Welcome to our tenth AFTER DARK at ALL SAINTS program!

What started out as simply a way to beat the winter blues and have some fun has grown into a much-

anticipated tradition on the Outer Banks! Still a bright spot in the middle of a dreary winter, it’s a

wonderful way to explore new and old interests in a relaxed and friendly atmosphere. We are excited to

offer classes on a wide variety of fascinating topics, open to everyone in our community.

As we round out a full decade of After Dark classes, we have once again invited church members, friends

and neighbors throughout our area to share their talents and passions by offering courses and

workshops to people of all ages. In this catalog you will find remarkable learning opportunities, taught

by fascinating and richly experienced individuals.

The dates for this event are January 28th through March 1st, and all classes are held at All Saints Church

in Southern Shores. While most cooking classes begin at 6:30 PM and most others start at 7:00 PM,

there are a few variances, which will be noted in writing at the specific class descriptions in this catalog.

Be sure to double check this for everything you sign up for!

All the net proceeds from this program will be used by All Saints Church to give back to the community

through our outreach programs. By the participation of students and teachers over the past nine years,

we have donated over $116,000 to agencies and organizations serving our community!

REGISTRATION PROCEDURES

COST Class registration is $23 per student (unchanged from last year). For young people under 18, the cost is $12 per student. Some classes have additional fees to cover necessary supplies. Details on individual classes are found in this catalog. No refunds will be offered unless the class is cancelled by the instructor.

GENERAL

The Registration Form is found near the end of this catalog. Please complete all fields in legible print and fill out a separate form for each student. Payment in full is required to secure your registration. Checks (made payable to All Saints Church, with “After Dark” in the memo) and cash are accepted. Credit cards can be accepted for in-person registrations only, with an additional processing fee charged. IN-PERSON REGISTRATION

Registration begins at All Saints Church on Saturday, January 5, 2019, from 9:00 AM to 12:00 Noon, in a designated space in the Education Wing. No registrations are accepted prior to that time. Doors will open at 8:00 AM to allow registrants a warm place to wait and time to complete their paperwork. Due to the large number of registrants and out of respect for each one’s time, individuals are asked to register for no more than 4 people. In-person registration will resume in the church office that afternoon, January 5, from 12:30 to 3:30 PM, then be available in the office beginning Monday, January 7 from 8:00 AM to 4:00 pm and continuing those same hours during most week days.

TELEPHONE REGISTRATION Phone registrations will be accepted beginning at 12:30 PM until 3:30 PM on Saturday, January 5, 2019. Messages left prior to that time will be handled at the end of the day on January 5, if time permits. While these are accepted, payment MUST be received within 48 hours or registration will be cancelled. Registration by phone will also be available starting on Monday, January 7 from 8:00 AM to 4:00 PM and continuing those same hours during most week days. MAIL REGISTRATION We will accept registration forms and checks mailed to the church beginning Monday, January 7. Registrations received earlier will be recorded at the end of that day, assuming class space is available. Registering by phone is highly recommended before mailing forms to ensure that your chosen classes are still open. EMAIL REGISTRATION Emailed registrations are accepted beginning Monday, January 7, where space is available, but payment must be received within 48 hours or the registration will be cancelled.

CLASS 1000 – NOW THAT'S GOOD GRAVY!

RICHARD BRUCE may be co-owner of Pigman's Bar-B-Que, but he also loves Italian food! Preparing it is a form of making love. Richard credits his grandmother with teaching him this magical art, as well as the cooking tip that “less is more.” From his family to yours, he'll show you how to prepare a simple and delicious Neapolitan style pasta sauce that has come to him via the Campania region of Italy. Join him for a fresh pasta dinner with meatballs and homemade sauce, or “gravy,” as the Italians would say. Class size is limited to 20 with an additional fee of $10. Thursday, Feb 7.

