Martha’s Wundoful Encrusted Pork Loin

INGREDIENTS5-6 pound porkloin roast2 tablespoons Wundoemus seasoning3 tablespoons Martha’s Mustard 1 cup fresh thyme leaves

Trim pork loin as desired. Mix the mustard and Wundoemus seasoning together in a bowl. Rub the pork loin on all sides with the Wundoemus/mustard mixture. Place the pork loin on a wire rack on a cookie sheet and sprinkle the top with the fresh thyme leaves. Roast the pork loin in a 350 degree oven for about 1-1½ hours until the internal temperature is 150 degrees. At that point, remove the loin from the oven and let it rest at room temperature for about 20 minutes. Slice and serve.

The Vondra name has long been associated with farming in southwestern Wisconsin. Brady Vondra is the fourth generation in his family to specialize in an ag-business field. With the launch of Vondra Ag Service in August, 2016, Vondra became the proud owner/operator of another family-owned business.

Ham BaguetteWith Cheese Butter

INGREDIENTS8 oz ham, thinly sliced4 tablespoons strawberry jam2 small baguette2 cups arugula, lightly packed2 lemons2 tablespoons extra virgin olive oil

CHEESE BUTTER1⁄2 cup unsalted butter, softened1⁄2 cup spreadable Brie cheese*To taste salt and pepper

For the Cheese Butter: bring both the cheese and butter to room temperature. Remove the rind from the cheese and whisk together with the butter until thoroughly incorporated. Season with salt and pepper. The Cheese Butter will hold in the refrigerator for up to a week.

To assemble the sandwich: Slice the baguettes in half and place in a broiler, cut side up and toast until golden brown. Lightly dress the arugula with lemon juice and olive oil and hold. Spread a couple tablespoons of the Cheese Butter evenly on the bottom half of the toasted baguettes and spread the strawberry jam evenly on the top half. Place half of the ham slices on the bottom half of the sandwich; top with the lightly dressed arugula and the top half of the baguette.

Taking a look ahead at dairy in 2017, we’re visiting today with Mark Stephenson, Center for Dairy Profitability, University of Wisconsin-Madison in the College of Agricultural and Life Sciences. Mark, what can dairy farmers expect in 2017?

Mark Stephenson: They can expect improvement. We hit the bottom in May of 2016 of our prices in this trough, I expected that through the end of 2016 we’d see improvement and on into 2017. I don’t think we are going to see anything dramatic until we get half way through the year. We started to see a flurry of buying on the world markets when prices were at their bottom because everybody wants to step in and take the opportunity to buy when prices are low. The next time we’ll see a flurry of activity is when people start to feel like stocks are getting tight and there’s not as much product available as they would like to have. So, that hasn’t started yet, I don’t think that will happen until we get to the second half of 2017.

Sevie Kenyon: Mark, what’s on the horizon for dairy farmers and dairy policy in the year ahead?

Mark Stephenson: We’ve already got discussion going on about what’s likely in the next farm bill. Normally, that would be a 2018 time period that we’d be looking at but we’re getting started a

good year early. Dairy farm policy I think is going to start to sound like a broken record. It only feels like a few years ago we were talking about farm bill and we’re already having discussions about the 2018 farm bill now. There’s even been some discussion about can we maybe get an early farm bill as in 2017, I think that’s not likely but it’s in for discussion right now.

Sevie Kenyon: And do you think there’s any concern about trade?

Mark Stephenson: Yes, there certainly are concerns about it the president-elect has made a lot of noises about trade pacts and from all things that I can see right now it sounds like TPP is dead and TPP would probably have been a mild positive for the dairy industry. The thing that’s a bigger consequence though is discussions about wanting to reopen NAFTA and NAFTA has been good for a U.S. dairy. So, I’m a little concerned about whether that could be a bad thing for us.

Sevie Kenyon: Mark, go ahead and sum up the year ahead a little bit if you can. Give me some bullet points.

Mark Stephenson: Improving prices maybe by the time we get toward the second half of the year, it’s going to feel like large improvement in prices so that’s something to look forward to.

Severe flooding last summer impacted much of western Wisconsin, home to a large amount of the state’s beef cattle. Rain events were so intense that Gov. Scott Walker declared 12 counties in the state agriculture disaster areas. Standing water impeded harvest and limited pasture usage for grazing operations.

This time of year, producers are feeding hay stores, some of which might have been impacted by last summer’s rain. Weather events like this can make large impacts on forage quality. One concern with the 2016 forage crop could be higher-than-normal ash content.

