FRESH: We prefer fresh because it tastes so much better. Harold McGee, in On Food & Cooking, summarized our beliefs well: “Freezing is an extreme treatment that inevitably damages the tissue. It results in ‘drip’... the significance of the fluid loss is that the cooked meat will come out drier and tougher than it should.”

NATURAL: In our kitchen we only use natural products, nothing is cooked with pre-servatives or anything we can’t pronounce. Furthermore, all of our game, poultry, and meats have no added hormones, antibiotics or growth stimulants.

QUALITY: To ensure consistent size and texture, we work with farmers who process daily, in order to guarantee a quality eating experience. For this reason, we do not pur-chase from live markets or auctions, as the quality from those sources is far too variable.

HEALTH: Game birds and game meats are perfect for a low calorie, low cholesterol diet. Very lean and full of flavor, they provide a delicious addition to the modern diet.

For a bird to be certified organic it must meet strict growing conditions dictated by the USDA.  They need to befed exclusively certified organic grains (non GMO’s), without animal by-products, protein supplements, growthhormones, tranquilizers, or antibiotics.  Also the bird must drink pure spring water without chlorine or fluorine.

In order to be free-range the birds must be able to forage outdoors, have access to natural light and have at least l .5 sq ft of indoor space.  They must also be 8 weeks old, as opposed to 5 to 6 weeks.  The result is a healthier,leaner bird with a distinctively rich flavor. Be aware of terms such as “Amish,” “free-roaming” and “natural”; Terms such as these have no official definition thus giving producers the ability to use them on labels of massproduced chickens. Only “Free-Range” and “Organic” are approved USDA terms for production conditions.
