Dear Reader,

I wish you all a Happy 2015 and all the best in the “Year of the Sheep”. Actually, this statement tells you what this edition is all about. On one hand we have the Western way of thinking following the Gregorian calendar, while on the other we can use the Chinese way of thinking which follows the Lunar calendar. Now there comes a question: which of these calendars is better to use? The correct answer is none. There is no perfect calendar; both of them are constantly off (minutes, hours, even days). This is why both had to introduce leap months or leap years.

This simply tells us that no culture is perfect. We have to constantly learn from each other through the application of respect. I strongly believe in cultural diversity since we get to know the other person’s point of view and way of thinking. I embrace culture with my whole heart and I think it’s fascinating to be able to go around and consume different food, see people of different ethnic origins, and especially to converse with them and find out what it’s going on in their life. This is also the reason why I’m extremely happy to work for Les Roches, and in China. For your information, on our campus in Shanghai at Les Roches Jin Jiang we had last semester the most diversity in our 10 year history, 47 nationalities. In addition, as a Swiss citizen, I find it fascinating to work and live with people from a country as diverse as China. Talking with students and staff members, I found out that we are not much different and often have similar viewpoints no matter where we come from. I think parents around the world teach children very similar values such as: to work hard, respect each other, and be honest to just name a few. We all “smile in the same language”. Unfortunately, there are still a lot of conflicts and even wars going on around the world. These conflicts are caused by a minority of people who are simply intolerant to differences and narrow minded. The biggest problem we are facing is when such a person gets into a leadership position and teaches hate to his or her followers. I believe by working in an international environment such as Les Roches, and by teaching every day prevalent good values which are present in all the cultures, we can eliminate these differences and create peace in the world.

Let us work on taking on the leadership and the protection for “Culture and Diversity”.

The Hotelier Awards landed in China for the first time this year and Les Roches Jin Jiang International Hotel Management College (LRJJ) was a proud partner of the event with LRJJ’s Campus Director/Academic Dean, Dr. Sacha Stöcklin, acting as a member of the panel of judges.

The Hotelier Awards China, a ceremony, which honors the dedicated professionals of the hotel industry, made its debut on Thursday 11th December 2014 at The Ritz-Carlton Shanghai, Pudong. Over 300 hoteliers and industry professionals gathered

in the grand ballroom to await the announcement of this year’s award winners. The Awards are a celebration of brilliance – the pinnacle of appreciation of the people bringing life to a hotel – and our internationally renowned hotel management college, which forms the future generation of hospitality industry professionals, was honoured by being part of the selection process.

Dr. Stöcklin, together with the other members of the jury, was asked to choose amongst almost 300 applications received from over 100 properties representing 44 different brands. Winners for each of the 16 categories were decided through a two-round process and based on a combination of facts presented in the application, interviews, and testimonials.

“The hotel industry is the ultimate people business” - says Dr. Stöcklin – “Les Roches Jin Jiang, in its 10 years of existence, has transformed over 1,700 students into young professionals. We have contributed in realizing their dreams and ambitions to join the hotel and hospitality industry. From our teaching methodology, all the way to our professional appearance code, everything at LRJJ is reflective and conducive to the highest standards of excellence in the hospitality industry. Our transformative, rigorous and cutting-edge programs prepare our students to enter the hospitality career and be successful professionals. The judging panel was comprised of experts who hold a plethora of industry specific skills and knowledge. Aside from Dr. Stöcklin, judges were: Yona He - Regional Vice President, Asia Pacific & Oceania - Forbes Travel Guide, Alison Gilmore - Senior Exhibition Director – International Luxury Travel Market (ITLM), Jeannie Cho Lee – First Asian Master of Wine (MW), and Jingsheng Xu - The General Secretary of National Hotel Association/Vice Director of National Tourism Administration China.

The Hotelier Awards China 2014 is organized by Riviera Events, an international event management company founded in 2005 offering professional event planning services in China with offices in Beijing, Shanghai and Guangzhou. Riviera provides event planning services for the high-end hospitality industry, luxury brands as well as top 500 worldwide corporations.

As November starts, here comes the practical quarter a lot of us have been waiting for. In A quarter, we learned about the theoretical part of the industry such as Marketing Techniques, the Hospitality World, Rooms Divisions, Microsoft Office in computer class, and many more. Now, we will have fewer courses in class, and 2 days full of service in our college restaurants. We have 3 types of restaurants now: Lily Banquet Room, Jade Restaurant (Buffet style), and Flavours (a la carte cafe). To ensure maximum learning experience, we get to try each of the different styles of service. We are trained by Mr. Macario Amores, Mr. Eric Zhou.

