Here’s a guilt free,ridiculously simple and

naturally sweet “pizzastyle” version of every-one’s favorite locallygrown foods — tasty wa-termelon and lots ofberries. There are a few

things in common withthe pizza idea... well, ac-tually only two. Thedessert presentation isround, and it has lots oftempting healthy, fresh

toppings.Plus, there’s the wow

factor when your kidsproudly carry their workof culinary creativity tothe table at an informal

supper with your familyand friends. They’ll be soproud.

Kick it up for otherevents, too. We’re mak-ing doubles for my son’sbirthday party this week-end, and topping themoff with lots of brightcandles.Watermelon and Berry

Pizza(Serves 6)• 12 strawberries

halved• 6 mint leaves

chopped• 1 teaspoon balsamic

vinegar• 1 large watermelon

slice (1 inch or morethick), 10 inches in di-ameter

• 6 ounces naturallemon flavored yogurt, or3 ounces creme fraiche

• 1/2 cup blueberries• Mint sprigs for gar-

nish (optional)1. In a small bowl,

drizzle balsamic vinegarover the strawberries,and stir. Set aside.

2. Let your junior chefwash and dry the wholewatermelon. An adultshould slice a 10-inch

round at the center por-tion and set on a servingplate. (If your watermel-on is smaller or larger,cut the widest portion forthis dessert and adjustquantities.)

3. Evenly cut the sliceinto sixths. Pinch the cuttriangles tightly togetheron the plate.

4. Ask your child tospread the yogurt orcreme fraiche over theround.

5. Spoon the strawber-ries and blueberries overthe yogurt. Sprinkle withchopped mint. (I like toadd an extra sprig ofmint on the side or in themiddle of the presenta-tion.) Serve slices on adessert plate.

Alternate Ideas:• Instead of using yo-

gurt or creme fraiche,whip up a half cup ofheavy cream with a 1/2teaspoon of vanilla and ateaspoon of sugar, orwhip cream with two tea-spoons of honey.

• Fresh sliced peaches,nectarines and plumsalso are welcome add-ons to the dessert.

I call summertime zuc-chini season because itis so abundant in farm-ers markets and back-yard gardens. Anyonewho has grown zucchiniknows that a little plant-ing goes a long way.Nothing inspires a gar-dener to be generous tofriends and neighborslike an abundant crop ofzucchini.

Zucchini is the mostpopular squash in theU.S. It can be eaten rawwith dip or added to sal-ad, stir-fry, soups,casseroles and mixedvegetables. It also can beserved as a side dish —freshly sauteed by itselfor with other summersquash.

As long as it’s notfried, zucchini is a verylow calorie vegetable —1/2 cup of cooked zuc-chini is just 18 caloriesand has 1 gram of pro-tein. Zucchini is 94 per-cent water.

There is no recommen-dation for canning zuc-chini because of its highwater content, whichcauses zucchini to getsoft and tightly packedduring the canningprocess. This makes ithard for zucchini toreach the required tem-peratures it needs to as-sure safety for low acidfoods.

Maybe you’ve run outof ways to prepare zuc-chini, and friends andneighbors are no longerreturning your phonecalls. Here are somerecipes to transformyour abundant crop intotasty snacks, plus tipsfor preserving yourbumper crop for futuredishes. And remember,with zucchini recipes,you’re only limited byyour imagination.Summertime Zucchini

Pasta• 2 tablespoons extra

virgin olive oil• 1 small onion, finely

diced• 2 pounds zucchini,

sliced into 1/4-inchthick pieces (cut largerzucchini in half length-wise before slicing)

• 1 teaspoon salt • 1 teaspoon ground

black pepper• 2 garlic cloves,

minced

• 1 ounce basil, about2 cups loose leaves

• 1 pound ziti or otherdry pasta

• 8 ounces ricotta,about 1 cup

• 1/8 teaspooncrushed red pepper

• Zest of 1 lemon• 2 ounces grated

Parmesan, pecorino or amixture, about 1 cup,plus more for serving

1. Put a pot of water onto boil. In a large skilletover medium-high heat,cook onions in 3 table-spoons olive oil untilsoftened, 5 to 8 minutes.Reduce heat as neces-sary to keep onions frombrowning. Add zucchini,season generously withsalt and pepper, andcontinue cooking, stir-ring occasionally untilrather soft, about 10minutes. Turn off heat.

