The Friends of Kamalani and Lydgate Park have celebrated Earth Day in Lydgate Park each spring for the past 15 years by hosting a community workday. The event was on track for 2020 until our routines were preempted by COVID-19’s arrival, park closures and the sensible imperative for social distancing. While you won’t be able to enjoy a local community workday this spring, you could participate in a coordinated effort to advance awareness of the basic principles behind the Earth Day movement. Here’s text from a global call to action distributed by the Earth Day Network: “On April 22nd, we mobilize – digitally. “At Earth Day Network, the health and safety of volunteers and participants in Earth Day events is

our top concern. Amid the recent COVID-19 outbreak, we encourage people to rise up but to do so safely and responsibly – in many cases, that means using our voices to drive action

online rather than in person. “With this in mind, Earth Day Network is postponing its live 50th anniversary Earth Day event. Instead, April 22 will mark the first Digital Earth Day, a global digital mobilization to address the most urgent threats to people and planet. “Digital Earth Day will use some of the world’s most innovative digital media platforms to mobilize millions in a collective call for climate action. The coordination will deliver an Earth Day unlike any other in history. “In the face of a challenge that unites us all, whether it be coronavirus or our global climate crisis, we cannot shut down. Instead, we must shift our energies and efforts to new ways to mobilize the world to action. “The first Earth Day was the biggest civic engagement demonstration the world had seen. The 50th anniversary of Earth Day will take mobilization to the next level. In March, the Surfrider Foundation, one of organizations that had planned to assist with Earth Day in Lydgate Park 2020, sent out an e-mail with the following suggestion: “The [mid-March rain] storms have brought a major mess to our coastline. “Neither the state, the county or the tourist industry cleans our Kaua’i beaches. It is up to us. “Social distancing has made it necessary to cancel all Surfrider Foundation Beach Clean Ups and Net Patrols until May. In mid-March, heavy rains drenched Kaua‘i, prompting the county government to issue flash flood and “severe thunderstorm” warnings lasting three days. On the third day, county officials issued a tornado warning — the first ever on the island. The stormy weather, however, did little to scare a dozen or so young farmers at Rising Sun Organic Farms who were preparing Community-Supported Agriculture boxes to be delivered across Kaua‘i. “We work with headlamps on, in the pouring rain, in thunderstorms, whatever it takes to get the food out,” said Sol Kahn, owner of RSOF in Moloa‘a. The real threat wasn’t the weather; it was losing food-security during a time when COVID-19 kept spreading panic and death, collapsing economies and breaking health systems across the globe. The toilet paper hoarding only highlights how easy it is to descend into social chaos — if food were to disappear instead, things would quickly turn very, very ugly. “This is the most critical time to be a farmer,” said Kahn, referring to the pandemic. “This is why we’ve been doing this for. We’ve been ready.” Being one of the most geographically isolated places in the world, Kaua‘i is always at risk of losing its food and fuel supply in case of a major global crisis. If that were to happen, the community would turn to local farmers, he said.

“So, this isn’t a small task, this isn’t a small thing for us. This is a huge deal,” Kahn said of being a farmer. Besides RSOF, several other small farms on Kaua‘i offer Community-Supported Agriculture, or CSA, packages to the community. It is a way for the community to purchase locally grown seasonal produce straight from farmers. Some call it a “farm share,” where community members buy a share into the crops. It’s a win-win situation for farmers and customers; it gives farmers the certainty to sell their produce, while buyers get a rainbow of fruits and vegetables at a reduced cost.

Health, Wellness & Fitness

Our first line of defense against COVID-19 is social distancing, good hygiene and avoiding exposure in the first place. Our second line of defense is a strong and healthy immune system. Here are some tips and fundamentals for building and maintaining a strong and healthy immune system.

