TUESDAY, JUNE 26 – DAY 10: DEPART FOR JORDAN – “THE OTHER HOLY LAND” MADABA – MT. NEBO – BETHANY BEYOND JORDAN – FOOD OF JORDANFollowing our buffet breakfast, we transfer to Allenby Bridge, crossing into Jordan. You are greet-ed by your Christian English speaking guide at the Jordanian border, assisted to the bus with your luggage and transferred to the Dead Sea to visit Madaba where we see the famous the 6th-century mosaic map of Palestine in St. George’s Church. Here we celebrate Mass. Stand atop of Mount Nebo looking over the Promised Land just as Moses did before his death. We stop for lunch on our own at the Haret Jdoudna an excellent local restaurant. We visit Bethany Beyond Jordan, where Joshua crossed over with the Ark of the Covenant and the authentic site where Jesus was baptized by St. John in the Jordan River. This trip puts a focus on the delicious cuisine of Jordan, a gastronomy shaped by centuries of social and political change. As these changes occurred, a variety of spices, cooking techniques, and ingredients remained in their culture. Jordan also has bragging rights as one of the largest producers of olives in the world, so it’s no surprise that olive oil is commonly used in their dishes. Garlic, onions, tomato sauce, lemon and za’atar (a spice blend with sumac, sesame seeds, salt and other spices) are all im-portant ingredients. Our dinner is at Tawaheen Al Hawa considered one of the best restaurants in Jordan, where we taste the best of Jordanian food. Overnight Amman. (B, Special dinner.)

WEDNESDAY, JUNE 27 – DAY 11: AMMAN – PETRAThe ancient city of Petra, in Jordan, is on almost everyone’s life list. The so-called red -rose city, carved by the Nabateans has entranced travelers for years. Here is our opportunity to be Indi-an Jones for a day and explore the great mysteries of this fantastic site. Known as one of the new ‘seven wonders of the world’, this archaeological city sits within 80 m high cliff walls – the iconic treasury, carved into the face of one of these cliffs is definitely the highlight of this visit. In the afternoon we return to visit wine cellars in Amman belonging to local families. The final meal of this faith and food adventure is a self-prepared dinner at the Beit Sitti cooking school, known as one of the most innovative developments in Jordan’s dining scene. Visitors to the school get to cook (and eat) an authentic meal under supervision, with tonight’s dish being maqluba. Literally translating to ‘upside down’, maqluba is a casserole with rice, vegetables, and chicken which is cooked, flipped, then served with either yogurt or an Arab salad with tahini sauce. Savour this last meal with newfound friends before the trip comes to an end tomorrow morning. (B, Special Dinner)
