    WARNING: In order to limit accidents such as electric shocks, personal injury or fire, and in order to limit material damage due tomisuse of the appliance, please read these instructions carefully and follow them strictly. Reading the operating instructions willhelp you get to know your appliance and enable you to use the equipment correctly. The operation manual should be kept withineasy access to all users for reference and should be read completely by all first time users of the machine.

    IMPORTANT WARNING

    UNPACKING• Carefully remove the equipment from the packagingand take out all the boxes or packets containingattachments or specific items.• WARNING-some of the parts are very sharp e. g.blades … etc.

    INSTALLATION• Install your machine on a stable solid base.

    CONNECTION• Always check that your power supply correspondsto that indicated on the serial number plate and thatit is properly sized.

    HANDLING• Always wear cut-resistant gloves when handlingthe cutting blades.

    ASSEMBLY PROCEDURES• Follow the various assembly procedures carefully(see page 7) and make sure that all the attachmentsare correctly positioned.

    USE

    • Do not open the bowl lid until the blade have

    come to a complete stop.

    • Never tamper with or defeat the purpose of the

    locking and safety systems.

    • Never put a hand or nonfood object into the

    bowl.

    • Do not overload the machine.

    • The blades are sharp. Wear cut-resistant gloves

    when handling the blades.

    CLEANING

    • Always unplug your appliance before cleaning.

    • Always clean the appliance and attachments at

    the end of each use.

    • For parts made of aluminum alloys, use cleaning

    detergents suitable for aluminum. Presently, there

    are no aluminum alloys on the surface of the

    machine.

    • Do not spray or pressure-wash the machine.

    • For plastic parts, do not use detergents that are

    too alkaline (i.e., containing too much caustic soda

    or ammonia…).

    MAINTENANCE

    • Always unplug the appliance before servicing.

    • Check the seals regularly and ensure that the

    safety devices are in good working order.

    • It is particularly important to maintain and check

    the attachments since certain products contain cor-

    rosive agents e.g. citric acid.

    • NOTICE: Never operate the appliance if the

    power cord or plug has been damaged. If the

    machine fails to operate as described in this

    manual, or if the machine malfunctions in any way,

    remove the machine from use and have it serviced.

    Additionally, discard all food processed at the time

    The vertical cutter-mixer is ideally suited to professionalneeds.

    It can be used to perform countless jobs that you willgradually discover as you use it.

    The vertical cutter runs at two speeds: 1,800 and3,600 rpm. You can use it to prepare meat, vege-tables, smooth-textured stuffings and mousses, aswell as for grinding, kneading and so on - with amaximum processing time of five minutes for thelongest jobs.

    Its numerous functions will open the door to a wholenew culinary world.

    Thanks to your appliance's simple design, all com-ponents requiring frequent handling for maintenanceor cleaning can be fitted and removed with the grea-test of ease.

    For optimum convenience, this manual describes thevarious assembly operations on a step-by-step basis.

    It places special emphasis on explaining the variousactions that cause the motor to stop, as theappliance is equipped with safety devices which pre-vent access to the blade assembly until it has cometo a complete standstill.

    This manual contains important informationdesigned to help you get the most out of yourvertical cutter-mixer.

    We therefore recommend that you read themanual carefully before using your appliance.

    We have also included examples of a few processingtasks to help you get the feel of your new applianceand appreciate the full range of its many usefulfeatures.

    SWITCHING ONTHE MACHINE

    • ADVICE ON ELECTRICAL CONNECTIONS

    The wiring must be installed by a qualifiedelectrician.

    Before plugging your appliance in, check that yourpower supply voltage is the same as that indicatedon the rating plate.

    If your appliance is not connected to the mains viaa plug and socket, it must be connected to an elec-trical disconnect switch that can be padlocked.

    RISK OF ELECTROCUTION

    With the blade removed and the bowl empty, turnon the machine. The shaft should rotate in a coun-terclockwise direction.

