Black Bears in CT On June 13th we were fortunate to have Paul Colburn, Master Wildlife Conservationist, at our Center presenting his talk on Black Bears in CT. We all learned that if we want to help the bears, the right thing to do is not feed them. “A fed bear is a dead bear.” ~ Paul Colburn, MWC
If you missed it, here is some great information for those of you whose home’s have become a bear’s favorite place to visit! From the CT Dept. of Energy & Environmental Protection:
Black bears are becoming increasingly common in Connecticut as the population continues to grow and expand. Reports of bear sightings, even in heavily populated residential areas, have been on the rise. The Wildlife Division has also seen an increase in the number of reported problems with black bears. The primary contributing factor to bear nuisance problems is the presence of easily-accessible food sources near homes and businesses. Fed bears can become habituated
and lose their fear of humans. Bears should NEVER be fed, either intentionally or accidentally. Connecticut residents should take the following simple steps to avoid conflicts and problems with black bears:
Bears are attracted to garbage, pet food, compost piles, fruit trees, and birdfeeders.
DO remove birdfeeders and bird food from late March through November.
DO eliminate food attractants by placing garbage cans inside a garage or shed. Add ammonia to trash to make it unpalatable.
DO clean and store grills in a garage or shed after use. (Propane cylinders should be stored outside.)
DON'T intentionally feed bears. Bears that be-come accustomed to finding food near your home may become "problem" bears.
DON'T approach or try to get closer to a bear to get a photo or video.
DON'T leave pet food outside overnight.
DON'T add meat or sweets to a compost pile.

in the Dining Room
Join registered dietitian Elizabeth Caruthers for a FREE monthly cooking demonstration, recipe tasting and nutrition talk. You will learn how to use food to prevent and manage chronic diseases such as obesity, diabetes, hypertension and heart disease. She will share her easy, delicious recipes and offer her nutrition expertise throughout these engaging classes.

BBQ TIPS and TECHNIQUES
• Leave your meat alone and give it room on the grill: You should only turn the meat once. Be patient!
The meat needs room, too. Don’t overcrowd the grill or it can heat unevenly. There should be at least 1/4 of
an inch between the pieces of meat. • Avoid using BBQ forks when turning meat: To retain the natural juices, don’t poke holes in the meat.
No forks! This includes piercing the sausage skins. Use long handled tongs or spatulas instead of forks. Also,
don’t mash down on meat and burgers, as it forces out the natural juices and leaves you with dried out meat. • Leave meat alone part 2: After cooking, let your gr illed meat “rest” for five minutes covered loosely
with foil, to ensure more tender and juicy results. Letting the meat rest also applies to roasts and other
cooked meats, as well. • Use aluminum foil for BBQ: You can use aluminum foil to create little cooking pouches for delicate
foods, like fish fillets. Cook away from the lit burners or place the pouch on the warming rack, if you have
one. Be careful not to puncture the foil when lifting it off the grill. • Marinades for grilling: For more intense or var ied flavors, consider using meat mar inades. You mar i-
nade the meat before you BBQ, as instructed by the marinade maker or recipe. Make sure you drain off any
excess marinade before cooking and do NOT pour it over the meat while cooking. • Clean your BBQ grill when done: Clean the gr ill while it is still hot. Use a good gr ill brush to clean
cooking plates and racks. Lightly coat cooking surfaces with cooking oil when clean. Remember to empty
the grease tray, too.

What the Experts Say ! We asked a couple registered die��ans for their opinion on low!calorie ice creams, and
they didn’t always see eye to eye. “While I hate to use the term ‘healthy’ since it really has such a different
meaning for each individual, I do think the new innova�ons to the ice cream aisle have their place in a healthy
diet,” says Elizabeth Shaw, MS, RD, CLT. Shaw admits that the new lower!calorie ice cream flavors are cu,ng
edge. Alissa Rumsey, MS, RD, founder of Alissa Rumsey Nutri�on and Wellness, disagrees. “The problem with
these "healthier" ice creams is that they lead you to think ‘it's be1er for me, so I can eat as much as I want.’”
Rumsey adds that the lower!calorie ice creams aren’t quite as sa�sfying as the real thing. “Those two factors
can lead to overea�ng instead of responding to your body's feelings of fullness and sa�ety.”�!
So, Wait, Is It Healthy?�
Take a closer look at the ingredient labels. Whereas full!fat ice creams are made with just milk, cream, sugar,
and whatever delicious flavor they’ve come up with, low!cal ice creams have a few more "interes�ng" and for-
eign ingredients. When looking at the label for the lower!calorie ice creams, you may see ingredients like
prebio�c fiber, erythritol, stevia, monkfruit, corn fiber, and vegetable glycerin. Are these things “bad” for you,
per se? Shaw says no. “Each ingredient serves a purpose for the par�cular manufacturer to create the most
palatable product for their intended consumer.” She adds that the best way to go about picking a product is
to find one that you like and that doesn’t upset your stomach. While research has found that erythritol
doesn’t seem to cause gastrointes�nal distress, other sugar alcohols do. Despite that redeeming fact, other
research has found that zero!calorie sweeteners don’t actually help people lose weight and may actually
cause weight gain. Think about that before downing an en�re pint of the low!cal stuff.�!
Remember, “healthy” is a subjec�ve term. Some people run marathons and frequently enjoy bowls of full!fat
ice cream. Others love the low!calorie ice cream op�ons to sa�sfy their sweet tooth while on their weight!loss
journey. The “healthy” aspect falls somewhere in the middle of not binging on any variety of the sweet stuff
and also allowing yourself to enjoy your food.

1-2 Servings
Ingredients 2-3 overripe bananas Optional milk of choice, if needed. Pinch of salt
Instructions: Start with bananas that are turning brown, peel and cut into large pieces, then freeze in an air-
�ght bag or container. (You can freeze a whole bunch so they’re ready whenever you want to make banana
ice cream.) To make the ice cream, throw around 2!3 frozen bananas into a blender or food processor!adding
a pinch of salt and 2!4 TBSP milk of choice for smoother blending if desired!and blend un�l you achieve a so@!
serve texture. You can serve immediately, or transfer to a container and freeze an addi�onal 30 minutes, then
scoop out with an ice cream scoop. �
**You can add items to make interes�ng flavors like: 2!3 TBSP Pistachio bu�er, ½ cup frozen pineapple and
some shredded coconut, some cinnamon and a handful of chocolate chips, 1 cup of any choice frozen berries.�
