Sand, Surf and SunThere might not be a better symbol
of summer than the beach:white-capped waves crashing againstglimmering sand. Whether you’re onthe beach or daydreaming about yournext vacation, these sandy facts maypique your interest:
• Cox’s Bazar, a town insoutheastern Bangladesh, isknown for its lengthy beach. Atabout 78 miles, it is thought to bethe world’s longest natural sandysea beach.
• Limestone, coral, crushedseashells and the skeletalremains of marine organisms areresponsible for the color of whitesand beaches.
• Black sand beaches are createdwhen hot lava flows into the sea.When the lava hits the water, itturns black and breaks intofragments, some small enough tobe considered sand. The largerfragments are broken down overtime by the surf.
• Sand accounts for 2 percent ofthe Earth’s crust, but most is onthe ocean floor, in rivers or indesert dunes.
• According to Guinness WorldRecords, 517 people inClogherhead, Ireland, weresimultaneously buried in sandin July 2010.

graduated long ago)! But that doesn’tmean you can’t spend the summerlearning new things. Here are a fewways to keep your mind sharp andcontinue the learning process duringthe summer months:
Visit a museum. From art to historyto science, many lessons can belearned by a visit to an area museum.Go at a time when you can join a tour.
Solve a puzzle. Flex your brainpower with a puzzle or game. PlayScrabble or sudoku, or challengeyourself with a crossword puzzle. Youcan play online, with a club, or athome with friends and family.
Listen in. Bookstores often featurereadings by guest authors or lecturesfrom experts on various topics. Stopby a local bookstore to see what theyhave in store for the summer. Whileyou’re there, check out what’s new onthe shelves.
Talk books. Many libraries offerbook discussion groups throughoutthe summer. Check your library’scalendar to see what kinds of groupsare available, and you might find anew genre you like.
Learn online. With countless onlineclasses and tutorials available toanyone with Internet access, you canalways learn something new.
Fresh Blueberry Chicken SaladWith Almonds
Ingredients:• 2 whole cooked chicken breasts• 1/2 cup chopped red onion• 1 tablespoon rice vinegar• 1/2 cup minced green onion• 1/4 cup chopped flat leaf parsley• 1/2 cup dried cranberries• 1 cup fresh blueberries• 1/2 cup low-fat mayonnaise• 2 tablespoons plain yogurt• 1/4 cup sweet mustard• 1/4 cup toasted almonds
Directions:Dice chicken breasts and place in
mixing bowl.Sprinkle red onion with rice
vinegar; toss into bowl.Add green onion, parsley,
cranberries and blueberries; foldgently to mix.
In small mixing bowl, addmayonnaise, yogurt and sweetmustard. Blend well; fold dressinginto salad.