1. Sleep One of the biggest and most overlooked needle movers for good health and a strong immune system is getting enough good sleep. It is during deep sleep that the body detoxes and rebuilds and repairs itself the most. Getting seven to nine hours of good sleep a night is recommended. Studies have shown that getting less than seven hours of sleep a night can actually cause brain damage. Practice good “sleep hygiene.” Our circadian rhythm is dictated by exposure to sunlight. It is important to get at least 30 minutes of sunlight each day and avoid blue light and screen time for at least an hour and up to a few hours before going to sleep. Refrain from drinking caffeine in the afternoon and evening. While alcohol can help you pass out, it greatly lessens your quality of sleep. Refrain from drinking alcohol a few hours before going to sleep. Try to wind down in the evening with relaxing activities like reading a book or meditating and avoid activities that gets your mind racing like working or sending emails. Use the Ayurvedic Clock to your advantage. In Ayurveda, the day is divided into the three “Docias,” which each occur twice a day and hold different energetic qualities. According to Ayurveda, you should wake up before the sun around 5:30 a.m., which falls in the Docia Vata, a more energetic clear energy. The period between 6 and 10 a.m. falls into Kapha, which is a heavier slower energy and makes it easy to hit snooze and not want to get out of bed.

A Strong, Healthy Immune SystemBy Bright Krinsky

At night, it is recommended to go to sleep before 10 p.m. This way you are using the heavy grounding energy of Kapha to your advantage for an easy time falling asleep. From 10 p.m. to 2 a.m., it is Pita, which is a more energetic fiery Docia that makes you want to stay up and party, and it is more difficult to fall asleep. I noticed the Ayurvedic Clock to be amazingly accurate once I get on a good consistent schedule.

2. Drink Plenty Clean Water A good rule of thumb is to drink half of your body’s weight in ounces of water per day. So if you’re 150 pounds, you should drink 75 ounces of water a day. If you’re working outside in the heat, playing sports or working out, I would recommend more than that. Listen to your body. Try to get good, clean water. Getting water from a natural spring is the best. A good filter in the house is probably the most convenient option for most people. Adding a squeeze of lemon, lime or some apple cider vinegar can change the pH of your water. Although these examples seem acidic, they are actually alkalizing in the body. An alkaline body is often associated with good health while an acidic body is often associated with inflammation and disease.

3. Eat Healthy The easiest way to define eating healthy is by moving away from processed foods and toward natural whole foods. A diet high in fiber, nutrients, healthy fats, good protein, complex carbohydrates, and low in refined carbohydrates and sugars is the way to go. Some examples of recommended foods are cruciferous and leafy green vegetables such as kale, collard greens, brussels sprouts, spinach, chard, asparagus and broccoli. Have low-glycemic fruits such as berries and melons, any fruit in moderation, starchy whole foods such as sweet potatoes, taro and pressure cooked beans. Other healthy foods include sea vegetables, healthy fats such as macadamia nuts, seeds, avocado, grass-fed meat, fish, shellfish, eggs, grass-fed butter, extra virgin olive oil, whole grains in moderation and homemade bone broth. Avoid bad oils such canola, soy, vegetable, corn, and anything partially hydrogenated, additives, emulsifiers, preservatives, artificial colors, artificial flavors, natural flavors, sweeteners, many refined carbohydrates such as white flour, and factory farmed animal products that have been treated with antibiotics and chemicals. Sorry, but maybe ease off on Da Spam. I do believe in cheat days, though. A big part of the equation about a healthy immune system is a healthy happy gut. A great way to maintain a healthy gut is by eating plenty of fermented foods such as kimchi and sauerkraut. Garlic, ginger, turmeric and herbs such as echinacea and goldenseal have long histories of being used as immune system boosters.

4. Exercise Another excellent and important way to boost your immune system and maintain great health is by getting plenty of exercise. Assuming you are healthy and haven’t been advised by your doctor to avoid exercise, it is recommended to mix aerobic, resistance and burst training. Even fairly short sessions a day can have a huge impact on you, improving cardiovascular health and circulation, building muscle mass, improving bone density, losing unwanted body fat, reducing stress and improving your mood and mental clarity.

