Middlebury College Dining Services Overview
Middlebury College Dining Services is responsible and operates all of the Middlebury College food outlets both on and off campus. The operation is divided into two groups; Board (All you care to eat outlets) and Retail (A la Carte locations which require cash or credit for payment.) Below is a summary of each.
Board
All on campus students are required to pay for the board plan. This allows students to eat all of their meals in one of three (Proctor, Ross and Atwater) all you care to eat facilities. At the present time, meal plans or checkers are not utilized, so students can come and go as they please. Currently, 2,456 students are on the board plan.
Proctor Dining Hall – The largest facility seats over 500 customers. This unit is open for 3 meals a day, 7 days a week or 21 meals a week. It also, houses the professional bakers that produce all the dessert items for the entire campus. Proctor is operated by 2 Managers and currently has 32 full-time employees. Proctor is the busiest dining hall with meal counts over 1,000 for lunch and dinner.
Ross Dining Hall – The second largest facility with 350 seats. This unit is open for 3 meals a day Monday – Friday and Lunch and Dinner on Saturday and Sunday or 19 meals per week. Ross is also operated by 2 Managers and currently has 28 full-time employees. Ross averages over 800 customers for lunch and 1,200 for dinner.
Atwater Dining Hall - The smallest board dining facility with 250 seats. This unit is only open for breakfast and lunch Monday – Friday or 10 meals per week. Atwater also houses the catering team as most catered meals are produced in this unit. Atwater is operated by 2 Managers and currently has 25 full-time employees.
Dining Laundry - Dining Services oversees the on campus laundry department as well. This unit launders all dining uniforms, cleaning cloths, and table cloths as well as bed linen for all of our summer language programs including the Bread Loaf campus. The laundry department has 3 full-time employees.
Bread Loaf – During the late spring and entire summer season the Bread Loaf Inn Dining room is open and serves the various programs in session at the Bread Loaf campus. Typically, 200 – 300 customers are served per meal with 7 day per week service during the Summer BL Writer’s Conference and BL School of English. During the summer months, all board staff schedules are shifted to staff Bread Loaf without adding additional full-time employees.
Current Projects:
• Checker / Meal Plan implementation without adding staff • Assuring the 30 % Real Food goal was met • Recipe and nutritional information installed into the new Menu Management System • Developing long term plans for difficult recruiting and retention challenges.
