Kajri maachher tok (sour preparation with kajri fish) Ingredients : 1. Kajri Fish – 500gm 2. Tamarind paste – 2 tbsp 3. Green Chili– 2 4. Turmeric powder – ½ tsp 5. Curry leaves- abut 10 6. Coriander seeds 7. Salt – to taste 8. Cooking oil (could be Mustard)– 3 to 4 tbsp Procedure : Wash and clean the fish. Drain well. Coat lightly with turmeric and salt. Keep aside for 10 minutes. Heat a flat-bottomed wok for some time (this helps cut down on the amount of oil required). When well- heated, add 2 tablespoons of oil- spread it around the bottom of the wok. Heat for some time. But don’t let it burn. Fry the drained fish lightly. Keep aside. In the same wok, now empty, add 1 tablespoon of oil. Put in the coriander seeds- about 1 teaspoonful and heat till they splutter. Add the curry leaves, fry for about 30 seconds, and then add the tamarind paste with some water. Make it as dilute or as concentrate as you want Add salt and split chillies. When boiling, add the fish and boil for about 2 minutes. To serve: Serve with hot rice.
