Agave is a succulent plant that belongs to the Agavaceae family and is native to Mexcio. There are many kinds of Agave throughout Mexico, but the most common place to find this plant is in Jalisco, Mexico. There are over 300 species of Agave

plants, of which the Blue Agave is the only one allowed for use in tequila production. The Blue Agave plant requires 7-12 years to mature. Once it is matured, the sharp and rigid leaves are taken off from the heart of the Agave. The heart

is called the Piña (pineapple) and is cut and cooked. During the cooking process, the piña releases what is called the “honey water” (agua miel) and that is when the tequila process begins.
