French toast is a popular choice of Hong Kong people for afternoon tea. The crispy French toast we have in Cha Chaan Tengs is usually cooked by deep frying. When making French toast at home, we can use shallow frying instead. Although the texture is a bit different, it is as delicious as its deep fried counterpart, yet with a reduced greasiness.
Ingredients: 2 slices loaf bread5 g butter1 egga little bit milk2 tsp peanut butter
Steps:
1. Whisk an egg in a bowl. Add a little bit of milk and cinnamon powder. Stir well. Pour the egg sauce into the plate.
2. Remove the crusts of two slices of bread. Spread peanut butter on one slice of the bread. Then place the other slice on top. Immerse the peanut butter sandwich thoroughly in the egg sauce.
3. Melt the butter in a frying pan over medium low heat. Shallow fry the egg sauce wrapped peanut butter sandwich over low heat until the both sides turn golden brown.

Coffee-Walnut Bread PuddingApart from French toast, there are many other desserts made by bread. Bread pudding is one example. This simple bread pudding recipe comes with a rich coffee flavor. You may also add a handful of raisins before baking. Or serve it with marmalade, cinnamon sugar or chocolate sauce for a more decadent outcome.
Ingredients:4 eggs6 - 8 slices loaf bread
Coffee milk:350 ml milk1 tbsp unsweetened instant coffee3 tsp custard powder25 g walnuts1/4 tsp cinnamon powder1/2 tsp vanilla essence5 tbsp sugar

2. Cook the milk to lukewarm and add in coffee powder, custard powder, sugar, cinnamon powder and vanilla essence. Stir well.
3. Cut each slice of bread into four (you may also remove the crust) and place them evenly in the casserole, set aside. Chop the walnuts.
4. Whisk the eggs in mixing bowl and then mix in coffee milk.
5. Pour the coffee-egg mixture evenly over the bread in the casserole. Spread the walnuts on the pudding. Before putting the pudding into the oven, sprinkle a little bit of sugar atop, so that it will appear golden yellow after baking.
6. Bake the pudding for 25 to 30 minutes. Ready to serves!

1. Thin and flat surfaceWhen shallow frying food, food that are thin with flat surface give the best result, as they are easier to flip and can be cooked evenly.
2. One side at a timeUsually, we will not flip the food to the other side until one side is done (turned golden brown), as the appearance of the resulting food would not be appealing if we keep flipping them back and forth.
