When not beating the streets to promote health and fitness, Amy enjoys walking Midtown’s Green Line with her daughter Emma. Her favorite part of magazine publishing is sharing success stories with readers.

Jenifer is a part-time writer and full-time mom to 4-year-old Madelyn. She enjoys yoga, mountain biking and swimming, and received her MA in Medical Anthropology from the University of Memphis. 300 cyclists from around the United States, along with a team from Denmark, participated in the annual JDRF Ride to Cure Diabetes in Death Valley, California. Temperatures during the brutal 102-mile bike ride reached a high of 107 degrees. “From mile 44 to 51, there was a constant climb without a break,” says cyclist Vic Butcher. The Memphis team was led by chef and diabetes sufferer, Karen Roth.

The hormone testosterone has garnered a record amount of attention in recent years. As the male population of the U.S. grows older, many men are fighting against the traditional signs of aging – less energy, lower sex drive, decreased muscle tone, and increased fat, especially around the abdomen – while pharmaceutical and supplement companies flood the airwaves with their solution to these problems … testosterone replacement therapy.

For those who have been diagnosed with low testosterone, testosterone replacement therapy can feel like going back in time, with some men reporting symptom relief in as little as 48 hours. A 1996 study in The Journal of Clinical Endocrinology and Metabolism showed that men diagnosed with clinically low testosterone who were then treated with testosterone replacement therapy tended to have more energy and felt an increased sense of well-being and friendliness, while exhibiting a decrease in feelings of anger, nervousness, and irritability.

However, a symptom of low testosterone that is often under-reported is depression, although numerous academic studies have shown a correlation between the two. One such study found that men diagnosed with low testosterone levels had a 400% higher chance of depression than a comparable group of men with normal testosterone levels!

Based on animal studies, scientists have hypothesized that higher testosterone levels may increase the number of serotonin receptors. Serotonin is widely accepted as a significant contributor to feelings of happiness and well-being. Because of the relationship between testosterone and serotonin receptors, it has been thought that ensuring men have adequate testosterone levels may be important when treating depression.

In addition to testosterone replacement therapy, lifestyle choices and supplements may help restore hormone levels in some men. If you are currently on anti-depression medication, you should continue taking your medication and seek advice from a medical professional if you believe low testosterone could be contributing to your condition. Low testosterone is a serious medical condition and should therefore be diagnosed and treated by medical professionals. A simple blood test can determine your current testosterone levels, but a full exam and bloodwork is needed to put together a treatment plan.

The human body is an incredible example of engineering. Witness the humble knee, so often taken for granted – until it has been injured. Each knee has two menisci, one located at its outer edge, one at the inner edge, each a rubbery, C-shaped disc that cushions your knee and balances the weight of your body. Unfortunately, meniscal tears happen on a regular basis. Whether surgery is warranted depends on the location of the tear, its extent, and the symptoms you are experiencing. The fact is that many meniscal tears do not require surgery.

A meniscal tear usually involves a twisting injury. This might happen during a high velocity contact situation, such as a basketball game, or a quick slip on a wet or icy surface. Other meniscal tears are degenerative in nature, developing slowly over time. These injuries are often associated with osteoarthritis.

Clinical keys to whether a meniscal tear requires surgery include persistent pain, joint

swelling that will not go away, and mechanical issues, such as an inability to fully straighten or bend the knee. If the meniscal tear prevents the knee from achieving full mobility, surgery is recommended.

Many, if not most, patients with a single meniscal tear not involving any other injuries (such as a ligament tear or fracture) can be managed successfully without surgery. A small meniscal tear may cause discomfort, but in these cases, strengthening exercises, bracing, rest, and anti-inflammatory medications are often beneficial. I tell patients that I suffered a meniscal tear that was treated non-surgically. These days, I’m back to running and never think about the injury I sustained 10 years ago.

If the injury can be managed and improved with physical therapy, bracing, anti-inflammatories, and a gradual return to activity, a trip to the operating room is probably not warranted. However, a knee that is persistently painful,

unstable, or constantly filled with excess fluid probably needs surgery.

Depression. So much shame and stigma attached to such a simple word. Many people suffer in silence rather than admit to others that they feel depressed. But how can you tell that you are suffering from clinical depression rather than dealing with the sadness that inevitably comes up in day-to-day life? Although it’s normal to feel discouraged when things don’t work out as planned, if you are able to pick yourself up, dust yourself off, and find happiness in your eventual success, then you are probably not depressed. Similarly, most people feel despair when they experience a profound loss, such as the end of a relationship or the death of a loved one; however, they are usually able to identify the specific event that is causing their feelings of sadness and address those emotions in a conventional manner.

