I don’t care what the haters say,I love olives in a Martini. I evenlike olives in an Aperol Spritz (anunlikely sounding garnish you’llfind in the bàcari of Venice, wherespritzes are often served with a fatgreen olive and a slice of lemon). Acocktail made with olive oil, though?That sounds, quite frankly, vile.Or at least that’s what I thought
before I visited Cartizze, a new littlejewel box of a place in Mayfair witha back bar that dazzles with vintageglassware and silver art deco shakers.The house cocktail is an olive oil ginfizz, a drink so weird sounding itcould only be very good. Or very bad.Fortunately, it proved to be the
former, the olive oil providing a silkycounterpart to the sharp lemon,along with fruity green notes thatwere at once fresh and savoury. Thekind of clever, subtle twist that willhave people asking you what yoursecret ingredient is.The only thing I’ve changed in
this recipe is Cartizze’s mint garnish— I prefer fresh lemon verbena. Theright amount of olive oil will alsodepend on the fruitiness and heft ofthe one you’re using, so start withone teaspoon and go from there.

This new releaseis a beaut — almond, green melonand scented mandarin, laced witha whiff of soft, marshmallowysmoke. Great with soda.
20ml lemon juiceWhite of 1 small egg1-2 tsp extra-virgin olive oil
MethodDissolve the sugar in ½ an egg cupof water over a low heat. Turn offthe heat, add a handful of lemonverbena leaves and leave to infuseuntil cold. Strain and bottle (thismakes enough for two drinks).To make the cocktail, shake 15mlof the lemon verbena syrup withthe remaining ingredients and someice, then strain into an iced glass.Garnish with a sprig of verbena.