    CHANGING MOTOR ROTATION REQUIRES AQUALIFIED ELECTRICIAN

    Appliances are designed to operate on a

    208-240 Volt, 60 Hz,

    3 Phase power supply.

    • The machine must be grounded electrically.

    • The appliance is only insulated from themains supply when it is unplugged.

  • • In case of overload trip, the motor stops and onlythe orange light is on. After the automatic resettingof the overload device, the orange light switch off,both green lights switch on and the machine can berestarted.

    ASSEMBLY

    1) Notice the lip on thebowl. On one side, directlyover one of the handles,the lip extends straight outrather than being curled.This feature is for pouringand should be to your leftas you place the bowl ontothe machine.

    Facing the tilting lever end of the machine, lower thebowl over the motor shaft until it rests on the top sur-face of the motor unit. Turn the bowl handles in aclockwise direction about 45° as shown until you feelit drop down a bit. Once you feel the bowl bottom-out, turn it back in a counterclockwise direction until itcomes to a complete stop and feels tight and stable.When viewed from the tilting lever end, the handlesshould be directly to your left and right. The bottomof the bowl should be parallel with the top surface ofthe motor unit.

    2) Before you continue,make sure the bowl is inthe upright position. Checkthe locking lever. It shouldbe rotated to the right (asyou are facing the lockinglever end of the machine)and pressed down, lockingthe bowl in the uprightposition.

    • CONTROL PANEL

    • SAFETY INDICATOR LIGHTSFor models R 23 • R 30 • R 45 • R 60 :• The orange light comes on when the appliance isplugged in. If none of the lights come on, this eithermeans that the appliance is not plugged in properlyor that one of the safety device is not activated.• 2 green lights indicate that the appliance is readyfor use (see starting procedure on page 6).• The red light is a motor temperature indicator.When it comes on, it means that the motor hasreached a temperature of 120 °C and may shortlycut out to avoid overheating. This allows you to haltyour processing task before it avoid possible motordamage. It is best to wait until the red light has goneout before resuming your task.• In case of motor thermal cut-out, the red andorange lights will stay on until the motor has cooleddown. The machine will not start while the orangelight is on.

    3) Place the blade assemblyon the motor shaft.Then lower it to the bottomof the bowl by rotating it.Always check that theblade assembly is correctlypositioned at the bottomof the bowl before placingthe ingredients you wish toprocess in the bowl.

    4) Position the lid in thespace provided in the lidsupport arm, then rotate it90° to lock it into position.

    5) To close the lid, fit thelocking catch over theedge of the bowl and pushthe handle down. Theappliance is now ready foruse. The green lightsshould be on.

    If the safety indicator lights do not become green,check all the assembly procedures according topage 47.

    The blades are extremely sharp.For this reason, always make sure you haveremoved the blade assembly before doing any jobinside the bowl, such as cleaning or emptying.

    Smooth, “crescent-sha-ped” 3-blade assembly,supplied as a standardattachment.Distinctive feature: the“crescent” blades makeit easier to mix andbind ingredients.

    A 2-blade assembly is used for processing smallquantities or liquid preparations. The 3-bladeassembly is used for maximum capacities with dryingredients.

    To obtain the best results, it is important to set theright spacing between the blades. Do not excessmaximum processing capacities (see followingtable).

    HELPFUL TIPS

    • EMPTYING THE BOWL

    1) Open the lid by freeingthe locking handle. Releasethe tilting lever by raising it.

    2) Depending on the pro-duct, it may be possible toremove the blade assem-bly before tilting the bowl.If it is not practical toremove it, hold the bladeassembly down with onehand while tilting the bowlwith the other.

    CAUTION: It is advisable to wear cut-resistant glo-ves when handling the blades.

    3) With a receptacle inplace, tilt and empty thebowl.