Depression is different. Depression is not just a case of ‘the blues’ or disappointment over something that happened or didn’t happen. Clinical depression must be diagnosed by a trained medical professional using a checklist which includes pervasive feelings of negative emotions, sleeplessness or sleeping too much, changes in appetite (whether that means eating too much or too little,) tearfulness, irritability, agitation, and/or a loss of energy, focus, and concentration, all of which must have persisted over a period of time lasting at least two weeks.

And here’s another clue – with depression, there is often no tangible stressor that can be pointed to as causing a person’s negative emotional state. That’s because there usually is no single cause. Depression is brought on by a combination of an individual’s physiology, history, thoughts, and emotions. For those who have never been depressed, try to imagine the last time you had the flu – even your hair hurts, and you may feel like you’ll never return to normal. Depression can be likened to a case of the emotional flu, and like the flu, it can have serious – even fatal –

consequences, as depressed individuals are at an increased risk for self-harm and even suicide.

Depression is most commonly treated by the medical community in one (or a combination of) three ways:

MEDICATION: A study which measured how effective anti-depressant medications are in helping depressed patients found that only about 30% of patients responded significantly to their medications the first time they were prescribed, and with each change in medication, the reduction in their negative symptoms decreased. These medications also came with the risk of side effects, such as weight gain and a loss of sexual interest.

PSYCHOTHERAPY/COUNSELING: Therapy can be extremely helpful during times of discouragement and despair, but it becomes absolutely essential when one is in the grip of depression. Studies show that when psychotherapy or counseling is coupled with medication and/or other interventions, individuals tend to get better faster than

when they avail themselves of counseling or other interventions alone, and they tend to stay better longer.

ECT (ELECTROCONVULSIVE THERAPY): This therapy electrically stimulates the prefrontal cortex of the brain, and is usually reserved for the most intractable cases of depression, as the patient must undergo multiple treatments under general anesthesia, and remain in the hospital for a period of time following each treatment. Many patients often lose several months of short-term memory and are not able to function for some time afterwards. For these and other reasons it remains controversial in the psychiatric community.

After over 20 years of research in the field of depression, a breakthrough seems to have occurred, when the FDA approved a procedure known as TMS in 2008, which has since been featured on the Dr. Oz Show and is currently in use by the Mayo Clinic, Johns Hopkins University, and Emory University. TMS (Transcranial Magnetic Stimulation) therapy uses a highly focused magnetic field to stimulate nerve cells in the part of the brain that controls mood. In clinical trials, 50% of those patients who were not taking any medication for depression showed a significant decrease in their depressive symptoms, while a third experienced complete remission.

WHAT SCHOOL ACTIVITIES ARE YOU INVOLVED IN? Hip-hop (dance). We won Nationals in Orlando this year in February for the 12th win in a row. We won medals and jackets. I got a Nationals ring and Memphis Elite has the trophy.

WHAT GOT YOU INTERESTED IN HIP-HOP DANCING? HOW LONG HAVE YOU BEEN INVOLVED? I saw (the dance team) perform at Collierville Elementary when I was in the 5th grade. I have been involved for a year.

WHAT DOES BEING A TEAM PLAYER MEAN TO YOU? Working together, helping each other, and never, ever is every man for himself.

WHO IS YOUR MENTOR? Coach Carol Lloyd and my friend Carl that I danced with on the team last year. I have several people to thank for helping me with hip-hop: Coach Long, Frankie at Memphis Elite, Christopher Hanford, Coach Todd Gangwish, and Marshall Porter.

WHO IS YOUR ROLE MODEL? Michael Jackson. He is my favorite musician. I can do some Michael Jackson moves like the Moonwalk and stand on my toes.

WHAT CHALLENGES HAS HIP-HOP HELPED YOU TO OVERCOME? Stage fright! I have also been able to become stronger with my upper body; that helps with things like riding a bike. Hip-hop has helped with my self-confidence too.

HOW DOES YOUR FAMILY MOTIVATE YOU TO STAY ACTIVE? They give moral support and they have encouraged me to stay physically active with outdoor activities like swimming, and they have kept me in classes and camps for this.

WHO IS INVOLVED WITH THE TEAM? WHAT DOES YOUR SEASON LOOK LIKE? Carol Lloyd is our coach. We also have two teacher sponsors. Hip-hop is part of the pom squad. The girls go all year, the boys don’t, but I keep practicing during off-season.