2. Meanwhile, use amortar and pestle topound garlic, basil and alittle salt into a roughpaste (or use a mini foodprocessor). Stir in 3 ta-blespoons olive oil.

3. Salt the pasta waterwell and put in the pas-ta, stirring. Boil perpackage instructions butmake sure to keep pastaquite al dente. Drainpasta, reserving 1 cup ofcooking water.

4. Add cooked pasta tozucchini in skillet andturn heat to medium-high. Add 1/2 cup cook-ing water, then the ricot-ta, crushed red pepperand lemon zest, stirringto distribute.

5. Check seasoningand adjust. Cook 1minute more. Mixtureshould look creamy. Adda little more pasta waterif necessary. Add thebasil paste and half thegrated cheese and quick-ly stir to incorporate.Spoon pasta into warmsoup plates and sprinklewith additional cheese.Serve immediately.

To freeze slices:Choose young, tender

zucchini. Wash and cutit into 1/2-inch slices.Blanch in boiling waterfor 3 minutes. Coolpromptly in ice cold wa-ter. Drain and packagein freezer bags or con-tainers, leaving 1/2-inchhead space. Seal andfreeze.

To freeze grated zuc-chini:

Choose young, tenderzucchini. Wash andgrate zucchini, then wa-ter blanch it for 1 to 2minutes or until it istranslucent. Put the zuc-chini in freezer contain-ers and place the con-tainers in cold water tocool it off. Seal and

freeze. Pour off excesswater when the zucchinithaws.

Freezing tip: Dividezucchini into portions soeach container has justthe amount needed forone recipe or meal. Thisway you won’t have tothaw more than youneed.

Dehydrated zucchini:Choose young, slender

zucchini. Wash and cut

into 1/4-inch slices forcooking purposes, or1/8-inch slices for chips.Dry in a single layer in a125 F oven until brittle.Use slices in soups andcasseroles, or sprinklezucchini chips with sea-soned salt and servewith dips.

POLAND — PolandClass of 2017 graduateDakota Mower complet-ed a Regional Programfor Excellence internshipduring the school yearwith TECT Power inWhitesboro — includingworking with anotherPoland graduate who gothis job there through thesame program.

Mower said that whenhe showed up on thefirst day of the intern-ship, it was interestingto find out that Polandgraduate Trevor Kalwaraalso did an internshipthere while going toschool, then went toSUNY Polytechnic Insti-tute, did another sum-mer internship at TECTPower and ended upworking there now as a

mechanical engineer. “Itwas kind of cool to learnthat it actually paid off todo the internship,” Mow-er said.

Mower’s internshipthrough the Oneida-Herkimer-Madison BO-CES Regional Programfor Excellence lastedfrom October 2016through April 2017. Inaddition to Kalwara,Mower worked with pro-grammer Phil Sweeneyand engineers Tony Ben-incasa, Jason Knauthand Mike Potsko.

TECT Power manufac-tures turbine enginecomponents and assem-blies for aviation, energyand industrial applica-tions, according to thecompany’s website.

Mower will be attend-ing Mohawk Valley Com-munity College in the falland then plans to attendClarkson University toobtain a bachelor’s de-gree. He then wants towork in mechanical engi-neering.

Kalwara’s departmentdid work that went be-tween the design phaseand the work on thefloor, Mower said.

“That’s how I foundout what I want to be —in the intermediary stage— half the day on thefloor and half the day inthe office,” Mower said.

