Brunch, lunch, or supper omelets: An omelet can be as full of food or as light as you wish—perfect for any meal. A medium-light omelet contains two whites for each yolk (e.g., four egg whites to two yolks), as opposed to all whole eggs. A light omelet consists of all egg whites. For light omelets for big meals, try fruit fillings, low-fat cheese, and/or light meats, such as 2 ounces per person of smoked
turkey or turkey sausage. Add ¼ cup baby shrimp for a flavorful lunch omelet. You can add asparagus, chopped artichoke hearts, and roasted vegetables. If you serve an omelet for brunch or lunch, add a side salad to keep it light. If it’s a supper omelet, start with soup and serve hot multigrain bread on the side.

If your omelet gets too dry, •it will crack and be difficult to fold. To avoid this, place the filling on one side, then immediately turn the plain side onto the filled side.
Or, spoon the filling down •the middle of the omelet, and then fold each side over the middle.
Next, turn the omelet over, •leaving the smooth side on top. This melds the sides together.
Carefully remove the •omelet to a warm platter. Cut into serving pieces and add extra salsa to each.
When you’re home alone, •an omelet becomes the ultimate comfort food. It’s a snap to make, and it’s also easy on the digestive system.
Try making a “kitchen sink” •omelet from leftovers. Start with an inventory of your fridge and freezer.
Leftover veggies from •a salad work well, as do leftover cold cuts, steak, chicken, or uncooked shrimp.
Use bits of cheese and •whatever else is in there. Whisk up a couple of eggs or one whole egg and two whites.
