Food Diversity is the essential characteristic of Mexican cuisine. Almost every Mexican
state has its own recipes and culinary traditions. Of course this diversity is more noticeable when seen regionally and rich cuisine by state. There are certainculinary creations that emerged locally for its quality and widespreadacceptance have become emblematic of Mexican cuisine in general. This is thecase of dishes such as cochinita pibil (Yucatan), the Oaxacan mole, mole poblano, pozole (identified with Sinaloa, Jalisco and Guerrero), goat (Coahuila and neoleonense), dogfish hearty bread, the Churipu and corundas Purepecha(Michoacan), the diminutive of Sinaloa, Sonora and Chihuahua and many otherfoods, in a long list of honor of Mexican cuisine. While some excel, indeed, for itswell-earned reputation and dissemination, these regional food traditions are ranked according to priority only in terms of personal taste.

The Templo Mayor Museum is located next to the Plaza de la Constitution. Archaeological exhibits of great historical value found in the excavations thatwere made in the area as part of the discovery of the remains of the ancientcity of Tenochtitlan

Traditions and festivals
Since pre-Columbian times, religious festivities have been a fundamental part of Mexican
life. Catholicism found here a fertile land and an interesting syncretism, sometimes
impossible to understand, became the quintessential Mexican identity.
You will be surprised to find, close to the dates of carnival, very conservative people
dancing to ask favors from the gods prehispanic hidden behind Catholic saints. If you want
to explore this kind of mystical traditions, Tlaxcala and Tepoztlan are essential destinations
on your visit to Mexico. Looking for something more liberal? Chiapa de Corzo holds a
parade where men dressed as women (chuntas) make their prejudices aside and laugh at
themselves ... but only for a day, do not forget, the provincial Mexico retains after all very
conservative in nature.
Typical dances
Mexican traditional dances have different origins. There are still pre-Hispanic dances as the New Fire Dance, The Dance of the Deer and TheFeather Dance, which became to be a representation of the conquest of Mexico. Some were imported from Europe, such as the polka bicycle and Dance Ribbons. Other originated by rebellion against the conquerors, as TheDance of Knives and Los Chinelos. La Bamba, one of the most popular, has Spanish and African influences.
