PROJECT OVERVIEW Intern: Jacob Lenz Major: Biological Systems Engineering School: University of Nebraska- Lincoln Company Background Tyson Fresh Meats, the country’s largest beef processor, was founded in 1935. This report was written for the Tyson plant in Lexington, NE. Lexington processes 4,500 head a day, 5 to 6 days per week and their protein products are sold worldwide. The plant was one of the first to ship their beef products to China in the summer of 2017, after a 14-year industry trade freeze. Project Description Tyson Fresh Meats is dedicated to becoming as sustainable as possible and recognizes the strain excess water and energy usage have on the environment. The company recently made an initiative to decrease their environmental footprint by reducing their total water usage 12% by 2020. Lexington has been on track to meet that goal, however further water conservation in the plant is required leading to a portion of this project’s focus. Tyson also wants to reduce their waste output which is the second focus of this investigation. The purpose of the pollution prevention (P2) opportunities are to allow Tyson Fresh Meats to reduce their water usage, product loss, and resource usage which in turn will provide financial benefits. Pollution Prevention Benefits Four pollution prevention opportunities are recommended in this report. Recommendations include converting current knife sterilizers to more water efficient models, replacing nozzles in the carcass wash cabinet to a water saving system, purchasing new low flow rate spray guns to replace the current nighttime cleaning nozzles, and converting the current blood collection system to a new alternative. The cost of implementation varies on each recommendation, however the potential savings are substantial and most recommendations have a payback period less than two years. Table 1 is a summary of all the benefits of implementing the proposed pollution reduction opportunities. Table 1.