Our study experience got more exciting as Mr. Nicola La Sala (one of the lecturers from Les Roches Bluche) came to LRJJ to give lectures on Service Techniques. We learnt new things apart from our regular class curriculum. We had extra trainings on flambé, carving, serving wine, and room service. He also taught us about banqueting and synchronized service.

But of course, we can't forget the back of house department that makes sure our food is safe and the utensils are cleaned. That's where food hygiene (Mr. Ajaya Shakya) and stewarding (Ms. Angela Cai) courses come along. We wash, rinse, and sanitize. These 3 procedures must be etched deeply into our head as we go through the course. There's also the practical part which is the other side of our service technique classes.

The Bar & Beverage class (Mr. Adam Frost) is also interesting, and you are sure to see beverages in a different way after studying about their origins and how they were made. It is not only theory, but also some tasting is on the list of our learning program.

F quarter, although it is more demanding physically, has been a great and fun experience in my first semester in LRJJ. For now, I wish you happy winter break!

Start the day off with a nice cup of freshly made espresso. Or why not have a break and drink chilled, homemade beer? Even more so, order the refreshing cocktail next Friday night. Beverages can be seen being served and consumed everywhere around the world at every time of the day, but do you know how to create these drinks from scratch? Come join the Bar and Beverage club where you can watch as vibrant mixtures develop into a finished cocktail, where the art of bartending combines two tastes to create a whole new experience for your palate, and where students come to learn and socialize.

A major part of the hospitality industry is dedicated to the Food and Beverage department. During the Bar and Beverage club, not only do students learn about the beverages that are commonly made in the industry, but they also take some time to relax and enjoy themselves around the company of their fellow classmates and Mr. Frost, who never ceases to make students feel welcomed with a big smile on his face. With a few drops of Tabasco, a wedge of zesty lime, or a few fragrant mint leaves, experience concocting your own beverages from the very beginning. Prae Sutthiparinyanon, an HAII student, states that she likes the club because she can choose ingredients that she prefers and create a drink that she can enjoy.

Students receive a hands on experience during the Bar and Beverage club. As Mr. Frost instructs the students on how to make certain drinks, he shares his passion and knowledge about a variety of spirits. So far this semester, participants have made cocktails including Bloody Mary, Mojito, Margarita, Moscow Mule, White Russian as well tasting two types of Tequilas. As each club session comes around, students are asked what beverage they would like to make, allowing them to add their preferences into the club meetings.

As the second quarter commenced it was great to see so many students continue to take part in the different clubs and activities at our college.

Regarding the club activities for this quarter, I’d like to tell you about one day when I was walking in the campus on my way to basketball club, and on the court next to us, I noticed students running around with sticks and playing Floorball! This was very surprising for me because I have never seen floor ball practiced here in China. I was even more surprised that they were students playing it inside our campus. Floorball is a sport similar to hockey, you play it indoors on normal concrete floor; however the equipment used to play is different. It was a great experience and I will always remember to be able to play with the local students and teach them a little bit about the sport.

The main event that took place this quarter was the Cultural day. I must say I was surprised with the great dedication and effort that all the students provided on the day of the event. Many of them stayed on campus even after classes, to prepare the food and all the decoration necessary to execute the event successfully. The day itself was very pleasant, the performances were very well organized and showed us yet again the great talent of our students. The show ended with the classic Faculty special performance which brought a huge smile to everyone’s faces.

Now my Internship in Les Roches Jin Jiang is coming to an end, it is a bittersweet feeling knowing I’m leaving this place. I say this because I will miss the time I had here; however at the same time I’m keen to see what the future holds for me. I have been here since HA1 and have gotten to know many new people, and I learnt to understand our differences.

I want to thank all the teachers and faculty members that really welcomed me, and supported me during my internship and studies in LRJJ.

I wish everyone good luck and hope all of you fulfil your dreams.

There are 169 countries in the world. Each one of them has its own culture and traditions. This article demonstrates how people greet each other from different countries, based on their culture and beliefs.

For our tutorial video, we chose different countries that have a special meaning behind their greetings. For instance, in the United Arab Emirates, they greet each other by saying Assalamu Aleikum, which in Arabic, means "peace be upon you". Also, in Islam, it means "may God’s protection and care be with you". Greetings hold a significant importance in Islam. By greeting each other properly, people strengthen their religion as well as the bonds. Also, in New Zealand, Maori people greet each other, by pressing their noses together. There are many more good examples of interesting greetings from all over the world.

For this article, we did a research on the materials we would need for our tutorial. At the end, we chose nineteen types of greetings from various countries that show a huge diversity of the world that we live in. Then, we shot a video, demonstrating different greetings.

