Ingredients

200g wheatmeal or Granita biscuits1/4 cup ground almonds1 tablespoon caster sugar100g butter, melted4 eggs, lightly beaten395g can condensed milk2/3 cup (160ml) creamFinely grated rind and juice of 4 limes

Method

Preheat oven to 170°C. Line base of a 20cm springform tin with baking paper.

Place the biscuits in a food processor and process until they resemble fine crumbs. Add almonds, sugar and butter and process until combined. Spoon mixture into prepared pan and using the back of a spoon press firmly into the base and 3cm up sides of tin. Put pan in fridge for 30 minutes to chill.

Whisk eggs, milk, cream, lime rind and juice together in a large bowl until smooth. Pour over the biscuit base.

Place on tray and bake for 40-45 minutes or until set. Set aside for 15 minutes to cool slightly then place in the fridge to chill.

Place pie on a serving plate. Serve with extra lime slices and whipped cream.

Serves 6
