CookingWhat’s

COLCANNON -IRISH MASH

POTATO*4 russet potatoes, peeledand cut into large chunks

*Salt*5-6 Tbsp unsalted butter*3 lightly packed cups ofchopped kale, cabbage

or chard*3 green onions

(including the green oniongreens), minced(about 1/2 cup)

*1 cup milk or cream

*Peel and cut potatoesin chunks. Add 2tablespoons of salt, andbring to a boil. Boil untilthe potatoes are forktender. Drain.

*Return pot to the stoveover medium-high heat.Melt butter until it’s hot,add the greens. Cook 3-4minutes until wilted andsome of their water is out.Add green onions andcook 1 minute more.

*Add milk\cream, mixwell, and add thepotatoes. Reduce heat tomedium. Mash potatoes,mix well with the greens.Add salt to taste, serve hot,with a knob of butter inthe center.