Overall, we wanted to show the people our beautiful diversity in this vast world. As by enlightening ourselves, we will gain an insight of different cultures in different, yet beautiful ways.

On the 24th Dec, 2014. the event Culture Day took place, which meant all the students had the chance to feel different cultures and customs from different countries of all over the world. We had a really good time on that day.

Before the Culture Day started, we needed to prepare booths, decorations and food. So everyone was busy. I was in the Shanghai group. We prepared the decoration and the booth with my group members. We didn’t go back to dormitory until 7 pm.

I came back to the college at 8 am on 24th Dec. We checked everything, as everything had to be perfect. There were three people who went to the kitchen for cooking. Our main dish was fruit soup and deep-fried pork with

spicy sauce. These were traditional snacks in Shanghai. Many Chinese people liked our food very much. My friend and I went to other countries’ booths. We really ate a lot. I said “I ate the food from all over the world.”

The booths were located in two areas: the Lily Banquet Room & Jade Restaurant and room 237 on the second floor. All the booths were vivid, memorable and diverse.

However, one of my favorite booths was the Mexican booth. They really made an effort to represent their country. Everything in the booth was well organized and was very attractive. Moreover, their national food was deliciously cooked and varied. They also entertained the crowd with dances, singing and show kitchen. Their costumes were also very eye-catching and truly Mexican.

Another booth that was really nice was France. The first thing to catch my eye was the French flag colored Eiffel

tower in front of their booth. In addition they had really nice outfits consisting of blue berets and striped shirts. I also liked their dishes such as crepes with caramel, nuts and chocolate ice cream.

As for myself, I represented Russia. It took us a lot of time to create our booth. As we believe, it came out to be very nice. We used cardboard to create the Moscow Kremlin and a photo stand with traditional Russian outfits. We also created traditional elements of Russian culture out of cardboard- balalayka, valenki, samovar and brought traditional Russian Matroshka dolls.

We also prepared a questionnaire about our country and videos about main Russian cities as well as Russian music and dances.

In the afternoon, we watched many performances from different countries. They were really interesting, and I took a lot of pictures and videos.

We had a really unforgettable time that day, and we were all very excited. Too bad the Culture Day takes place only once a year!

On 24th December, Christmas Eve, some students from LRJJ had the opportunity to attend the Christmas party hosted by the students of the Shanghai Institute of Tourism (SIT), which is located on the grounds of SNU.

When we entered the party, the environment was as we were in a ball dance, in which some people even wore masks like they used to in the past. There were snacks available for the guests, as well as some cocktails made by in the local bar.

During the event there were various dance shows, which one with a different style such as Vals and Jazz. Also, we had the opportunity to interact with some students from the university and some of us were invited to dance with them. In general, it was a good experience and we all had fun.

The 2nd quarter of the autumn semester ended on January 16th, with a wonderful closing ceremony, celebrating 138 young professionals! Every such event is met with mixed feelings by the LRJJ students, the faculty and all the staff. It is an opportunity to look back and to reflect on every achievements and to make plans for what’s awaits us ahead.

The ceremony began with our Campus Director, Dr. Sacha Stöcklin’s inspirational speech. Furthermore, the VIP guest for this Closing Ceremony was a former Les Roches student and the current General Manager of the Azure Qiantang Hotel, Hangzhou, Mr. Andy Wang. Mr. Wang was the Runner Up for the Best GM Award in China, at the Hoteliers Awards, receiving the award from Dr. Stöcklin. Also two excellent HA3 students, Ms. Mariya Hromyh and Mr. Ali Dawood wanted to share from their student experience. From the teachers‘side Mr. Frank Feng was the one who spoke to the graduating students.

There could be no Closing Ceremony without performances from our talented college students. This time the audience was entertained by an Acapella and a Karaoke performances.

The day continued with the Awards Ceremony. Mr. Andy Wang presented certificates and free nights in the Azure Qiantang Hotel (Hangzhou) to the students who won the Marketing and Student Activities awards. Dr. Stöcklin awarded certificates and cash scholarships to the students and to Academic Leaders.

However, the students were not the only ones who received awards. Amongst the Practical and Academic lecturers the Most Popular Lecturers were selected by the students. And the winners were Mr. Eric Zhou and Mr. Adam Frost. A special award accompanied by a card signed by all the LRJJ staff were presented to the college’s Vice President, Mr. Xing Xing Zhu, upon his retirement.

After the certificates were given to all the graduating students and the emotional memory video was watched by everyone in the audience, the day concluded with a reception for all the guests. So, another quarter ended in LRJJ, and with it a wonderful year!

To all of you Ladies and Gentlemen, we wish you good luck and have fun in pursuing your dreams!
