Introduction Danesfield House Hotel and Spa Wine Programme
At Danesfield House Hotel and Spa we have created a comprehensive wine list of almost 200 wines encapsulating a
diverse range of countries and grape varieties. This year our list has changed according to the wine world and our guests’
expectations. We believe it is important to offer new rising star wines in addition to the more traditional wines.
With our selection of wines we aim to offer our guests something different and unique to taste.
The format of the wine list is laid out with wines listed by country. We of course cover the classic regions such as
Bordeaux, Champagne, Burgundy, Tuscany and Rioja from the old world plus a wide selection of new world. 2017 sees
us exploring interesting and indigenous varieties such as Malagusia from Greece, Kalacik Karasi from Turkey, Ribolla
Gialla from Italy, Albariño from Spain, Grüner Veltliner from Austria, Pinot Noir from Santa Barbara and Carmenère
from Chile.
We are very happy to recommend matching wines according to our menus produced by our chef Billy Reid with his style
of cooking.

THE HISTORY OF DANESFIELD HOUSE
Danesfield House, as it stands today, is the third property to have been built within this glorious setting, amidst 65 acres of formal gardens with outstanding views over the River Thames and to the Chiltern Hills beyond. 4,000 years ago, the site was reputed to have been a resting place of nomadic tribes who paused to hunt nearby land and fish in the then untamed river. If you stand on the crest of the bank between the present house and the river and look west, there is a steep ravine directly in front of you which is the remnant of the ramparts of a pre-historic fortification. Because of the ample game and the discovery of flint within the chalk-based cliffs, the site became a settlement throughout the ages and although not named "Danesfield" until many years later, this name originated from the fact that Danish adventurers made an encampment here. In 1725 James Medlycott, or his executors, rented "Medlycotts" to a Mrs Morton, whose son John was to be the creator of Danesfield. He purchased the freehold of the estate in 1750, had the house completely rebuilt and named it Danesfield. John Morton was a barrister and was appointed Attorney-General to Queen Charlotte. He was a contemporary in parliament of William Pitt, as MP for Abingdon, New Romney and Wigan. After his death, his widow continued to live at Danesfield for some years, but eventually sold the estate in 1787 because of financial difficulties. The house was let to successive tenants, who came principally for shooting and was eventually sold in 1897 to Mr Robert William Hudson. He had inherited his fortune from his father Robert Spear Hudson, the Victorian soap magnate and the manufactures of "Sunlight" soap. His first determination was to rebuild the property, which he completed in 1901. As war proceeded Danesfield was requisitioned as a base to develop the intelligence Section of the Royal Air Force (Reconnaissance and Photography Section). Danesfield was purchased by the Air Ministry in 1948 and was made Divisional Head Quarters for No. 90 Group (Signals). The property remained in the hands of the RAF until 1977. The gardens, a mixture of herbaceous and shrub plants ensures interest throughout the year. The large areas of Lavender that can be seen consist of two main varieties; "Vera" surrounded by "Twickle Purple" with five other varieties of English and French origin. The Topiary and the Box Hedging is original and has been restored and maintained by careful, skilled trimming. With the exception of a few original shrubs (Wisteria and Choisya), the majority of the present planting was carried out during 1990. Danesfield House Hotel opened on the 1st July 1991 as a luxury Country House Hotel with a charm and character that cannot be compared. It is a property with a most unusual history and when walking around the grounds it is easy to imagine the strange events that must have taken place over the centuries. Tau is bottled at source in the Welsh Cambrian Mountains, an area of mudstone, siltstone and sandstone that is protected and organically
managed. Tau still is light and very low in minerals, whilst its sparkling counterpart has very loud bubbles and should be paired with a food

Francisco International Wine Competition awarded Gold. Only a couple of critics have rated this Prosecco di
Conegliano-Valdobbiadene wine so far. Above average in popularity among wines from this region. This wine has
been becoming increasingly popular over the past year.
Crémant du Jura, Benoît Mulin NV
This wine is aged in oak casks and allowed to ferment slowly in one of the oldest cellars in Arbois, built in the
fourteenth century by the then Queen of France. The resulting wine is complex with fruit and spice aromas, a
distinctive minerality and slightly spicy smoky taste, typical of wines produced from grapes grown on clay soils.
Light yellow in colour and with a very fine mousse. Clean with good concentration and appealing flavours of
apple, citrus and refreshing minerality.

A real benchmark of quality and consistency, Carpenè Malvolti Prosecco is a full flavoured wine made in the
North-East Italy. This lovely Prosecco has impressive palate weight and creaminess, fine and continuous bubbles.
The wine is fruity and appealing with floral and fresh fruit bouquet and a lemony finish.
Carpenè Malvolti 1868 Rosé Cuvee Brut NV Italy
Yum yum yum. This delicious fizz has everything that's great about Prosecco combined with everything that's great
about a Provence Rose. It has depth, whilst retaining freshness and that fabulous palate cleansing sensation that
good fizz delivers. The spectrum of flavours is really broad, with redcurrants, rosehips, parma violets and just a
touch of slightly creamy, sweet cherries. The finish is fairly long, but again, really fresh with none of the edges
sometimes found in cheaper sparkling wines.

Here the wood is less subtle as there are vanilla and toast hints in evidence on the otherwise very fresh and cool
aromas of white flowers, pear, green apple and wet stone. There is notably good concentration and plenty of
palate coating dry extract to the big-bodied flavours that exude a fine minerality on the saline-infused, explosive
and seriously persistent finish.

smooth mouthfeel after spending 10 months in new oak barrels. Hints of roasted nuts and coffee make the finish

An Austrian staple; this is an unmissable Gruner Veltliner from Geyerhof. Lush fruity aromas of green apples,
waxed lemons, juicy grapefruit and gently white pepper hints. Weingut Geyerhof owners, Josef and Ilse Maier
grow their grapes organically and all their wines are vegan and contain low-histamine levels. Delicious
herbaceous and mineral notes in the finish.

In İzmir (150 metres of elevation) climate conditions are close to those of Bari or Athens. In the Anatolian plateau
(900 metres of elevation), climate conditions are similar to the Rhône valley (Hermitage, Chateauneuf du Pape)
but drier during the summer. On both sites, soils are unique with a complex distribution, alternation of chalk and
shale (heavy clay) and occurrence of limestone.

This Sauvignon Blanc pushes the boundaries of the typical New Zealand flavour profile. By highlighting floral
aromatics and tropical flavours, toning down the grassiness and bringing a creamy mid-palate all the way
through to fresh cantaloupe melon like crispness on the finish, Mt Beautiful have set a new precedent for New
Zealand Sauvignon Blanc.

This unique dessert wine has been made in extremely limited quantities by allowing fully ripened grapes to freeze
on the vines and harvesting them in temperatures of -10 degrees. Each frozen grape is then pressed producing just
on drop of extremely concentrated juice. This is an extremely complex wine with flavours of red currants and
rhubarb with notes of spice and beautifully balanced acidity and sweetness.

This digestif/aperitif is made from red wine infused with green walnuts. The result which would be perfect served