WHAT IS YOUR FAVORITE THING ABOUT SCHOOL? Of course hip-hop, but I really like being in Art this year. My favorite class is Science. Favorite teachers ... I like them all, especially Ms. Chille and Ms. Davis.

WHAT DO YOU DO AFTER SCHOOL? Church youth group, fundraisers like car washes to raise money for animal rescue, and I have been working on getting my black belt in karate in the past. I am a purple belt black stripe. I take time off for hip-hop.

WHAT ARE YOUR PLANS FOR THIS YEAR AND BEYOND? This year I hope to make it back on the hip-hop team and win another national championship. In high school, I would like to pursue dancing but also do more art and get my black belt in karate. One day I hope to be a famous dancer or be a Lego designer – or both!

If you’ve driven down a major street in Memphis, chances are you’ve glimpsed Dr. Craig Esrael, President and CEO of First South Financial, on a billboard or transit ad. Maybe you’ve even seen him on TV or in your local paper. The strong, fit man you’ve noticed wasn’t always that way, however. “I was an obese child and young man,” he says. “I endured cruel teasing from my school mates and had really no fitness role model in or support from my family. However, by the time I became a teenager I knew I had to change. I didn’t know exactly how to do it, but I knew something had to give or I would be stuck and miserable for the rest of my life.”

Craig started to run and lift weights; to do push-ups and sit-ups along with watching his diet. He lost 65 pounds one summer and never looked back. “Once I started, I knew I couldn’t stop. Even though I had to work many jobs in college – I was 100% responsible for all of those expenses – I knew that I had to keep up my rigorous exercise schedule.”

After completing college in 1983, Craig started work for First South Financial while continuing his education, earning a Masters and then a Doctoral degree. While this would be a grueling experience for any person, it was even more so for him, as First South wasn’t the solid financial institution it is today. Not only was it in deep financial trouble and close to collapse, but morale among its employees was dismal. Craig feels that had he not developed such strong convictions about working out, both his life and the organization’s might have taken a very different turn. “I stayed committed to my physical fitness, finding that it was a great way to deal with the pressures of trying to save a struggling company, completing my degree programs, and raising a family. I applied my disciplined approach to my personal life and to my organization. I had to make sure that First South Financial cut the unhealthy habits and practices and replaced them with those that would build a foundation for success. It was, in some ways, like the year I committed to a healthy lifestyle all over again. I knew it was not going to be easy, but I also knew that I could do it. This was not beyond me.”

His approach paid off. Craig was able to handle the monumental task of turning First South Financial around while completing his education. The organization was gaining, but he wasn’t, and he managed to keep fit through the challenges he faced. Slowly but

surely, the organization stabilized and started to grow, allowing things to settle down for the busy CEO.

The dedication and discipline that started all those years ago still serves him well today. “I get up every morning around 4:00 a.m. to run/walk about four miles and then complete a series of push-ups and sit-ups. As I go through my work day, I make time for movement – whether it’s taking the stairs, walking around while on the phone or pulling out my push-up bars or weights for some quick reps. Staying physically active during the day also keeps me more mentally alert. And this also helps with managing the stress that comes along with an

upper management position. Both my fitness practice and my yoga practice ensure that my stress level stays as low as possible. Yoga helps me to not only increase my flexibility but also center myself and release the day’s tensions and frustrations. My morning routine puts me in a great frame of mind with the right energy to tackle the hectic schedule each day brings.”

According to independent agencies, First South Financial is rated one of the strongest and safest financial institutions in the entire country. And now that the organization is monetarily fit, its employees have turned their attention to physical fitness, with the help of their boss. “As the CEO, I have to set the example and watch out for the health of not only the company but also the employees. I share my passion for fitness and balance just as I do my passion for First South Financial,” Craig says.

Healthier employees handle stress better, miss less work, and reduce insurance premiums for both the company and its staff. First South Financial promotes healthy habits by providing exercise equipment at several locations, ensuring that there are healthy foods at company meetings, encouraging employees to exercise together, and recently adding a yoga class for managers. In the latter part of this year, a company-wide initiative was launched to help all employees develop or deepen healthy habits when- and wherever they can, so it’s not uncommon to see tellers doing stretches or wall-sits while other staff members are doing squats or sit-ups, a strategy that Craig shares. “Since my regimens are not contingent upon weather, location, equipment, or

other people, I can do them anywhere and at any time, which really comes in handy when trying to meet the demands of a CEO’s schedule, and mine involves a lot of traveling. I may not be able to pack weights in my suitcase, but a jump rope and push-up bars fit just fine. I attend many meetings and conferences each year, so there’s a lot of food, cocktail receptions, multiple course dinners, and the like. I watch my portions and my intake to ensure that I don’t overindulge. Eating and drinking slowly is vital to this strategy.”