CLASS 1001 – TASTEFULLY FIT

WES STEPP, owner and Executive Chef of Red Sky restaurant in Duck for over 15 years, believes that gourmet food can be not only delicious, but healthy as well. What began for him as a childhood passion for cooking has evolved into a love affair with food. Join Chef Wes for a special evening where you'll learn to create gourmet food in a healthy style. CLASS 1002 – CREAMY CHOCOLATE PECAN CARAMEL TURTLES

Yummy! For over twenty years, GEOF FOUNTAIN has been fine-tuning the preparation of these delectable confections. He'll not only show you how to make them from scratch but, best of all, you’ll get to take some home with you. If you love to make homemade candy or just have a sweet tooth, this class is a must! CLASS 1003 – SALT BOX CAFE

Salt Box Cafe owners RANDOLPH and AMANDA SPRINKLE have over thirty-five years of experience on the restaurant scene. They opened their popular dining spot on Colington Road almost five years ago and continue to wow us with their tasty offerings. Their background includes the prestigious Culinary Institute of America in Hyde Park, NY, as well as restaurant experience in New Orleans, Pittsburgh, and South America. They invite you to a marvelous evening of fresh and innovative dishes. Class size is limited to 20 with an additional fee of $10. Tuesday, Feb 5.

CLASS 1004 – HOME BREWING

Over 1.2 million people in the US brew their own beer at home. This introductory course covers the steps needed to make your first home brewed beer. TOM WELCH has been an avid home brewer for over 25 years, winning medals in both regional and national competitions. In 2013 he helped establish the OBX Homebrewers Club. With the assistance of some of his fellow Club members, Tom will demonstrate how a beginner's homebrew kit is used and discuss how beer-making ingredients work together. CLASS 1005 – ARTISIAN BREAD MAKING

Who doesn't love homemade bread? A retired clergyman who loves cooking, AL DOUGLASS has been making bread since Ronald Reagan was governor of California. ANNE WICKSTROM formerly taught cooking classes for Williams-Sonoma in NYC and shares the same passion. They'll give you hands-on

instruction in making Artisan Bread using preferments (a fermentation starter) and levain (a sour dough starter). Once it’s baked, you’ll discover that crazy paradise in “a loaf of bread, a jug of wine, and thou.” Participants will be offered a starter of levain to take home. Class size is limited to 20. CLASS 1006 – A TASTE OF ASIA

Get your chopsticks ready; you're in for a treat! CAROLE and GARY KIMMEL developed their love of Asian cooking more than 40 years ago and their interest grew as they traveled to various Asian countries. Their After Dark classes are always quick sellouts and they've also taught classes at Stonewall Kitchen's Cooking School in Maine. This class will feature several dishes including a starter, entrees, and dessert. Since some dishes may include allergens such as peanuts or garlic, each participant will need to determine if consuming them would be problematic. Open to any skill level, the class size is limited to 15 participants with an additional fee of $15. Friday, Feb 15.

CLASS 1007 – EASY ASIAN, HANDS ON

A chance to cook right alongside the chefs! CAROLE and GARY KIMMEL will share their passion for Asian cooking as class participants assist in preparing dishes that can be easily incorporated into their own home cooking experience. Since some dishes may include allergens such as peanuts or garlic, potential students will need to determine if consuming them would be problematic. Attendees are encouraged to bring a cutting board and a good knife to use in class. Class size is limited to 10, with an additional fee of $15. Friday, Feb 8.

CLASS 1008 – ONCE IN A BLUE MOON THAI LETTUCE WRAPS

Join NATE ROBINSON, Executive Chef and Kitchen Manager of the popular Blue Moon Beach Grill in Nags Head, as he demonstrates the preparation of delicious Thai lettuce wraps. A native of Hatteras Island, he’s been cooking since the age of 12 and has a Culinary Arts degree from Johnson and Wales University. Add something deliciously different to your home repertoire! CLASS 1009 – NEW ENGLAND CLAM CHOWDER

Sous Chef JAMIE PAULS has spent more than 20 years honing his skills and penchant for classic American and Southern dishes. After spending time in such varied roles as catering chef, carpenter, and snowboard instructor, for the last three years he’s been Sous Chef at Blue Water Grill and Raw Bar in Manteo. In this class, he’ll share how to cook up his New England Clam Chowder, which has become a big customer favorite at the restaurant. Class size is limited to 20 with an additional fee of $10. CLASS 1010 – APPRECIATING CHAMPAGNE AND SPARKLING WINE