Mower said that role

seems like the perfect fitfor him because he likesto be involved with thedesign work and helpingpeople, and he also likesto be involved with see-ing how the end productcomes out and beingaround people.

“It’s just the person Iam,” he said.

Some of Mower’s expe-riences at TECT Powerincluded pouring hot liq-uid to make castings, do-ing computer program-ming to set up robots,working with water jetand grinding robots andparticipating in meetingsand problem solving. Itwas nice to be able to bepart of those discus-sions, he said.

“That was kind ofcool,” he said.

Another interestingnote was that during acareer day at Poland,Kalwara was at Polandgiving a presentationwhile Mower was doingthe internship at TECTPower. When working to-gether, the two were ableto relate about their ex-periences at Poland.

Mower said he wasvery interested in the in-dustry he did his Region-al Program for Excel-lence internship in, buthe would recommendothers participate in theprogram even if it’s justto get a taste of what ajob is like.

“It’s a very good oppor-tunity,” he said, “and Iwould suggest it for any-one to do – and it doesn’tmatter what field you’regoing into.”

ANCHORAGE, ALASKA— Everybody needs ashoulder to lean on nowand then. A walrus calf atthe Alaska SeaLife Centerin Seward, Alaska, is get-ting one 24 hours a day.

Trained staff members,working in pairs, aretouching, massaging andcuddling a calf all day andall night as part of its recu-peration. The calf, estimat-ed to be about six weeksold, was found last monthwithout its mother several

miles outside Nome.Walrus are highly social

and spend two years withtheir mothers, said Jen-nifer Gibbins, marketingand communications di-rector for the center.

“They need constantcontact,’’ Gibbins said.“Part of the caregiving isproviding that constantcontact and tactile interac-tion.

The calf was spotted inmid-June on the deck of amining barge. The walruswas still on the barge thenext morning and the

barge crew summonedwildlife experts.

The SeaLife Center isdedicated to marine re-search and education andfeatures a public aquari-um. It’s the only facility inAlaska that holds a permitfor marine mammal rescueand rehabilitation.

When the calf reachedSeward on June 17, itweighed 120-pounds andwas extremelylethargic.“He was severelydehydrated,’’ Gibbins said.“That was really the firstconcern.’’

The calf initially was fedwith a tube down its throatthat sent food directly tothe stomach. It was con-sidered a hopeful signwhen the animal beganbottle feeding about a weeklater.

The calf now sucks downup to a liter of formula sev-en times a day. As the calfrehydrated and recuperat-ed, he became more active,curious and plump. Henow weighs 143-pounds.“That’s a pretty dramaticchange in a short time,’’Gibbins said.

The cuddling is critical,Gibbins said.

“One of the uniquethings about walrus is that

there is a very high level ofmaternal investment witha calf,’’ she said. “They arewith their moms for twoyears in the wild.’’

Twenty staff membershave been trained to bewith the little guy. He leanson them and sometimeslies on them. Sometimeshe sucks their arms. Gib-bins calls it nursing behav-ior.

“An infant human mightbe sucking on your fingers.That’s what they’re doing,’’she said.

Walrus have practicalreasons for refined touch-ing. They use their hun-dreds of short, highly sen-sitive whiskers to searchfor clams and otherseafood on the ocean floor,according to the AlaskaDepartment of Fish andGame.

A sea otter, ringed sealand two harbor seals alsoare receiving care. Most ofthe center’s rehabbed ani-mals return to the wild butthe young walrus won’t be.

“We can care for thiscalf. We can take care of itshealth. We can give it somegood social interaction.But we cannot teach thatanimal how to be an ani-mal in the wild,’’ Gibbinssaid. “That’s why they’renon-releasable.’’No decision has beenmade on placement. TheSeaLife Center will deter-mine what facility cangive it the best veteri-nary and social care.“This walrus needs to bewith other walrus,’’ shesaid. The center expectsto house the animalthrough summer andinto the fall.

