to our area! The Jackson-
Lehman branch will tentative-
ly open June 5th, according to
their Membership Develop-
ment Director, Danielle Parr.
It will be located next to the
Kroger on St Joe Center Road
and will feature a chapel,
wellness center, gym, indoor
track, teaching kitchen, in-
door aquatics, as well as a
warm therapy pool. For more

have to admit that we are too. Call the

NAME THAT BABY Long term residents of five years need YOUR help!
Curtis and Heather have announced their dream is
coming true toward the end of August...they are
becoming parents! We are having a “Name that Baby”
contest to help this sweet couple out! There are jars in
the office that you can stop in and submit your idea,
or give us a call! We still do not know if the child is a
boy or a girl. This is such an exciting time for them,
and for all of us that know how long they have wanted
a child in their lives. We wish you both the very best
as this baby grows and look forward to seeing all the
names as they come in. Look forward to the an-
nouncement and see if your name wins!

Bacon and Cheese Smothered Garlic Chicken Serves 4 1 pound boneless skinless chicken breasts, sliced thin 3 Tablespoon olive oil 6 slices of thick cut bacon, cooked & chopped 4-6 slices of deli sliced Mozzarella cheese 1 cup heavy cream 1/2 teaspoon of black pepper Salt to taste 1/2 cup chicken broth
1 teaspoon garlic powder 1 teaspoon fresh parsley 3/4 cup freshly grated Parmesan cheese 1 cup fresh spinach, chopped 1/2 cup sun dried tomatoes
Instructions: 1. In a large skillet, cook your thick bacon, remove from pan,
drain reserving about one tablespoon of bacon fat. 2. Chop the bacon and set aside. 3. In that same large skillet add the olive oil to the one Tablespoon of bacon fat 4. Place your thin sliced pieces of chicken in the skillet and cook on a medium to high heat for roughly 4 minutes on each side OR until browned lightly on each side and cooked all the way through (NO PINK) 5. Remove fully cooked chicken from your skillet, and set aside. 6. In the same skillet, add in the heavy cream, chicken broth, garlic powder, parsley, salt, pepper and parmesan cheese. 7. Whisk over medi-um/high heat until ii begins to thicken. 8. Add in your spinach and sun-dried tomatoes and allow it to simmer until the spinach
starts to wilt. 9. Turn the heat on low 10. Next add in the chicken one at a time into the pan, lightly coat with the sauce and place the sliced mozzarella cheese over each chicken piece and sprinkled the cooked bacon. 11. Cover for about one minute until the cheese completely melts. 12. Serve over pasta of your choice.