SIMON KAUFMANN is Beverage Manager at The Blue Point and a Level 3 Sommelier – no small achievement! In this course, he will focus on various sparkling wines – how they are produced, as well as regional differences found around the world. You’ll want to have a full dinner before this course, so you’re ready for some special tasting. Bet your nose is already tingling in anticipation of the bubbly! Ready to jump into the latest cooking craze and learn how the Instant Pot can revolutionize your cooking? Instructor AMANDA MCDANEL has an advanced degree in Child and Family Development and spent her early career developing state renowned programs for adults and children. Now an entrepreneur, writer, and mother of two, Amanda will show you how the Instant Pot can make cooking quicker, less expensive, and more delicious. CLASS 1012 – CHOCOLATE OYSTERS

Oh, my goodness, what a fascinating dessert! You'll experience a leap into chocolate loveliness with individual servings and perfect presentation. Gifted cook and baker ETTA LANUTI, who studied at the Peter Kumpf Cooking School in NYC, will show you how to be the envy of dessert cooks everywhere when you offer up these yummies as a treat. There just might be some finger licking in this class! Class size is limited to 20. Thursday, Feb 28.

CLASS 1013 – CEVICHE

Come learn the process behind the centuries old technique of preparing ceviche, a dish marinating fresh fish in lime juice. Chef MATT PAYNE of Bad Bean Baja Grill will share his own fresh, healthy and delicious spin on it. With over 20 years of experience, he is a Culinary Institute of America graduate and has been Executive Chef at Bad Bean since 2010. Matt's kudos include First Place finishes at Taste of the Beach, the March of Dimes Chefs Auction, and the Outer Banks Shrimp Cookoff. Class size is limited to 20. Wednesday, Feb 20.

CLASS 1014 – EASTER BREAD

A lovely Italian tradition formed in the shape of a wreath, this sweet citrus delight has colored eggs baked into its doughy folds. Here's another opportunity to take advantage of the baking expertise of our own ETTA LANUTI, whose gifted abilities in the kitchen have reached far beyond our Outer Banks shores. CLASS 1015 – PASTALICIOUS

The title alone should make your mouth water! You'll love Chef JOEY RUSSO's demonstration of the origination and making of pasta. As owner and executive chef of Russo's Bistro in Kitty Hawk, Joey has been cooking all his life and says he's still learning. He loves using recipes and techniques from his grandmother's kitchen and will treat you to a pasta dish with marinara and meatballs. Class size is limited to 20 with an additional fee of $5. CLASS 1016 – THE “CURE”

No silly, not a cure for illness, but a “cure” that brings culinary happiness! How about taking a vicarious trip to Scandinavia? You’ll learn to make gravlox, a dish from that region featuring salmon, liberally covered with a mixture of salt and sugar, then left to cure for several days. Chef JOEY RUSSO will demonstrate how to make this delectable dish using Scottish salmon. Class size is limited to 20 with an additional $5 fee. Tuesday, Feb 26.

Here's your opportunity to enjoy a fabulous evening in the kitchen with SCOTT FOSTER, Executive Chef and co-owner of Coastal Cravings and Coastal Cantina in Duck, as well as Coastal Provisions in Southern Shores. CLASS 1018 – GREEK MEZE

The inimitable KIKI KIOUSIS, who with her late husband established the Stack ‘Em High restaurants, teams up with her daughter-in-law DAWN KIOUSIS to explore the lively and delicious concept of Greek Meze (finger foods). Mediterranean cultures are saturated with traditions of small plates and complementary drinks, with spirited interactions likely to ensue. With a lifetime of experience loving people through food, Kiki will teach you to be a superb hostess and what to cook for the Meze table. Imagine spanakopita, stuffed grape leaves, and meatballs alongside dips of eggplant, chickpea and roe being demonstrated and devoured – Opa! Let the festivities begin. CLASS 1019 – GROOVY FINGER FOODS

ANGEL DOEBLER has a long history of restaurant work, from the back to the front of the house and in diverse settings. Her Outer Banks experience includes time at Ocean Boulevard, and now she serves on the management team at Coastal Cravings in Duck. Join in as she prepares various styles of appetizers and finger foods, pairing various items with tasty beverages. Class size is limited to 20 with an additional fee of $10. Monday, Feb 4.

