NEVER STOP LEARNINGIn continuation with growth as a Chef, not only are demos use-ful but so are mentors and leaders in the profession. One of our esteemed friends and President to the Board of Trustees

of Culinary Institute LeNôtre®, Chef Charles Carroll, presented his new book The Recipe: a story of loss love and the ingredients of greatness soon to be converted into a movie! Chef Carroll gave a powerful and in-spiring account of his experience in the field sharing as much insight and advice he could fit within an hour.

“Learn the job BETTER than the person teaching you”, one of the many quotes and pieces of advice Chef Carroll gave our students. Fear usually puts many people at a stopping point because of the unknown but not Chef Carroll, he sees it as a challenge, an opportunity.

“Failure is that thing that helps to push you onto the path you’re supposed to be in”.

His presentation makes you want to pick his brain further but why not have it readily accessible. The Recipe will come in handy as you get to journey through his story along with learning key cooking concepts, cutting techniques, and other practical secrets of the kitchen. Knives are an essential tool needed by all chefs and chef-stu-dents which is why we provide demos to enrich all those who attend. On November 28th, Culinary Institute LeNôtre® hosted a Mercer Knife Skills Demo by Chef Chris Parker. Chef Chris has worked over 5 years with our partner Mercer and is eager to offer creative and innovative enrichment to the students and alumni. Thanks again for offering these educational opportuni-ties, we look forward to having him back!

A mystery basket challenge to win a scholarship? That’s right; an exciting new way to compete for a medal and a $2,000 schol-arship towards tuition at Culinary Institute LeNôtre® for the career they’ve dreamed about.

On January 26th, various imaginative high school students took on the Annual LeNôtre Chopped Tournament and worked as teams to create a dish that would set them apart from the oth-ers with the mystery ingredients. Its always an honor to have our Alumni be part of the judging for the contest. This year, we would like to say thank you for your participation to our Alum-ni Sherwin Laday, Beatrice McDaniel Watts, Alyssa LeBlanc and student Angelique Gonzalez.

It is our pleasure to congratulate all of the participants for doing an amazing job on their creations and plating- Foster High School, East Chambers High School, Texas City High School, La Porte High School, El Campo High School, Brazoswood High School, and Brazosport High School.

$250,000 RAISEDGASTON LENÔTRE SCHOLARSHIPIf you know about Culinary Institute LeNôtre you know the significance of Chef Gaston LeNôtre. We work to have his legend in gastronomy live on by supporting “student-chefs” strive for excellence and pass down the skills to them. One of the ways we continue to support their dreams is through scholarships.

The Gaston LeNôtre Scholarship is awarded to students to support high quality education in the Culinary Arts and assist students in securing a rewarding career in the Hospitality Industry. Each year, Marie LeNôtre, Founder and President of the Gaston LeNôtre Scholarship, rais-es funds by hosting the Champagne & Chocolat Gala. This year, on February 14, $250,000 was raised thanks to the amazing attendees and silent auction. Houston’s philanthropic leaders had an opportunity to wine, dine and dance the night away while enjoying an array of pastries. From chocolate, macarons, to a French Can-can show, both students and guests enjoyed this festive event.

Our students work hard and display the skills they have gained by making the array of pastries and chocolate showpieces displayed during the gala. Take a look at some pictures of their amazing work and event here.

The scholarships are awarded four times annually and we would like to congratulate this years winners: Amber Ashford, Jacob Adair-Glielmi, Angie Andrade, Andrew Hernandez, and Daniela Mocofan!

Next student celebration day: April 19

What better way to spread love around the in-stitute than with a Valentine’s Day themed Stu-dent Celebration! Bringing everyone together, on February 21st, students had the opportunity to enjoy a day filled with food, music, and good at-mosphere with their fellow instructors and staff.

There are two themed competitions which our students get to participate and win a prize. One is the Chocolate Showpiece and the other is the Celebration Cake Competition. We would like to thank all the participants and con-gratulate the winners for their amazing work.

CONGRATULATIONS JAQUELINE PANJOJ!On February 7th, students from CIL had the chance to attend Ben E Keith Food Show at the NRG Stadium. One of the exciting high-lights of the show was that our student Jaqueline Panjoj ranked 2nd in the Pastry Competition held at the show!

Jaqueline, currently enrolled in Level 3 “Master Chef”‘, created the winning dessert which she called Les 3 Amies Crepes mean-ing The 3 Friends in French. The people she was referring to were her two friends Maria Maldonado Garcia and San Juanita Garza who were with her for the competition. The three have been together for the past year and Jaqueline says,

“They were there through this whole journey at CIL! We have shared so many good memories together, like being awarded for Gaston Scholarship; they are my rock.”

Were did her recipe stem from? Jaqueline, born and raised in Guatemala, is very proud of her roots. She witnessed that peo-ple are less fortunate to have an education. Fighting for her dreams and showing them that nothing is impossible is one of her greatest motivations. However, Jaqueline’s biggest inspira-tion to pursue her dreams has always been her grandmother. She’s the person that taught her the recipe and put a lot of love