5. Minimize Stress Minimize and handle stress, both chemical and psychological/emotional. In this modern world, we are bombarded with toxic burden from our environment and products that we use and consume. Try to make some informed choices about what you are touching, breathing and consuming every day. Avoiding foods that have been sprayed with herbicides and/or pesticides is a great place to start. The dirty dozen and clean-15 list provides good guidelines for making informed decisions on which foods should always be organic or avoided. Now is a good time to become aware of any food sensitivities you may have. A good way to do this is with elimination-diet. Gluten and dairy are some common ones that put stress on many people’s immune systems. Take a look at what chemicals are in your skin products, toiletries, household cleaning products, packaging, cans and bottles (BPA), dry cleaning, etc. Try to minimize exposure to industrial chemicals at work and things you may handle often such as receipts, and always be aware of what you are breathing and touching. In Hawai‘i, it is traditional to take off your shoes when entering a home. This is a very good practice that helps minimize bringing toxic residues into the house. It goes without saying that alcohol, cigarettes and most drugs are terrible for your immune system and health in general. I believe psychological/emotional stress has as big impact on your general health and immune system as well as nutrition and exercise. Adopt a meditation practice or something such as tai chi, chi gong, yoga, dance, connected breathing or the Wim Hof Method. Lab studies have shown that practicing the Wim Hof Method breathing technique actually increases white blood cells.

The diseases that were known in the islands before the advent of foreigners caused fewer deaths than those that were introduced.The Kalaupapa Peninsula, on the island of Molokai, seen here, was the mandatory final destination for more than 8,000 Hawaiians who were diagnosed with Hansen‘s disease between 1866 and 1969. Capt. James Cook‘s 2nd Lt. James King estimated that there were 400,000 Hawaiians in the islands in 1779. By 1920, there were less than 24,000 Native Hawaiians left in Hawai‘i, mostly due to the introduction of Western diseases, to which Native Hawaiians had no natural defenses against. Hansen‘s disease was one of those diseases.

Kau Kau DelightsKaua‘i Take Out and Delivery ServiceMany restaurants on Kaua‘i have switched to take-out and delivery only in order to comply with government orders to fight the spread of COVID-19. But with procedures changing on a daily basis, it can be difficult to stay informed. So a local girl came up with a clever idea: a virtual group in the world’s largest social media site, where information about local restaurants can be easily found. “Locals love to eat,” said Emily Manuel, creator of Kaua‘i Take Out and Delivery Service group on Facebook. “Food is comforting. Eating is important for us; it’s part of our culture.” With Kaua‘i going into a lockdown and a nightly curfew, Emily was wondering how restaurants would be able to get information to the public on how they are adapting to the new rules. She also noticed restaurants and community members were asking the same questions on Facebook. “I realized everyone was having the same concerns,” Emily said. So on March 19, the day before Kaua‘i went into a nightly curfew imposed by Mayor Derek Kawakami, she created the Facebook group. In only a few days, the group’s membership swelled to more than 2,500 people. The group, she said, is designed as a spot for people to see what services restaurants are offering. It’s a completely free resource created just for the community and local food-service businesses. Several restaurants joined the group. The information comes from them, and also from members. It’s an interactive page, with constant updates on the island’s restaurants. It turns out, she said, people were not just providing information, but also help. One of the group members donated $100 in coffee credit to patrons at Ha Coffee shop in Lihu‘e, and on the next day, he did the same thing for patrons looking for poke at Fish Expres in Lihu‘e. Imua Roasters also donated a bunch of coffee to frontline responders. “That’s what I love,” Emily said. “I saw the responses from the community, and they’re all willing to help each other.” The information shared on the group wasn’t limited to restaurant services. Emily posted food-safety guidelines. Ron Wiley from Kong Radio shared information on free meals for kids at various schools. Kaua‘i Chamber of Commerce Executive Director Mark Perriello posted that he partnered with the County of Kaua‘i and Mayor Kawakami to create an online interactive map of restaurants doing take out and delivery. “It’s just really great that everyone is doing a such a great job sharing resources and information. It’s such a positive environment,” Emily said. “It’s been such a blessing for me to watch all these people come together to help each other; it was more than what I expected.” When it comes to a crisis, the community on Kaua‘i always pulls together, she said. We are used to natural disasters here. But this is a different kind of disaster, happening on a global scale, and we are having to fend for our own community. None of us have experienced this before, and everyone is on the same boat trying to figure out what to do, how to survive, she said. Yet, everyone is looking for ways to stay positive. “Kaua‘i is such a great community to live in, especially in times like these,” Emily said. “Essentially, we are putting the priority on getting food out to the community,” said Fletcher Parker, farm manager at RSOF. “We still have to take care of our accounts, but the CSA is that community-asset involvement.” Community members also seek CSA packages from local farmers because they know the farmers, according to Kahn, and many of them offer organic produce. “The people know where they’re getting their food from,” said Kahn, adding all his crops are organic. It’s food you can trust, packed with nutrients. “It’s very clean; a lot of love went into growing it. There are no chemical pesticides.” Food sustainability has been a hot topic for many years in Hawai‘i. With nearly 90 percent of the local food supply coming from overseas, the scale is heavily tipped toward food vulnerability in the Islands. But in the last few years, there has been an increase in small local farmers across Kaua‘i, according to Kahn. And with COVID-19 threatening to disrupt Kaua‘i’s food supply, local farmers are seeing a boost in demand. Parker said Mālama Kaua‘i Executive Director Megan Fox is taking a strong lead on supporting local farmers and connecting them with the community. “She’s really taken the bull by the horns and tried to get the word out to people.” Fox said the main things Mālama Kaua‘i is working on right now include a Local Food Connector webpage, keiki CSA boxes (which had

