JUST ADD SHOYUMore Than Just A Cookbook – A Culinary and Cultural Journey Through the History of the Japanese Canadian CommunityJust Add Shoyu is a 272 page hardcover cookbook, consisting of 83 recipes, 48 anecdotes and stories, and beautiful full colour photographs. The book cost is $39.95 and it will be available mid November 2010. If purchased at the JCCC, JCCC members will receive a 10% discount with proof of valid membership. All proceeds from the sale of Just Add Shoyu, will go to help fund the JCCC and its Heritage Committee program and projects.

Just Add Shoyu is not just a cookbook. It is intended to provide a snapshot of our evolving Japanese Canadian community and hopefully, spark conversations about our heritage. The recipes mainly reflect the first generations in Canada―what influenced their cooking and what became their food―and the anecdotes and stories came from many Japanese Canadian generations. It is our hope that these recipes and stories will whet your appetite and conversations with your parents, children, family and friends about your history and food.

Oh what a glorious book! If offers us food for our eyes, our bodies, our souls. And if, like me, one happens to be Japanese Canadian, it takes us home. Food, they say, is what lasts when everything else in a culture is gone. Here is a way to savour what lasts, and to bring back some of what has gone. This special gift was brought into being by love. I'm grateful for it and expect to refer to it often, not just for the recipes, but to remember. And from time to time, while cooking or when life loses its flavour, I'll take the book's advice and -Just Add Shoyu.

Joy Kogawa

All recipes and stories were submitted by the community. Initially the focus was on obtaining submissions from the Greater Toronto Area, but after many meetings with groups and through our outreach efforts via newsletters, newspaper articles, booths at events and personal interactions with people in the community, we received and included submissions from across Canada and the United States. Submissions not used in this book may be used in future projects and will be part of the Heritage Archive.

On behalf of Theresa Sano and me, Russell Onizuka, we would like to thank the hundreds who participated in this project. We are proud to say that Just Add Shoyu was a completely volunteer driven project and all who contributed are acknowledged in this book. The process to produce this book involved many volunteers―the cookbook committee who obtained the recipes and stories, recipe testing subcommittee who tested every recipe submitted, subcommittees responsible for recipe selection, story selection, editing, marketing, the photo shoot―the professional creative design team of Heather Cooper and Eric Graham, professional food photographers Vince Noguchi, Brian Sano and Eric Graham, and professional food stylist Meaghan Baron.

We would also like to give special thanks to the individuals who kindly donated money to our project and for grants from the NAJC and Government of Canada, New Horizons Program.

This has been an exciting project and we hope you will buy a book to help support Heritage programming.

November Movie Night: TOKYO STORYOne of Cinema’s Great Masterpieces comes to the JCCC

Yasujiro Ozu’s 1953 masterpiece Tokyo Story (Tokyo Monogatari) follows an aging couple, Tomi and Sukichi, on their journey from their rural village to visit their two married children in bustling, postwar Tokyo. Their reception is disappointing: too

busy to entertain them, their children send them off to a health spa. After Tomi falls ill she and Sukichi return home, while the children, grief-stricken, hasten to be with her. From a simple tale unfolds one of the greatest of all Japanese films. Starring Ozu regulars Chishu Ryu and Setsuko Hara, the film reprises one of the director’s favorite themes—that of generational conflict—in a way that is quintessentially Japanese and yet so universal in its appeal that it continues to resonate as one of cinema’s greatest masterpieces. Tokyo Story has twice appeared in Sight & Sound magazine's 'Top Ten' list of the greatest films ever made. This film will be presented in high resolution Blu-Ray technology for an exceptionally clear image.