Households across thecountry include compan-ion birds. Their sweetmusic and vividly col-ored plumage makebirds beloved pets.

Well-socialized birdsthat are accustomed tohuman interaction canmake for wonderful pets.However, unlike dogsand cats, some birdsmay not prefer or receivethe same amount of dai-ly attention from theirowners as other pets.

Birds can suffer fromdepression and anxiety iftheir living conditionsare not optimal. Birdscan become irritablethanks to illness, bore-dom, cage position, andmany other factors. Un-happy birds may engagein self-destructive be-haviors, such as pluck-ing out their feathers.Bird owners concernedthat their birds may beunhappy or unhealthyshould take the bird tothe veterinarian for anexamination, takingsteps to improve thebirds’ quality of life ifnecessary.

The organization BornFree USA does not advo-cate for keeping birds incaptivity, but does agreethat if birds are cage-kept, their conditionsshould be made as idealas possible. Here aresome suggestions tokeep birds healthy andhappy, courtesy of BornFree USA and other ani-mal welfare and health-care resources.

1. Feed birds nutri-tious diets. Beautyof-Birds.com states thatseed-only diets are themost common cause ofpremature death in com-panion birds. Birds needmore variety to prevent

nutrient deficiencies.Fruits, vegetables (in-cluding leafy greens) andsprouted seeds shouldaccount for between 20and 25 percent of abird’s diet.

2. Offer the largest en-closure possible. While itmay not be possible todevote an entire room toa companion bird, shopfor the largest cage avail-able. This will give thebird more room to exer-cise and spread itswings.

3. Keep sunlight flow-ing. Birds need access tounfiltered sunlightand/or full-spectrumlighting so they can syn-

thesize vitamin D. Win-dow glass blocks neces-sary UV rays. On nicedays, take birds outsideto enjoy time outdoorswith fresh air and plentyof sunlight.

4. Provide enrichmentactivities. Birds can be-come bored, so stave offboredom with activitiesthat enable them to usetheir brains. Birds mightenjoy foraging for treatsor playing treasure huntgames. Offer a variety oftoys to keep them stimu-lated.

5. Provide time tospend outside of thecage. Birds may benefitfrom a change of sceneryto improve their moods.Let the bird out of its

cage so it can safely ex-plore its surroundings.Make sure there are nobreakable items, closedrapes so the bird willnot fly into windowglass, and be certainceiling fans are turnedoff.

6. Provide naturalperches. Offer livingbranches that will bemore comfortable onbirds’ feet than other

perches. Birds need avariety of textures andsizes in their perches tokeep them healthy.

Birds’ happiness ascompanion animals isstrongest when theirneeds are met. Employ-ing various strategiesthat promote theirhealth and provide men-tal stimulation can im-prove birds’ quality oflife.

an 86 year old male whounfortunately lost mysense of smell and, to alarge degree, my sense oftaste as a result of tak-ing fluticasone propi-onate nasal spray (50mcg, one spray in eachnostril once a day). Thisdrug was prescribed bymy doctor. After findingout that I could not smellfresh coffee even when Iput my face over theopen container and

sniffed, I knew I had aproblem.

I mentioned this to an-other doctor (the pre-scribing doctor hadtransferred), and he ca-sually mentioned thatthat happens and that itcould take a year tocome back. Well, theyear has come and gone,and I haven’t regainedmy sense of smell. Theliterature that accompa-nies this drug does men-tion that a possible sideeffect is the loss of the

senses of smell andtaste. But this comesonly after readingthrough more than fivecolumns of small print.

It may not seem like abig deal to be unable tosmell the coffee, but I amalso unable to smell nat-ural gas, and living in ahouse with a furnace,hot water heater, clothesdryer and cooktop stoveall powered by naturalgas, it becomes a seriousproblem. I am hopingthat you can give mesome advice as to how Ican restore my senses ofsmell and taste. — T.K.