yet to be funded by press time), and a partnership with Hawai‘i Foodbank (with funding from Kaua‘i County) to offer CSA boxes to the kūpuna. “CSAs and programs that support community access, especially for those in need, are especially important right now,” Fox said. Among the resources, there is an extensive list of farms offering CSA boxes, retail outlets selling local produce, farms doing on-site pick-ups and roadside deliveries, local meat producers, food programs, resources available to farmers, etc. “It’s nice to see so many advancements that have been long-needed in our food system to be supported right now,” Fox said. Years ago, Moloa‘a was the site for a once lucrative monoculture of papayas, which covered much of the fields now producing a wide variety of crops. Kahn’s farm is about 22-acres, with three acres

abounding with an array of vegetable crops. The remaining land is covered with and orchard of 3,000 fruit trees of various assortments — more than 300 mango trees, 150 lychee trees, 200 avocado trees, 100 jackfruit trees and many other fruit trees. “We have just about everything here,” Kahn said. RSOF is surrounded by several farms also contributing to the rise of diversified agriculture on the island. produce as well,” Kunana Dairy and its “fantastic goat cheese,” and John Wooten’s farm, Kahn said. “There’s a whole list of it.” Kahn said it’s always a competition, in the sense that it’s a business, and each farmer is trying to grow the best food possible. But everyone is pretty even as far as quality, and they don’t try to make it a competition because there is a market for everyone. “You can’t grow enough tomatoes, you can’t grow enough lettuce, you can’t grow enough cucumbers, you can’t grow enough watermelons, you can’t grow enough beets. You have to know how to market it, but there’s enough to go around,” he said. People need to realize, Kahn said, growing your own food is crucially important. What is happening in the world today, the

COVID-19 pandemic, could’ve happened at any moment, he said. “We always knew that, and so we were getting ready for it.” “We want to feed people, we want to make sure we feed as many people as possible,” said Kahn, adding even if there are people who

can’t afford to join the CSA program, he will still provide food for them. Parker said everyone is coming together in this time of need. They even talked about working with other farmers to move some products. “The fact that this discussion is going on in the community, it’s huge, we’ve got to feed our community,” he said. For Kahn, this is the time for those who say they love the ‘āina, or land, to get their hands dirty, to put their money where their mouth is. “Let’s do it. Let’s work.