Date: Thursday November 25, 2010Time: 7:00pmAdmission: $6 JCCC members, $8 non-members

The First Emperor of China and His Importance for JapanThis November, George Hewson will be holding another East Asian Studies seminar on "The First Emperor of China and His Importance for Japan". This illustrated lecture will tell the story of and how he changed the course of history in both China and Japan. Qin Shi Huang Di, the first emperor, famous for his underground army of terracotta warriors, created the most powerful and influential nation on earth at the time. Its impact on the Land of the Rising Sun would be of great significance to the island nation that saw itself as the home of the gods. George Hewson, B.A., M.A., B.Ed., OCT is a 6th degree black belt martial arts instructor and the President of the Canadian Aikido Federation, a teacher at the Royal Ontario Museum, and a member of the JCCC Board of Directors. He has lived and studied in Japan.

Pass On Your Values - Plan Your Legacy Through Planned GivingYou have worked hard to accumulate assets throughout your life, but without a valid will, at your passing, those assets will be distributed according to the law. Wouldn't you rather determine that yourself? Making a planned gift such as including a bequest in your will to individual beneficiaries or a charitable organization such as the JCCC may be the best way to make a meaningful gift in the future. Plus, it allows you the ability to change your mind at any time. Why not use your hard earned money to make a difference; help your favourite charity while gaining the opportunity to reduce your taxes. Please join us at the JCCC on Monday November 15, 2010 at 10:00am for a panel discussion featuring MoneyTalk’s Patricia Lovett-Reid. This panel will discuss the considerations involved in charitable giving and planned giving and may inspire you to consider how you want to gift some of your own accumulated wealth for the benefit of yourself and others. These considerations include: providing for family members, minimizing taxes, having enough liquid assets to support oneself during one's lifetime, carrying out a plan that is consistent with your values and interests and leaving a legacy for future generations. Don’t miss out on this opportunity to hear from one of the leading authorities on wealth management first-hand! As seating is limited, your prompt response is recommended. Please register in advance by calling JCCC Reception at 416-441-2345. We look forward to seeing you at this full and informative discussion! To receive more information on planned and legacy giving, please call William Petruck at 416-249-0788 ext. 21 or email [email protected].

The next newsletter will be the December 2010/January 2011 combined issue! Submission deadline

is Tuesday November 16, 2010.

From the JCCC Board of DirectorsWelcome to the 2nd edition of the JCCC Board of Directors information update. Each month we want to inform all our members and the community about the many functions of the JCCC Board and the progress that we are making in order to keep the JCCC a vibrant, active, exciting and financially successful organization. Last month we shared the JCCC mission and strategic direction. This update is to give you a sense for how we are organized to get there and where you might be able to help. The JCCC Board consists of an Executive Committee of experienced directors that have each taken on the active role of leading a working committee to move the strategy forward. While we rely on James Heron and his team to manage the day to day operations of the JCCC, these committees represent the opportunity for the community and the board to steer major initiatives. If you have any interest in volunteering your knowledge and skills, the following committees led by a board member need your help.Management ( Ann Ashley - VP), Finance ( Sri Kugan –Treasurer), Legacy (Art Ito - VP), Heritage (Peter Wakayama - VP), Strategic Planning (Donna Davis - VP), Jcomm ( Junko Mifune - VP), Sedai (Lorene Nagata), Leasing (Nao Seko), - and all of the Directors are active in one and/or more committees. Our Board advisors also provide a wealth of knowledge and experience, as they too are very active on committees. We welcome involvement from the community and we can be contacted through the JCCC at 416-441-2345 and [email protected]

The Sedai Project is committed to collecting, documenting, preserving and sharing the history of the Japanese Canadians. We, the Sedai Committee, collect and preserve the Japanese Canadian history through audio and video recordings in a relaxed interview format. We continue to search for all Japanese Canadians who were born pre-war and war years to come and share their stories with us.

Nikkei History in JapaneseDo you know “Nikkei History?