CLASS 1020 – KILL DEVIL GRILL

Since 2002, BILL TUCKER has been providing outstanding lunches and dinners as the owner/operator of the extremely popular Kill Devil Grill. After demonstrating his version of Gumbo his first year at After Dark and his Sous Vide cooking technique last year, he’s sure to offer yet another delightful culinary surprise. Anyone who’s had the pleasure of dining at his restaurant knows his choice will be tastefully prepared and richly flavorful. Don't miss it! Class size is limited to 20 with an additional fee of $10. CLASS 1025 – WINE 101

Chef and Level II Sommelier DAN LEWIS of Coastal Provisions provides a wealth of information on wine. You’ll learn differences between grape varieties, regions, and values that make the world of wine an endless adventure. There will be information on how wine is made, regional characteristics, and food pairings. Best of all, you will taste while you discover! Plan on having dinner before class – it’s a “big agenda!” Class size is limited to 24 students with an additional fee of $10 for supplies. Tuesday, Feb 5.

CLASS 1026 – TASTING WINE – BLIND! KENNY HYMAN, owner and wine buyer for TRiO in Kitty Hawk and The Village Tavern in Duck, has planned a fun evening exploring wines from around the world – six of them, in fact, which class

CLASS 1027 – WHY DOES MY BEER TASTE LIKE THAT?

Not all beer tastes the same. In fact, some doesn’t even taste like, well, “beer” as many know it. Why is that? What are the factors that contribute (or don’t) to a beer’s flavor? Join JOHN MINNICH, proprietor and beermonger for TriO and The Village Tavern, for a lively, interactive session of tasting and discussion of what makes your beer taste the way it does. Class size is limited to 20 students and has an additional fee of $10. Wednesday, Feb 6.

CLASS 1028 – EASY ENTERTAINING WITH CHEESE A cheese board is always a simple yet delicious choice for entertaining. JENNIFER MINNICH, partner and cheese expert at TRiO and Village Tavern, will present foolproof ways to up your cheese game. You’ll discover unique accompaniments and easy dishes with cheese as the main ingredient. There will be lots to savor and recipes to take home! Wine will complement the tasting. Class size is limited to 16, with an additional fee of $10. Wednesday, Feb 13.

NATURE CLASS 1030 – KOKEDAMA MOSS BALLS Kokedama moss ball planters are unique in that plants grow in soil held together by moss and string! They’re easy to care for and perfect for small spaces and low light. Dare County Master Gardeners KEITH LILLY and CHRIS STADTHER will provide materials and instruction for you to create your own moss ball. Be sure to wear gardening clothes and bring work gloves! Class size is limited to 12 students and there is an additional fee of $10. Wednesday, Feb 6.

CLASS 1031 – INTRODUCTION TO BONSAI SANDY SANDERS, owner of Sanders Farms in Jarvisburg and President of the Albemarle Bonsai Society, will present a demonstration of the bonsai process from start to finish. Participants will then be able to ask any questions they have, not only about bonsai, but about other types of container-grown plants as well. Wednesday, Feb 27.

CLASS 1032 – OBXERISCAPING Xeriscaping may bring to mind a desert-like landscape filled with succulents and low water use plants. But the term can also mean reducing lawn areas, mulching plants to conserve water, and changing the way we water our plants. Dare County Master Gardeners KEITH LILLY and CHRIS STADTHER will provide advice on changing the way you garden, right here in our own coastal environment. Friday, Feb 22.

CLASS 1033 – SURF FISHING AND KNOT TYING 101

STU BALDWIN has been a recreational angler for most of his life, with over 48 years of active surf fishing and 35 in team competitions. This class will give the novice a big head start as Stu shares his knowledge of such things as proper equipment, rod and reel selection, basic knot tying, natural vs. artificial bait, even how to read a beach. Class size is limited to 18. Wednesday, Jan 30.

CLASS 1034 – ADVANCED SURF FISHING 202

As a lifelong surf fisher and Past President of the OBX Anglers Club, STU BALDWIN has a wealth of knowledge to share about his passion. This class is for fellow aficionados wanting to learn more advanced skills. Stu will cover selection of rod and reel plus bait, but also techniques for targeting Red Drum, Speckled Trout, Flounder, and Bluefish. Class size is limited to 18. Wednesday, Feb 13.