What is ash?Ash is the total mineral portion of the forage, grasses naturally

containing around 5% to 6% and alfalfa typically 6% to 8%. Ash can be further broken down into two categories, endogenous and exogenous. Endogenous minerals come from within the plant and are of important nutritional value to the cow, such as calcium, potassium, phosphorus, magnesium, etc. Exogenous minerals are those found on the outside of the plant, but provide no energy or protein value to the animal. This additional ash is mostly from soil contamination, specifically from the sand portion of the soil. This can be caused by soil erosion due to flooding, where forage was submerged for a period of time, or lodging of the forage stand from severe floods or winds, which increases soil contact. Harvesting equipment that uses air pressure to lift lodged forages or rake tines set too close to the ground could compound the contamination even further. Even if harvest goes smoothly, soil contamination can occur simply because of storage and feeding practices.

The reason exogenous ash is of concern is because it provides no nutritional value while taking up space in the diet for other more valuable nutrients to be consumed. On average, cattle consume roughly 2% of their body weight in dry matter daily. In expectant cows, this amount decreases as the fetus continues to grow and competes against the rumen for space in the cow’s body. If a large

percentage of that dry matter is exogenous mineral content, then they are less likely to be consuming valuable nutrients like protein or energy, which a growing fetus needs.

You might be thinking to yourself, “Well the forage is already harvested and stored for the season.” But you can still make informed feeding decisions. If you happen to have forage that is highly contaminated with soil from extreme rain events or harvesting practices, ideally you would feed that as a last resort if you can.

If you must feed already contaminated hay, the first step is to limit additional contamination during feeding. Keep hay off the ground and contained during feeding. Limit moving hay bales over and over again. The second step you can take is to test your hay. Forage analysis should be a part of your nutritional program if it isn’t already. This tool allows you to match the nutrition available with the nutritional needs.

You could feed contaminated hay to cows in early to mid-pregnancy, since they typically do well on lower-quality forages, and reserve higher-quality feeds for cows in late pregnancy or early lactation. High levels of ash won’t necessarily harm your cattle, but awareness is key to make proper management decisions.

Established in 1980 by John and Karen Steinhart, Steinhart Farm Service Inc. is located at 4116 Hwy 80 between Platteville and Cuba City, WI. In December, 2015, ownership of Steinhart Farm Service was passed to Tony and Jamie Steinhart. Tony is John’s nephew.

from them.” Steinhart’s suppliers have also changed with the times and

now offer TMR mixers and bigger spreaders for the farmers. “We used to sell 15 to 20 silo unloaders every year. Now we may sell one a year. We used to stock thousands of feet of barn cleaner chain. We stock less of that now too. Equipment has evolved to meet the ever-evolving needs of today’s farmer,” says Tony.

Increasing interest in preventing the development of antibiotic resistant bacteria and protecting the effectiveness of the antimicrobials that we currently have fueled the initiative behind the Veterinary Feed Directive (VFD) rule changes. The VFD regulation changes on medically important antimicrobials, previously available as over-the-counter medications came into effect January 2017. A VFD product is a drug that is approved by the FDA for use in livestock feed under veterinary supervision with a written VFD order. To be able to purchase feed with a VFD product in it, the farmer will now need to have a VFD order from their veterinarian. Now is the time to make sure that you have a valid veterinary-client-patient relationship (VCPR) so that you maintain access to any products that might be more regulated under the implementation of the VFD rule changes.

Being a swine farmer in Wisconsin can mean that it is a challenge to find veterinary care for your pigs. Often in Wisconsin, large animal practices are willing to serve 4-H, FFA, and youth clients on the show side of things, but finding a veterinarian that is willing to be a veterinarian of record for a veterinary-client-patient-relationship is a challenge for many swine farmers. There have been situations where a veterinarian is willing to be the veterinarian of record for someone’s beef animals, but not their pigs. There have been people in the northern part of the state that are having challenges connecting with a veterinarian that is even willing to look at pigs due to the sparse population.

To assist farmers in locating a veterinarian willing to work on swine, the UW-Extension Swine Team has created a map of clinics in

This map is constantly being updated, so if you know of a veterinary clinic that is practicing on swine, we would like to connect with them. While this map is not all-inclusive, it provides a place to start when searching for a swine veterinarian for your farm. Included with each point on the map is contact information for the clinic, which veterinarians work with swine, what services that

clinic offers for swine clients, and how far the veterinarians are willing to travel. If you have connected with a swine veterinarian because of this map being available, please let a member of the UW-Extension Swine Team know.

For veterinary clinics that would like to be included on the map, you may find the survey at https://goo.gl/WC91H3 or by contacting the Marquette County UW-Extension office to have a paper copy with return postage

mailed to you. You can include as much or as little information as you choose, but we will need at a minimum the veterinary service name, which veterinarian(s) are willing to work with swine, a phone number, and location of your practice for mapping purposes. This survey should only take about 15 minutes to complete, so please consider completing the survey to get your clinic on the map. By completing this survey, you and your clinic are agreeing to have your veterinary service location and contact information be mapped. You are also agreeing to allow us to share your responses to the other questions asked about services provided. If you choose to share your email address, it will be used only if the Swine Team has follow-up questions for you.