When asked if he had any advice for other managers who want to start or maintain a fitness routine, Craig emphasized, “Three words: commitment, dedication, discipline. People in my position generally live stressful, sedentary, and chaotic lives. Meetings and travel are part of the job description, and that can play havoc with a fitness routine – if you let it.” He continued, “The drive and devotion you show in your professional life must also apply to your personal life. And just as we push our staff and our company to be better, we have to push ourselves too. Trying to beat your best 5K time or increasing the number of reps you can do in one session is a great way to keep any fitness routine fresh and competitive.”

Craig Esrael’s story, both personally and professionally, definitely serves as a testament to commitment and perseverance on a wide range of levels. Healthy CEO = healthy company = healthy employees. And you can certainly bank on the fact that it will stay that way.

Saturday morning, 5 a.m. You drag yourself out of bed, lace up your running shoes and set out on a long run by yourself before the sun even rises. There’s nothing but you and the pavement in front of you. It’s peaceful and calming for a while, but several miles in, you wish you had someone to talk to. Someone to push you when you want to stop, or someone to motivate you to keep up the pace.

Unlike team sports, running, in large part, is an individual endeavor. While finishing a race may ultimately come down to personal performance, running with a group can be one of the most beneficial training tools you can give to yourself. Here’s why:

ACCOUNTABILITY. “It’s cold.” “It’s hot.” “I’m tired.” “I want to sleep in.” You can come up with a million reasons to skip a run. But if you have a group of people waiting for you, your odds of climbing out from under the covers greatly increase. Likewise, if you have a coach who expects to see your training log, you are more likely to get in your planned workouts.

ADVICE, ENCOURAGEMENT AND SUPPORT. Have a question about something? Ask your running group or coach. Chances are you’ll find your answer. These same people can help encourage you to push your pace, distance, or whatever it may be to become a better runner.

FRIENDLY COMPETITION. A group setting can provide a little friendly competition to run harder than usual.

PASSING THE TIME MORE QUICKLY. Talking to your running buddies while pounding out a long run helps the time pass by more swiftly, and having a group with you makes the distance seem less intimidating.

SETTING AND ACHIEVING REALISTIC GOALS. Running with a training group gives you access to a running coach who can help you to set goals, develop plans, and get you on the right path to crossing the finish line. Whether it’s your first 5K or your 10th marathon, a coach can create the right plan for you to get on track to meeting your goal.

SAFETY IN NUMBERS. Whether you’re running before the sun rises or in the middle of the afternoon, there’s always safety in numbers.

There are numerous groups around town to run with, from fun run groups to training groups led by running coaches. Many beginners benefit from a structured training program led by a coach to help them avoid injury and guide them to their first finish line with confidence. More experienced runners may choose to join a fun run group or track workout group, just to have some company or

to meet other runners. Then there are the runners who enjoy a group setting simply for the accountability factor involved. Each type of running group has its own unique benefits and each is beneficial to different types of runners, so get together and get moving!

The Trager Approach for AthletesEvery athlete’s main concern is improving performance without creating injury, and many have discovered that using the Trager Approach for freedom of movement, quicker reactions, and shorter recovery times helps them to accomplish just this. This method is unique in that it combines one-on-one bodywork sessions on a massage table with off-the-table guided movement. The Trager practitioner moves the body in gentle, repetitive motions to create new, more efficient motor pathways in the brain. Working off of the table using a technique called “Mentastics,” the athlete then learns to recall the ease felt in the table work, allowing freer, more functional movement pattern to be reinforced.

Adding Trager to her training regimen has been a plus for Melissa Hurt, a Memphis Roller Derby skater since 2006. “It has taught me to be a more effective athlete during my career in roller derby,” she says. “I learned the value of knowing when to be fluid and relaxed in high stress situations. The healing times after my injuries are cut drastically as well. Gaining an understanding of the way my body works has allowed me to let go of the fear of injury and be free to take risks during bouts to benefit my team.”

Runners are also discovering that the Trager Approach is beneficial in dealing with repetitive use injury. John Pearcy, President and Founder of the Greater Austin Track Club, claims that the advantage of Trager’s method is that it allows the athlete to stay limber and loose, and therefore avoid muscle damage.