    • BLADE ASSEMBLIES

    In order to ensure optimum cutting quality, Robot-Coupe has developed new, patented bladeprofiles.

    These blades, which are perfectly balanced in orderto avoid any vibration, are supplied with threedifferent types of edge.

    Standard blade :

    Smooth edge for emulsions,mousses and finely-choppedmeat and vegetables.

    Optional blades :

    Fine serrated edge for allblending tasks and smooth orfine-textured preparations.

    Coarse serrated edge for cake-making (grinding almonds andhazelnuts, making icing sugar),for frozen goods and all hardfoodstuffs.

    • 3-BLADE ASSEMBLY:We recommend you to use the 3-blade assembly for processing large quantities of morethan half the maximum limit indicated previously, with the exception of liquid or blendedpreparations for which we strongly recommend you use the 2-blade assembly.

    To obtain the best possible results with these types of preparation, we recommand theuse of the low speed only.

    - Insert filter N° 2 into body N° 3- Screw part N° 1 onto body

    N° 3 (the tube is fed throughbody N° 3).

    If you already have a vacuum packingmachine, you can connect the kit tothe vacuum pump on this machine.

    kit was specificallydesigned so that liquids can be addedto the mixture during processing, whilekeeping the food under vacuum.

    When you are not using your appliance, keep thelid open and do not leave the bowl in the lockedposition (this will prevent the seals from becomingworn).

    CLEANING THE LIDWash the lid by hand in a three-tank system pot sink.The high temperatures of dish machines can shortenthe life of plastics. Wash the lid with a detergentsuitable for cleaning plastic parts. Allow the lid toair-dry after sanitizing and before reassembly.

    CLEANING THE EXTERIOR FRAME AND HOUSINGAlways unplug the machine before cleaning. Do notpressure-wash the machine. Use a cloth dampenedwith a soapy-water solution to wipe down the exterior.

    CLEANING THE SEALSThe seals under the bowl protect the motor andseal the bottom of the bowl. Clean the seals with asoapy-water solution. If necessary, use a smallbrush to help loosen food particles. After cleaning,lubricate the seals with a food-grade grease or oil.

    I M P O R T A N T

    MAINTENANCE

    • BLADESWear cut-resistant gloves when handling the bladeassembly.The blades do not need to be razor sharp toprovide a quality cut. However, they will needsharpening from time to time. Use the honing stoneshipped with the machine, or have the bladessharpened professionally if you prefer. If theybecome too worn to sharpen, replacement bladesare available.

    • SHAFT SEALSThe watertighness is achieved by a sealing socketthat holds two shaft seals, a stainless steel deflectorwith integrated V-ring (upperside) and an O-ring(lowerside).To ensure that the motor remains totally watertight,it is advisable to check the seals for wear once amonth, and replace them if necessary.When the seals are worn, liquid may first run intothe bearings, then reach the motor. If this happens,the seals, the bearings and even the motor mayhave to be replaced.The seals are easy to replace without having toremove the motor, so you are strongly advised tokeep an eye on their state of wear.

    • REPLACEMENT OF MOTOR SHAFT SEAL

    All parts that come into contact with food are easyto remove and clean. Failure to keep the machineclean can result in tainted food, high repair costs,and shortened machine life. Follow the cleaninginstructions detailed below, or clean according tolocal Health Department Regulations.Pre-rinse the attachments before washing to removeany bulk food on the parts. A stiff bristle brush orpower sprayer faucet attachment is effective inknocking the food out of the crevices of the attachmentsas a pre-rinse procedure. Follow the instructionsbelow for individual parts.

    CLEANING THE BLADE ASSEMBLYFor the purpose of sanitation, the blades must bedisassembled (see the maintenance section forinstructions) and cleaned at the end of each prepsession or three times a day. The blade assemblyshould be completely disassembled before washing.The blade assembly can be washed in a dishmachine or three-tank system pot sink. The washershould have an industry-standard wash, rinse, andsanitization cycle. Allow the parts to air-dry aftersanitizing. Apply a little food-grade oil or grease tothe threads on the top locking nut before reassembly.