Answer: I certainlyfound the warning thatfluticasone, like othernasal steroids, cancause alterations in tasteand smell. However, Icouldn’t find in the pub-lished literature a case ofsomeone losing his orher sense of smell entire-ly from nasal steroids.Some blood pressuremedicines have beenknown to do it, as cannutritional deficiencies,tumors and Sjogren’ssyndrome. Exposure tosome chemicals cancause temporary loss ofsmell. Alzheimer’s andParkinson’s diseasessometimes cause loss ofsense of smell.

Anytime the sense ofsmell is lost, most peoplenotice a dramatic loss of

taste as well: This maybe because the aromasof food are the most im-portant contributor toflavor.

Unfortunately, after ayear it is likely the losswill be permanent, and Idon’t know of any way tobring it back. When re-searching your question,I found many referencesto studies that looked atfluticasone as a treat-ment for loss of sense ofsmell, which gives fur-ther evidence to the un-fortunate and unusualapparent cause in yourcase. It worries me thatyour new doctor was socasual about this loss: ItIS a big issue, and itsounds like he may nothave evaluated you forother possible causes.

Dr. Roach writes: I gotsome good advice aboutmy column on improvingpatient-physician com-munication. One tip I re-ceived, and one which Ioften recommend for mypatients, is to make a listof the important ques-tions you want to askyour doctor. Another isto bring someone withyou. Finally, doctors canhelp by providing notonly verbal advice, butwritten advice as well.This isn’t always neces-sary or even possible,but often it can reallyimprove the patient’s un-derstanding.

fat!• 12 ounces frozen

strawberries, cherries orpeaches (about 2 3/4cups), or 10 ouncesfrozen raspberries (about2 1/3 cups)

• 1 container (8ounces) plain low fat yo-gurt

• 1/2 cup sugar• 1 tablespoon fresh

lemon juice• 1/8 teaspoon almond

extract1. In food processor,

with knife blade attached,blend frozen fruit untilfruit resembles finelyshaved ice, stoppingprocessor occasionally toscrape down sides. If fruitis not finely shaved,dessert will not be smooth.

2. Add yogurt, sugar,lemon juice and almondextract, and process justuntil mixture is smoothand creamy, scrapingdown sides occasionally.Serve immediately. Or,spoon into freezer safecontainers and freeze toserve later; let stand atroom temperature 10minutes to soften slight-ly before serving. Makesabout 2 1/2 cups.

Certain vaccinationsfor companion animalsare recommended or re-quired depending onwhere the pet will be liv-ing. Just like immuniza-tions administered tohumans, pet vaccina-tions are designed tohelp pets develop immu-nities to certain dis-eases.

The American Veteri-nary Medical Foundationnotes that vaccinationsare often accompaniedby mild side effects. Butsome pets might experi-

ence more serious reac-tions to certain vaccina-tions. This can be partic-ularly disconcerting topet owners who are vac-cinating new pets for thefirst time.

Vaccines remain one ofthe most importantweapons in the fightagainst infectious dis-eases in companion ani-mals. But if the vaccinereactions prove to beworse than the diseaseitself, the ASPCA notesthat pet owners will needto work with their veteri-

narians about the bestcourse of action.

Minor reactions to vac-cinations may include lo-cal swelling at the vacci-nation site and some dis-comfort. Sneezing, mildcoughing and low-gradefever also can be com-mon.

More serious side ef-fects generally involve al-lergic reactions. Such re-actions can last any-where from a few min-utes to a few hours.Some indicators of vac-cine allergies include fa-cial swelling, itching,weakness, difficultybreathing, and evenshock. According to themedical team at Petfind-er.com, allergic reactionsare often treated withantihistamines, epineph-rine and supportive care.

