INGREDIENTS2 tablespoons peanut oil600g chicken breast fillets, sliced thinly2 cloves garlic, crushed1cm piece fresh ginger (5g), grated finely4 small fresh red thai chillies, sliced thinly4 kaffir lime leaves, shredded1 medium brown onion (150g), sliced thinly100g button mushrooms, quartered1 large carrot (180g), sliced thinly¼ cup (60ml) oyster sauce1 tablespoon soy sauce1 tablespoon fish sauce1/3 cup (80ml) chicken stock¾ cup loosely packed fresh thai basil leaves

METHODHeat half of the oil in wok or large frying pan; stir-fry chicken, in batches, until browned all over and cooked through.
Heat remaining oil in wok; stir-fry garlic, ginger, chilli, lime leaves and onion until onion softens and mixture is fragrant.
Add mushroom and carrot; stir-fry until carrot is just tender. Return chicken to wok with sauces and stock; stir-fry until sauce thickens slightly. Remove from heat; toss bean sprouts and basil leaves through stir-fry.
