Keto Irish Soda Bread – Ginger’s Keto in the UK Per slice: 156 calories, 1.8g of carbs, 5.9g of protein, 13.1g of fat Serves 10 – counted on the app SENZA This recipe can be doubled to make 12 scones. Just reduce cooking time by 5-8 mins. Ingredients 45g of milled chia seeds 125g of ground almonds 1/2 tsp of baking soda 1/2 tsp of Himalayan salt 1 tbsp of apple cider vinegar 1tbsp of sunflower seeds 1 tbsp of pumpkin seeds 3 eggs 30g of butter Directions 1. Place the butter in the microwave to melt for 30 seconds 2. Next add the butter, eggs and vinegar to a blender or Nutri Bullet and mix until the eggs are fluffy. Then add in the chia seeds to this mix and allow to rest for 10 minutes. 3. In another bowl add the ground almonds, salt and baking soda. 4. Once the 10 minutes are up add the chia mix to the dry ingredients. Kneed the mix into a dough like texture using your hands. You may need to add a couple of tablespoons of water here if the mix is too dry. 5. Line a 1lb bread tin with parchment paper and place your dough inside sprinkling the top with the sunflower and pumpkin seeds. 6. Bake for 30 minutes at 180°C. After 30 minutes is up remove the bread from the tray and turn it up side down and bake for a further 10 minutes. 7. Remove from the oven and check it’s cooked with a tooth pick or knife. 8. Allow to cool before slicing into 10 pieces. Store in the refrigerator or freeze for use at a later date.