    CLEANING THE BOWLWash the bowl in a dish machine or three-tanksystem pot sink. The washer should have an industry-standard wash, rinse, and sanitization cycle. Allowthe bowl to air-dry after sanitizing and beforereassembly.

    Like the bowl and lid, the blade assemblyshould also be removed for cleaning after use.Always dry all the metal parts carefully, espe-cially the blades, to avoid oxidization.

    Check that your detergent is suitable for clea-ning the plastic parts.Certain washing agents are too alkaline (e.g.high levels of caustic soda or ammonia) andtotally incompatible with certain types ofplastic, causing them to deteriorate rapidly.

    As a precaution, always unplug your appliancebefore cleaning it (hazard of electrocution) andhandle the blades with care (hazard of injury).

    • BOWL SEALThe bowl seal, located between the bowl and thebushing, ensures that the bowl remains watertight.This sealing part must be regulary lubricated withedible oil and be changed. Check it monthly forsigns of wear, as the watertightness of the bowldepends on it.In order to make it easier for you to clean yourappliance, the bowl sealing assembly is located onthe underside of the bowl.As a result, a small area here may fill up withfoodstuff, though it will empty itself when the bowl isreleased.

    • DISMANTLING THE BLADE ASSEMBLYWEAR CUT-RESISTANT GLOVES WHEN HANDLINGTHE BLADES

    - For the purpose ofsanitation, the bladesshould be disassembledand cleaned followingeach meals preparation,

    or at least three times a day.- Lift the blade assembly out of the appliance- Remove the bowl

    1-With the lid in the open position, turn it 1/4 in eitherdirection. Then, lift the lid up and out of the slot in theholding bracket.2- Put the lid upside down on top of the bowl.

    R 45 / R 60 - Place the blade remover to stop on the motor shaft.- Put the blade assembly back in position.

    - Loosen the top lockingnut with the providedtool, turning it counter-clockwise.

    - Dismantle the bladeassembly by hand.

    - To reassemble the blades, follow these instructionsin the reverse order. Also, refer to the illustrationson page 9.

    - Make sure you tighten the top locking nutproperly after reassembling the blades, in orderto prevent the latter coming loose.

    • LID SEALThe lid is designed to be completely watertightwithin the limits set out on page 11 (see examplesof use). In order to ensure that it remains that way,you may have to change the seal occasionally,depending on how regularly you use your machine.If you do not use your machine regularly, werecommend that you leave the lid open when it isnot in use jobs to preserve all these features.

    Take out the worn seal.

    3 - Install the seal with theseam (where the two endsare joined) on the hingedside of the lid. The innerportion of the seal is groo-ved to fit the correspondingraised rim on the lid.

    4 to 7 - Begin installing the seal on the hinged side ofthe lid, pressing down on the inner portion of the sealand working your way along each side, until the seal iscompletely installed.

    8 - Put the lid back in thebracket, and give it a 1/4turn.

    These appliances are fitted with four interlocking devices.The machine can be started only if the followingconditions are achieved:- The bowl is locked in the right angular position,- The bowl and the motor are in vertical position,- The lid is locked on its support in the correct

    angular position,- The lid is closed on the bowl.

    Caution: Allow product circulation to stop beforeopening the lid.These models are also fitted with a thermal protectionsystem (with automatic reset) which stops the motorif it is overloaded. A red warning light signals thatthe machine is becoming too hot and is about tostop.If this happens, wait until the appliance has cooleddown before switching it back on (the orange lightwill switch off and the green lights will switch onagain).

    The blades are extremely sharp. Handle with care.

    Never try to override the locking and safetysystems.Never insert a nonfood into the container wherethe food is being processed.Never push the ingredients down with your hand.Do not overload the appliance.
