Start with cheese. In recent years, a handful of artisancheese makers have cropped up in rural Lewis County,

equidistant between Seattle and Portland. The creameries of theAdna/Boistfort Valley region (mainly off of Hwy. 6) include Black SheepCreamery;Rosecrest Farm;Twin Oaks; andWillapa Hills Farmstead. Each isdistinctive in the kinds of cheeses they create aswell as the animals – goat,sheepandcows–whosemilktheyuse.Callaheadandreserveatour,orstopinatBlackSheep’sonfarmshop,pickupsomeBlackSheepTommeandQuesodeOveja.

Slurp plump briny oysters raw on the half shell, or savor them in severalmouthwatering (and garlicky) preparations, at Jimella and Nanci’s KlipsanMarket and Café in Klipsan Beach.
