified.Unsaltedbutterisbestforcakebaking.Clarifiedbutterhashadthemilksolidsandsaltremoved,makingitidealforpastrymakingasitcanbeheatedtohighertemperaturesthanregularbutter.

Note:Margarinecanbeusedasasubstituteforbutter;howeveritismadefromvegetableoils,soitmayslightlyalterthetextureoftheendresult.Therearevarioustypesofmargarinesavailableincludingbutter-margarineblendsandfatreducedvarieties.

YeastYeastisaraisingagentusedindough.Itisamicroscopiclivingorganismthatgrowsrapidlyinsuitablewarm,moistconditions.Theyeastfeedsonsugarandexpelscarbondioxidewhichexpandstheglutenframework.Whenfoamingyeastdonotallowthewatertemperaturetoexceed40°C,asthiswillkilltheyeast.A26˚C-30˚C,draftfreeareaismostsuitableforthegrowthofyeastduringtherisingprocess.BothDryYeastandfreshCompressedYeastmaybeusedintherecipesincludedinthisbook(7gofdryyeastisequivalentto20gofcompressedyeast).

SubstitutesHerearesomesuggestionsforsubstitutingingredientsinrecipes:

Your Café Series® Mixmaster® (MX8900, MX8900W) is covered for the first year against faulty material or manufacture by the Sunbeam 12 Month Replacement Guarantee. Should you experience any difficulties with your appliance within this 12 Month period, please phone our customer service line for advice on 1300 881 861 in Australia, or 0800 786 232 in New Zealand.

The Sunbeam (5) five year motor guarantee begins from date of purchase and extends for four years beyond the 12 Month Replacement Guarantee. It covers only the motor, guaranteeing it against faulty materials or manufacture. It does not cover damage caused by accident, misuse or being used in a manner not in accordance with the Instruction Book. Similarly, this motor guarantee does not cover freight or any other costs incurred in making a claim.

If a fault should develop with the motor after the period covered by the 12 Month Replacement Guarantee, please call Sunbeam Customer Service on the number listed below or send a written claim to Sunbeam at the address listed below. On receipt of your claim, Sunbeam will advise you on how to obtain a replacement motor if your motor is defective.