CLASS 1035 – CLIMATE CHANGE AND YOUR PLANTS Do you find the climate change debate confusing and unsettling? How might it impact the Outer Banks – or even more personally, your ability to grow the perfect tomato? RHANA PARIS, Outreach Coordinator at the NC Aquarium on Roanoke Island and Dare County Master Gardener, is always lively, positive, and interesting! In this class, she will lead a down-to-earth discussion and share what she has learned about how to prepare your plants for potential change. Tuesday, Jan 29.

CLASS 1036 – WHAT’S THAT GROWING IN MY YARD? Do you ever go for a walk and noticed a plant you’ve never seen before? Perhaps you wondered how it got there and what it is – not to mention how you could find out. Here’s an answer to your wandering wonderings! Come learn about unusual specimens in our area, bringing with you any mysterious plant finds or pictures taken of same. Can you stump the expert? MARY JANE SLESINSKI has degrees in Biology and Education, as well as a lifelong fascination with nature, especially unusual plants and animals living on the Outer Banks. Tuesday, Feb 26.

CLASS 1040 – HOW TO STAY OUT OF THE DOCTOR’S OFFICE

DR. CHRISTINA BOWEN has been described by patients as “the most amazing physician ever” for (among other things) her refreshingly positive and comprehensive approach to health care. Board certified in Family Medicine, Hospice & Palliative Care, and Lifestyle Medicine, she completed a Fellowship in Integrative Medicine at the University of Arizona. This class will open the way for making positive lifestyle modifications to empower you to live your most fulfilling life possible in all aspects –

CLASS 1041 – GENTLE MAT YOGA

FRED PIFER has taught Yoga classes in the mountains of North Carolina and Virginia before choosing to retire at the beach. He still maintains his own daily practice, while joyfully jumping at the occasional chance to teach. Now it’s your chance to jump at an opportunity! This class will guide you through flowing movement designed to increase balance, flexibility, and peacefulness. Dress comfortably, be

BETH HILL is a gifted painter who dedicated her career to teaching Art in the North Carolina Public School system. Have you always been intrigued by American Sign Language? This fun class will be led by ELIZABETH ALLEN and MELINDA GALLAGHER. Lizzy has over 40 years of experience working with the Deaf; Melinda, who is herself Deaf and grew up in a Deaf family, has taught Deaf children as well as ASL to hearing students. Together, they will provide insight into Deaf culture and the language of the Deaf community. Leave your voice behind and learn to express yourself with hands and facial expressions. You'll learn about fingerspelling, how to introduce yourself to a Deaf person, and some grammatical features of ASL. You’ll find it’s a beautiful language that may draw you toward continued study. CLASS 1081 – TRADITIONAL CHINESE VETERINARY MEDICINE

DR. JESSICA STUMPH has been practicing veterinary medicine for over a decade on the OBX. In 2018 she started her own practice, First Flight Mobile Veterinary Services. She is dedicated to providing an integrative medical approach to our local pets and became interested in traditional Chinese veterinary medicine after seeing shortfalls in the use of Western medicine alone. Combining the two traditions provides a more holistic approach to managing conditions ranging from arthritis to endocrine disorders. CLASS 1082 – HAND AND FOOT CARD GAME

Hand and Foot is a Canasta-type card game played by four people, two sets of partners. Players are dealt two stacks of cards (the “Hand” and the “Foot”). The “Hand” must be played before the “Foot” is used. The object is to get the most points by making canastas and using all the cards in one’s hand and foot. Play continues up to a score of 10,000 points, with the meld increasing with each round. Hand and Foot can be enjoyed by everyone from teen through adult, forming the basis for a great evening

It’s a wonderful way to enhance communication between you and a child not yet old enough to talk, reducing frustration levels and even facilitating spoken language. Instructor ELIZABETH ALLEN has worked in the field of Deaf Education and Sign Language Interpreting since 1975. Though passionate about all aspects of this work, she finds her greatest joy through interactions with children, both deaf or hard of hearing young clients and her own hearing grandchildren. All Saints’ Episcopal Church is located at 40 Pintail Trail, Southern Shores, NC. From Route

158, between milepost 1 and the Wright Memorial Bridge, turn onto South Dogwood Trail at

Kitty Hawk Elementary School. At the stop sign by the fire station, turn onto Pintail Trail. All
