Rob Low e's Baked Snapper and Salad

Get up early and head out to your favourite spot . You need to be anchored up w ith a good berley t rail running out the back soon after sunrise.

For th is recipe you need to catch a nice chunky snapper that just fits in the baking d ish, (serves four) or cross ways w ith a b it of tail hanging over (serves six). If your spot is not firing head hom e via Fisherm an's Harbour and put out som e silver bait . It works wonders and w hen you get hom e you can st ill hold the fish up and say "look w hat I got ".

Met hod:

Keep it sim p le. Rub the fish light ly w ith but ter, put som e but ter in the cavity w ith som e lem on slices before w rapp ing the lot in foil. Place it in a hot oven and here I have to confess I'm not sure how long it takes because m y nose always tells m e w hen it 's ready.

While cooking m ake a light salad . Basic let tuce and tom ato w ith spring onion, red onion, any colour capsicum , st ringed celery, beet root , rad ish or w hatever you have handy.

I m ake a light d ressing, two parts oil to one part vinegar in a sm all jug and w hisk it w ith a fork to em ulsify just before serving.

Serving:

When you open the fish it should be m oist , steam ing and arom at ic. Rem ove the top fillet and serve skin dow n. Lift the tail to rem ove the fram e and serve the bot tom fillet . Add salad and hop in.
