This aromatic and herbal blend is the first recipe that it has been given to me by my chef and mentor Jean-Paul Grappe at ITHQ, Montreal's Culinary School in Canada, in 1999. This perfect dosage of herbs balances beautifully red meat, especially game meat and lamb, into marinade and simply sprinkled over before cooking in the oven, or on the grill. In 2009, my team and I undertook a mission to develop herbs and spices that would be “clean”, spices without severe additives and fillers, gluten free, GMO free, MSG free, Trans fat free, vegan friendly, Kosher, low in sodium and allergen free: peanuts, nuts, gluten (wheat, oat, barley, triticale, rye), eggs, soy, sesame seeds, milk products, fish, seafood, sulphite and mustard with the exception of our STEAK RUB that contains whole mustard seeds. Our herbs and spices do not contain: sulphate, cellu-lose and corn. Herbs, grains and spices are imported from around the world, from South of India, South of America, Eastern Europe, Southern Europe and Canada. It is import-ant to note that the grinding, the sieving and cleaning are done locally, here in Montreal Canada. These processes guarantee premium quality herbs and spices that generally meet higher standards than those required by the industry. To ensure low microbiologic counts, MCHEF prefers to treat spices by using irradiation or steam sterilization. All our blends are laboratory tested and verified to ensure they meet the highest standards of quality. Our certifications are HACCP, GFSI, SQF2 and Kosher. I am chef-owner and founder of MCHEF Inc. since 2009. I studied at the Institut d’Hôtellerie et de Tourisme du Quebec in Montreal Canada from 1999-2003 with Chef Jean-Paul Grappe whose teachings & inspiring guidance led me to discover the cuisines of the world.

I kicked off my career working in restaurant kitchens in Montreal, gradually rising to the position of Chef. Fifteen years ago, we were responding to customer demand for special menus with restrictions like salt free, gluten free nuts free, etc. In 2009, a grassroots business idea flourished into the new and innovative business of “Chef at Home”. At the request of loyal customers, I created gourmet-style meals consisting of all natural, allergen free, and low in sodium herbs and spice blends that would delight even the most sophisticated of palates. My search brought me to discover the infinite possibilities that spices and herbs can offer. Therefore, I made it a mission of my own to share with all a variety of unique and delectable ethnic blends that show-case the best cuisines of the world and bring awareness in “clean label” quality herbs and spices. The ethnicity of flavors is for me the most beautiful way of discovering the cultures of my environment.

Each flavor is different, and we are attentive to each and every taste of herbs and spices that you will enjoy while reducing salt intake, and foreign ingredients that are added to herbs and spices. Our objective is that all research and development must in the end improve food consumption for a healthier lifestyle.

What do you recommend for chicken?Our best seller is THE SOUTH OF FRANCE aromates, extremely tasty and delicious for all dishes. We personally love our MEDITERRANEAN, a lemon paradise with a crunch of coriander seeds. You can keep the MCHEF herbs and spice blends for a period of 18 months in its specialized resealable pouch at room temperature, away from heat and light. You can also freeze MCHEF herbs and spice blends up to 2 years. The specialized bag is resealable under vacuum package, which ensures a longer shelf life for herbs and spices. The package includes a foil layer to protect the herbs and spices from light, moisture and air.