It is regrettable that new immigrants from Japan and their children do not know much about “Nikkei” history and the learning opportunity is quickly disappearing because there are few Issei still alive and the Nisei are rapidly aging. In order to learn and inherit the Nikkei history and heritage, JCCC is offering “Canadian Nikkei History” class starting January next year for primarily Ijusha and their children who will be the creators of future Nikkei history. This class will give them an opportunity to study “Nikkei” history as a part of their own. This J-Comm program will be presented by lecturer Mr. Yusuke Tanaka who has been a Japanese Editor of the Nikkei Voice for many years. He has been lecturing on Nikkei history and multiculturalism at universities and academic conferences in Japan as a visiting special lecturer since year 2000. If you are thinking of attending the class, participating at “Sharing Our Stories of the War Years” as a registered attendant or volunteer is strongly recommended. The lectures will be given in Japanese. Please refer to the details below:

Third Annual Sakura BallBringing together the best of Canadian and Japanese entertainment, cuisine, culture, and style, the JCCC is excited to announce the Third Annual Sakura Ball. The Sakura Ball is an elegant social evening and the largest annual fundraising event the JCCC holds. Last year, the sold-out event set a new record by raising over $250,000 for the JCCC Legacy Campaign, which supports ongoing cultural and heritage programming, exhibits, and events and ongoing capital projects.

One of the traditions of the Sakura Ball is the presentation of the Sakura Award.

Awarded once a year by the JCCC, the Sakura Award recognizes exceptional contributions made by individuals to the promotion and exchange of Japanese culture and enhancing awareness of Nikkei heritage within Canada and abroad. The first recipient of the Sakura Award was the Right Honourable Martin Brian Mulroney, the eighteenth Prime Minister of Canada, recognizing his participation in the Japanese Canadian Redress settlement on September 22, 1988. Last year, we were privileged to present the award to Japanese Canadian architect, Raymond Moriyama. His stories of being interned during the Second World War because of his Japanese heritage and his rise to become one of Canada's most respected architects continue to inspire the community. Building on this tradition of excellence, the JCCC is honoured to present this year’s Sakura Award to award-winning scientist, environmentalist and broadcaster, David Suzuki. Co-Founder of the David Suzuki Foundation, Dr. Suzuki is renowned for his radio and television programs that explain the complexities of the natural sciences in a compelling, easily understood way. Keep checking the JCCC newsletter for more information about this not-to-be-missed event.

Issei DayOn Sunday October 3, 2010, the JCCC hosted our annual Issei Day to honour all those that are 70 years old and over. Our new pre-registration system was highly successful – we reached Kobayashi Hall capacity weeks before Issei Day and even had a lengthy waiting list. Not wanting to turn any of the seniors away, some last minute magic transformed the Shokokai Court into a second seating area, complete with a live video feed from Kobayashi Hall so those seated in the court could enjoy the entertainment as well. With over 450 attendees, this made it our biggest Issei Day ever. It is very impressive to see how vibrant our seniors are!!! Over 70% of the guests were age 80 or better and 40 of our guests were 90 years old or better! There was wonderful entertainment provided with odori, karaoke and special performances by JCCC Hula dancers and “Elvis” (by Steve Comilang). We thank all of the performers, the emcee’s Yuki Nakamura and Stan Kayama and also Kunio Suyama, for the emceeing the entertainment portion. At this time we would like to make special acknowledgement to some of the people and groups who have helped make our Issei Day so successful in the present and the past. We extend our appreciation to Mr. Ishii for the bentos – as his small group of volunteers and crew worked for 5 days preparing the food and began early morning filling all the bento boxes. And much appreciation to Mrs. Nishihama who, over the past years, has made the fantastic manju, and to Ohara Ryu for the flowers on the tables. A special mention goes to the NJCA (Nobby Miura and his group of volunteers), who manage the registration tables and help during the event. Much appreciation is also extended to the Consul General of Japan for the generous donation every year of the sake for the 80 years and over attendees. Overall, we extend our deep-felt appreciation to the hard-working committee, staff and all volunteers for a wonderful event.