Memphis choreographer and dancer Louisa Koeppel’s work with Project: Motion Modern Dance Collective would challenge any athlete’s endurance and stamina. “The Trager work I have experienced leads to more long-lasting, effortless movement,” she says. “It has helped me become aware of the ease of movement available to me in my body, and has eased pain and stiffness.”

The Trager Approach is also making itself known among doctors for the ways it benefits the competitive athlete as well as the weekend hobbyist. According to preventative medicine specialist Dr. Andrew Weil, “It helps facilitate the nervous system’s communication with the muscles.” And when the body and mind are working together effectively, strong, balanced, and light movement becomes possible.

FAVORITE FITNESS ACCOMPLISHMENT: Completing the Ironman Florida on November 3rd, 2012. It was the realization of a long journey back to fitness and health.

MOTIVATION: As a former competitive athlete in high school and college, I was very dedicated and disciplined in the efforts to be healthy and to train my body. Life got in the way and I had an extended period of inactivity and unhealthy habits. We started a family and have two daughters and I was sick and tired of being sick and tired. I knew I needed to be a better role model for them and live a healthy, active lifestyle.

OBSTACLE COURSE: I gained about a hundred pounds, maybe a little more from my college soccer days. I finally decided that it was important to spend time working on my health and fitness again. I am now within about eight pounds of my college soccer weight (over 20 years ago.)

PRE-RACE RITUAL: I always get a haircut the week before a big race. It makes me feel faster!

BEST EATS: Cafe 1912 – my wife and I love to split the Nicoise Salad with seared tuna, the pizza with caramelized onions & mushrooms, and a bottle of red wine.

WW GEAR: I race in my Brooks Racer ST, train in my Brooks Adrenaline GTS, and I ride my Kestrel Talon SL triathlon bike.

BUCKET LIST: I would like to be able to say that I’ve climbed all 54 of the 14,000 foot mountains in Colorado (I’ve already summated nine of them;) and I would love to participate in the historic trail race, The Dipsea Race in Northern California.

ONE THING PEOPLE DON’T KNOW ABOUT YOU: I just taught myself how to make sushi and surprisingly it’s really good. Maybe not as good as Sakura, but close.

COOLEST THING ABOUT LIVING IN MEMPHIS: It is a great place to raise a family and it is a small city with all of the big city amenities. Memphis is rapidly becoming a much more health-conscious city. It is very exciting to see the city grow in this way.

It’s Time to Get Freekeh!Tired of eating the same old starchy carbs for dinner? Can’t stand the thought of more pasta, rice, or potatoes? Well then, get ready to try the hottest superfood to hit the market in a long time – it’s time to get freekeh!

Legend has it that in 2300 B.C., when an Eastern Mediterranean nation anticipated an invasion, they prepared themselves by picking the green, immature heads of their wheat, and storing it for survival. But the city was set on fire by invaders and everything was burned, including their crop of wheat. Desperate for nourishment, they tried to salvage their harvest, and prepared what was left. They found that the little green grains were not only edible, but delicious! They named the new food freekeh (pronounced free-kah) which means the “rubbed one.”

Freekeh is not actually a variety of grain; it is, in fact, the name of the unique process used to obtain it. Though the Eastern Mediterranean people developed the process accidentally, modern freekeh is produced in a similar fashion – no sense in reinventing deliciousness! Wheat is harvested while soft and green, then roasted, dried, threshed, and rubbed to create a uniform texture and color. In harvesting the wheat early, the grain’s peak taste and nutrition is retained, and because of this freekeh is a nutritional powerhouse loaded with fiber, protein, calcium, iron, and potassium.

Since freekeh is most typically derived from wheat (although any grain could undergo the same process,) it is usually not recommended for those living a gluten-free lifestyle. However, there is speculation that the early harvesting and roasting process actually denatures the gluten, which might make it a safe option for those with an intolerance to gluten, so stay tuned!

Although freekeh may be relatively new to the United States, it has been enjoyed for centuries by the people of Lebanon, Jordan, Syria, and Egypt. It has a unique, earthy flavor, an unmistakably smoky taste, and a chewy, nutty texture. Prepared like rice, freekeh makes a great substitute for couscous, barley, bulgur, or cracked wheat, and is a flavorful addition to pilafs, risottos, and stews.

You can find freekeh in the bulk bins at Whole Foods, and through online sources, such as Amazon. Freekeh comes in cracked and whole grain varieties, but don’t worry, you can’t go wrong with either one, especially since a small bag sells for under $10.

