FOREWORD

This Indian Standard was adopted by the Bureau of Indian Standards, after the draft finalized by the DairyProducts and Equipments Sectional Committee had been approved by the Food and Agriculture Division Council.

Quite often, various laboratories employ different temperature and time combinations for determination of moisturecontent in milk powder and similar products, which might give varying results. This standard has been formulatedwith a view to providing uniform method to facilitate comparison of results. This method is for use for commercialand quality control purposes.

This method was earlier covered in IS 11623 : 1986 ‘Method for determination of moisture content in milkpowder and similar products’. Subsequently, IS 11623 was revised in 2008 under dual numbering identical withISO 5537 : 2004 ‘Dried milk — Determination of moisture content (Reference method)’. Since IS 11623 : 2008covered only the reference method for determination of moisture content in milk powder and similar products, aneed was felt to formulate a separate standard covering the routine method for determination of moisture contentin these products.

The method outlined in this standard is expected to be used for routine analysis of milk powder and similarproducts.

In reporting the result of a test or analysis made in accordance with this standard, if the final value, observed orcalculated, is to be rounded off, it shall be done in accordance with IS 2 : 1960 ‘Rules for rounding off numericalvalues (revised)’.

DETERMINATION OF MOISTURE CONTENT IN MILKPOWDER AND SIMILAR PRODUCTS

(ROUTINE METHOD)

1 SCOPE

This standard specifies a method for the determinationof the moisture content in milk powder and similarproducts.

2 REFERENCES

The standards listed below contain provisions whichthrough reference in this text, constitute provisions ofthis standard. At the time of publication, the editionsindicated were valid. All standards are subject torevision and parties to agreements based on thisstandard are encouraged to investigate the possibilityof applying the most recent editions of the standardsindicated below.

3 QUALITY OF REAGENTS

Unless otherwise specified, pure chemicals shall beemployed in tests and distilled water (see IS 1070) shallbe used where the use of water as a reagent is intended.

NOTE — ‘Pure chemicals’ shall mean chemicals that do notcontain impurities which affect the result of analysis.

4 TERMINOLOGY

For the purpose of this standard, the moisture contentof milk powder and similar products, shall be the lossin mass, expressed as a percentage by mass when theproduct is heated in an air oven at 102 + 2°C to constantmass.

5 APPARATUS

5.1 Flat-Bottom Moisture Dishes with Cover, ofstainless steel, glass, nickel, aluminium or porcelainhaving approximately 50 mm diameter and 25 mmdepth. The dishes shall have lids which fit well andcan readily be removed.

5.2 Drying Oven, a well ventilated air oven,thermostatically controlled at 102 ± 2°C. Thetemperature should be uniform throughout the oven.

5.3 Desiccator, containing an efficient desiccant.

5.4 Bottles, with tight fitting stoppers for mixing theproduct.

6 SAMPLING

Prepare a representative and homogenous sample(see IS 1165).

7 PROCEDURE

7.1 Preparation of Sample

Transfer the whole of the sample of the product to adry stoppered bottle of a capacity of about twice thevolume of the sample and mix intensively by rotatingand shaking the bottle. Carry out the determination, asexplained below, in duplicate using two flat-bottommoisture dishes with covers.

7.2 Determination

7.2.1 Uncover a dish and place the dish and its lid inthe oven at 102 ± 2°C for 1 h. Place the lid on the dish,transfer the covered dish from the oven to thedesiccator. Allow it to cool to room temperature andweigh it with the lid on.

7.2.2 Put approximately 1 g of the product in the dish,cover the dish with the lid and weigh the covered dishaccurately and quickly.

7.2.3 Uncover the dish and put the dish and its lid inthe oven at 102 ± 2°C for 2 h.

7.2.4 Replace the lid, transfer the covered dish to thedesiccator, allow it to cool to room temperature andweigh it accurately and quickly.

7.2.5 Heat the uncovered dish and lid in the oven at102 ± 2°C for further 1 h, replace the lid, allow thecovered dish to cool to room temperature in thedesiccator and weigh it.

7.2.6 Repeat the process until successive weighingsdo not differ by more than 0.5 mg. It is usually foundthat drying is complete after the first 2 h.

M1 = initial mass of the dish and lid with thematerial taken for analysis (see 7.2.2), in g;

M2 = final mass of the dish and lid with thematerial after drying (see 7.2.5), in g; and

M = mass of the empty dish (see 7.2.1), in g.

8.2 Accuracy of Determination

The maximum deviation between duplicatedeterminations should not exceed 0.15 percent by massof moisture.