NOIR Espresso Bar / Caféby NOIR Espresso Bar / Café

Here you have it…a ‘Japanese’ Barista, a ‘French’ name and an ‘Italian’ Espresso machine! Kirby Azuma and his wife Donnetta Galloway are the creators and proud owners of a newly opened Espresso Bar and Café specializing in fair trade, direct trade, organic coffees and loose leaf teas. The fresh interior oozes an elegant Asian theme ‘without the kitsch’ with black granite aplenty, black lacquered Asian furniture and intimate lighting. Exposed brick walls of the heritage building on St. Clair Ave. West near Christie, play backdrop to delicate potted orchids on every table. The Victoria Arduino Adonis Espresso machine, one of 3 in Toronto, sits grandly atop a 300 year old elm altar table from the Qing dynasty. The steam signals each carefully prepared customized Espresso drink be it an Americano, cappuccino, latte, mochaccino, macchiato, café au lait, tea steamer or a pure swig of Espresso with just the right crema…or perhaps an affogato (long shot of Espresso over vanilla bean ice cream)! For the drip coffee lovers NOIR offers two ‘on tap’ at any given time e.g. a smooth, rich Ethiopian or a dark French roast blended just for NOIR. Loose leaf tea afficionados can peruse a beautiful handpicked selection from over 16 flavours, including Matcha! Noir offers food, café style… healthy savouries and exquisite sweets including gluten free snacks, Liberte yogurt with fresh fruit /granola, a cheese plate, potato salad, soups, green tea / ginger ice cream, seasonal apple caramel pie a la mode, pumpkin pie a la whip cream, lemon cream cheese crumble, assorted fresh scones, muffins, cookies, coffee cakes, and squares, to name a few. Enjoy a fresh brewed coffee, a traditional Vietnamese coffee or, a ‘proper pot’ of green tea in a traditional cast iron Japanese tea pot on a tray with its acoutrements including a timer to let you know the right steep! Add a savory samosa with mango chutney or a custom made sandwich such as Tuna with wasabi mayo, wild pink salmon with fresh dill, curried egg salad with the ‘sweet with heat’ mango chutney, chicken salad with spring onion and cranberries, Swiss cheese and ham on a healthy 8 grain bread…to name a few…or perhaps Donnetta’s favourite …vine ripened tomato with mayo, fresh basil, and cracked pepper. For the holiday season approaching Donnetta and Kirby are toying with ideas of Bento boxes filled with mouth watering treats …perhaps a nice afternoon tea with a friend is in order? Visit NOIR coffee and tea and please mention you are a JCCC member. Complimentary Wifi with plugs under each table.

NJCA Yuuai Fund (Friendship Fund) Extends Support to the Sasaki Familyby The Toronto New Japanese Canadian Association

Since its foundation in 1976, the Toronto New Japanese Canadian Association (NJCA) has assisted a wide range of new Japanese Canadians during their struggle in settling down in their new Canadian environment. Recently, a decision was made by the NJCA Board to launch a fund-raising project to assist a family who is going through a very difficult time due to the serious illness of their son. The NJCA’s Yuuai Kikin (Friendship Fund) is ready and is operating as a contact point of this project. The late Mr. Tadao Sasaki made a tremendous contribution as a volunteer stage production artist for the Japanese community’s annual events such as “New Year Entertainment Festival” and “Toronto Kohaku Utagassen (Japanese Song Festival)” until he succumbed to brain tumors in 1991. His wife, Tomoko, continued her volunteer work behind the scenes of various events, as did their son, Yuuta (now age 35), in his student days. Sadly, Yuuta was diagnosed with the very same brain tumors as his father’s 10 years ago, and has been struggling since. Recently, he set hope for and went through a tumorectomy, the only treatment choice left for him. In addition to complete loss of hearing, he suffers from the side effects of compromised cranial nerves. It will take several months of hospitalization before he can start rehabilitation therapy. The emotional and financial difficulty that the family is going through is beyond our imagination. The NJCA is appealing to the general public for support and cooperation for this fund-raising project.