So, move over quinoa (although I promise I will love you forever,) and step aside brown rice (although my sushi rolls are meaningless without you,) and get ready to try something fresh and healthy this holiday season. It’s unique, it’s good for you, it tastes great, and it’s only a matter of time until this freek-ehing delicious grain hits the big time!

Savory Freekeh PilafThe warm aroma of this easy side dish will bring all of the rich smells of the season right into your kitchen. Serve alongside turkey, pork, or an herb-rubbed rotisserie chicken.

q 2 cups freekeh (cracked or whole grain)

q 1 tsp of olive oil

q 2 cloves of garlic, crushed

q 1 small red onion

q 1/8 tsp cardamom

q 1 cinnamon stick

q 5 whole cloves

q 3 Tbsp coriander seed

q 10 prunes, halved

q 10-15 dried apricots, halved

q 5 cups chicken or vegetable broth (use stock if you like a stronger taste)

q 1/2 cup sliced almonds, toasted

q Salt & pepper

Heat oil, and add garlic and onions. Sauté until translucent. Add cardamom, cinnamon stick, cloves, and coriander. Fry gently for 2 minutes, then remove whole cloves from pot. (The cinnamon stick can stay in, and be removed just before the meal is served.) Add freekeh, broth, prunes, and apricots, and bring to a boil. Cover with a tight fitting lid, and simmer on low for 20-25 minutes, or until freekeh is tender. Season with salt and pepper, and top with almonds.

Stats for 1 cup serving: 280 calories, 60 grams carbohydrates, 1 gram of fat, 10 grams of protein.

The pumpkins are in, the tree is up, the woolies and the thermals are out of the closet. You’re excited about the changing winter weather, but your body may not have adjusted to the chill quite yet, so we have just the thing to cure what ails you – a spicy, hearty, and aromatic Moroccan-style vegetable stew of satisfyingly rich chickpeas, sweet tomatoes, potatoes, vitamin-rich kale, tender carrots, and onion. The best part? Only one pan to clean! It’s like a Snuggie™ for your tummy.

Because it’s rich in protein and fiber from the chickpeas (also known as garbanzo beans,) even a real carnivore won’t miss the meat in this thick, bone-warming stew. Adjust the jalapeño according to your family’s palate – a whole jalapeño for the hot-sauce lover, or a small bit for the average diner. This stew tastes great over white or brown rice, barley, or quinoa. Let the sour cream melt over the beautiful amber sauce created by the tomatoes and turmeric, and feel the crunch and verdant brightness of the cilantro at the finish. To make this dish vegan, simply omit the sour cream. Using a cast-iron Dutch oven for this dish will allow the acidity of the tomatoes to leach some of that precious iron into the stew, which will boost your circulation in cold weather.

Serve with either a sweet wine to offset the heat of this dish, or a spicy wine to complement it. Rieslings or Chenin Blancs balance well with hot dishes, but avoid anything “oaky” or pungent with tannins. A red Cote-du-Rhone or Zinfandel would also mellow the tongue while retaining its own warmth and personality.

One-Dish Wonders: Chickpea Stew

One-Dish Moroccan Chickpea Stew q 2 tsp light olive oil

q 1 cup diced yellow onion (about 1 medium)

q 1 cup diced carrot (about 1 large)

q 2 garlic cloves, minced

q 1/2 to 1 small jalapeño pepper with seeds removed, minced

q 1/2 bunch kale, stems removed, cleaned, dried, in bite-sized pieces

q 1 1/2 cups cubed peeled Yukon Gold potato (about 1 large)

q 1 tsp chili powder

q 1/2 tsp ground turmeric

q 2 tsp ground cumin

q 1/8 tsp salt

q 1 large (28-ounce) can diced tomatoes, with juice

q 1 15 1/2-ounce can chickpeas (garbanzo beans), rinsed and drained

q 2 cups low-sodium vegetable broth

q 1 cup light sour cream, for garnish (optional)

q 1 bunch cilantro, roughly chopped

Heat olive oil in a Dutch oven over medium-high heat. Add onion, kale, carrot, and garlic to pot; sauté 6 minutes or until kale and onions are tender. Add jalapeño and stir for 1-2 minutes. Stir in broth, and then add the potatoes, chili powder, turmeric, cumin, salt, tomatoes, and chickpeas. Bring to a boil. Cover, reduce heat, and simmer for 15 minutes, until potatoes are tender. Serve over the grain of your choice, and dress with a generous dollop of sour cream and sprinkling of cilantro.