In combined vaccines,which are those that ad-minister two or morevaccines in a single shot,it may be difficult to de-termine which vaccina-tion triggered the allergicreaction, or if the reac-tion was caused by apreservative or other for-eign matter in the vac-cine. It may be ad-viseable to have new petsreceive only one vaccina-tion at a time to bestmonitor reactions. If anallergy is noted, and theallergy arises again withrevaccination or a boost-er shot, then steps mustbe taken to reduce thepropensity for the reac-tion moving forward.This may include admin-

istering antihistaminesprior to the vaccine if itis a mandatory immu-nization. Pet ownersshould speak with theirveterinarians about the

risks of skipping re-quired vaccines.

owners should weigh thebenefits of the vaccineswith their veterinariansto develop the besthealth plan for theirpets.

WhatchamacallitsThis weeks’ Whatchamacallit is a

pinch-hitter. By that I mean that my original selection for you was put on hold due to an unexpected twist. I will pull that one out of my hat for next week. However, they are somewhat related and you’ll have to be patient to see how.This unusual item is a button

mold. Before buttons were massed produced out of plastic or other synthetic materials by machine — but after they were made individu-ally out of bone or shell — a mold such as this was used. Our exam-ple belonged to the Eaker family of Palatine, NY.During the early 18th century,

most buttons purchased in the U.S. came from England. Fortu-nately for us, around 1720, Ger-man immigrant Casper Wister

began making brass buttons in Philadelphia, so that by the time of the Revolutionary War, we had our own steady supply of buttons made here for uniforms. Back to our mold — a soft met-

al, usually brass was melted and poured into the closed mold until it started to come out the top (pho-to at left). As you can see by the close-up of the buttons still on the sprue (top right), buttons at fi rst had a shank with a hole that was used to fasten it to the fabric. Before the 13th century, buttons

were used as decoration on the clothing (similar to a pin or oth-er jewelry), not for fastening. Ac-cording to thebuttonmonger.com, sometime in the 13th century the idea of a buttonhole and button working together was conceived.

New pets can make lifeat home more exciting.Cats are popular petsbecause of their curiosi-ty, playfulness and size,which make them greatpets in private homesand apartments big andsmall.

Many people prefercats because they tendto require less mainte-nance than dogs and fe-lines are relatively self-

sufficient. According to a2014 survey from Alber-ta Agriculture andForestry, 37 percent ofCanadian householdsincluded one or morecats. In the UnitedStates, the American PetProducts Associationsays that 30 to 37 per-cent of households havea cat, and more than 35percent of cats are ac-quired as strays.

Kittens can be soft,fluffy and adorable tohave around. However,to maintain a peacefulhousehold and provide asafe environment for newfelines, it’s important forpet owners to followsome key tips.

Kittens should not beseparated from theirmother or siblings untilthey’re at least 10 to 12weeks of age, providedthe litter has had signifi-cant human contact, of-fers Blue Buffalo PetFood’s animal experts. Ifthe kittens have not hadmuch contact, it may bepossible to bring themhome earlier. The earliercats are socialized, theeasier the kitten-ownerrelationship and the lessskittish the cat may be.

Cats require some ne-cessities from the start.These include feedingbowls, litter boxes ortrays, toys, and scratch-ing posts. Washable cat

beds with warm blanketsare also helpful. Positionthe litter tray in a corneraway from food and wa-ter. The InternationalCat Care group says thata new home can be in-timidating, so it’s best tointroduce cats slowly totheir new environments.Choose a room that’squiet where the kittencan adjust. Outfit theroom with toys and aplace to snuggle or hide,and remove any hazardsor breakable items.

Gradually give the kit-ten time to venture outinto the main living areato explore, watching howit behaves. If the catdashes nervously, it mayneed more time to accli-mate. Some kittens takeup to two weeks to fullyrelax in a home. Peopleshould be introducedone at a time.

The animal guidancegroup VetStreet sayshandling and playingwith kittens at least onceper day will help ownersform strong emotionalbonds with their cats.Children should be mon-itored upon introductionto the new kitten tomake sure it’s a positiveexperience for both thekitten and child.
