Before using your Mixmaster® Series II

BeforeassemblingyourSunbeamMixmaster®SeriesII,besurethepowercordisunpluggedfromthepoweroutletandthespeedcontroldialisinthe'O'position.

1. Pressthe‘tilt'button,locatedontheneckofthemixerandswingthemixerheadup,seeFigure1.Themixerheadwilllockintothistiltposition.

2. Selectthedesiredattachmentsdependingonthemixingtasktobeperformed;

– Beatersforcreamingbutterandsugar,mixingcakemixesandwhiskingcreamandeggwhites.

– Doughhooksforkneadingdoughandotherheavymixtures.

Inserting attachments

3a.Takethetwobeaters,placetheovalshapedbeater(A)intotheleftsocket,(outerposition).Placetheotherbeater,withtheplasticnodulesonthebase(B)intotherightsocket,(innerposition),seeFigure2.

3b.Takethetwodoughhooks,placethedoughhookwiththeshorterhookatthebottom(A)intotheleftsocket,(outerposition).Likewise,placethedoughhookwiththelongerhookatthebottom(B)intotherightsocket,(innerposition),seeFigure3.

4. Placethemixingbowlontothemetalbaseplatesothatitissittingevenly.Lockthebowlintoplacebyturningitclockwise,seeFigure5.

5. Press‘tilt’buttontolowertheheadwiththeselectedattachments(either,beatersordoughhooks)inplace,intothemixingbowl.SeeFigure6.

position,plugthepowercordintoa230-240voltpoweroutlet.

Note:Thepowerindicatorlightonthespeedcontroldialwillnowbeilluminated.

2. UsethespeedcontroldialtoturnthemixerONandOFFandtocontrolthemixingspeeds.

Clearlymarkedinstructionsforcorrectmixingspeedsforeachtypeofmixtureareshowninthe‘MixingGuide’onpage7.

Tip:Startmixingatslowspeedsandincreasespeedgraduallytopreventingredientssplashingoutofthemixingbowl.Whenaddingdryingredients,particularlyflour,lowerthespeedtemporarilyuntilingredientsarecombined.Tip:Whenkneadingyeastdoughs,usespeed1toachievebestresults.Forspecificinstructionsfortheuseofdoughhookssee'HelpfulHintsforaSuccessfulDough'onpage13.

speedsetting.Forlightmixesrequiringmaximummixingperformancesuchascakesandmeringue,the'HI'bowlspeedisrecommendedasthispassesthemixturethroughthebeatersmoreoftenforfasterresults.Forlargevolumesthebowlspeedshouldbereducedto"LO",particularlyinthickmixtures.

2.Whenmixingiscomplete,turnthespeedcontroldialtothe'O'positionandunplugthecordfromthepoweroutlet.

Note:Theindicatorlightwillstayonuntilpowerisdisconnectedfromthemixer.

3.Holddownthe‘tilt’buttonandeasethemixerheadbackuntilthemixerheadislockedintothetiltbackposition,seeFigure1.

4.Toremovetheparticularattachments(eitherbeatersordoughhooks),placefingerslooselyaroundtheattachments

andholddownthe‘beatereject’buttonseeFigure7.

Thesecondmotorislocatedintheneckofthemixeranddrivestheturntable,inturnrotatingthebowl.HighorlowbowlspeedcanbeselectedbysimplyturningthecontroldialpositionedontheneckoftheMixmaster®SeriesIIBenchMixer.

Wipeovertheoutsideareaofthemixerandbasewithadampenedclothandpolishwithasoftdrycloth.

Wipeanyexcessfoodparticlesfromthepowercord.

Washthemixingbowl,beatersanddoughhooksinwarmsoapywaterandwipedry.Givespecialattentiontothenylonbuttonareaonthebeater-useabrushifnecessarytoremovestickyfoodparticles.Thestainlesssteelmixingbowl,beatersanddoughhooksmayalsobeplacedandwashedinthedishwasher.

Maintenance ServiceYourSunbeamMixmaster®SeriesIIshouldberegularlychecked.Afterapproximatelyfouryearsofdomesticuse,thegreaseinthegearcompartmentshouldbeexamined(commercialuseaftertwoyears).WesuggestatthattimeyousendthemixertoyournearestSunbeamApplianceServiceCentretoensureefficient,correctservicing.

Listedbelowisaguideregardingsomeoftheingredientsusedintherecipesinthisbook.

ButterButterismadefromapproximately80%milkfat(cream)andischurnedoveraperiodoftimetoproduceasolid(butter).Butterisusedtostabilize,texturizeandaddflavour.Buttermaybesaltedorunsalted,itisbesttouseunsaltedbutterforcakebaking.Clarifiedbutterhasthemilksolidsandsaltremoved,whichisidealforpastrymakingasitcanbeheatedtohighertemperaturesthanregularbutter.

Note:Margarinecanbeusedasasubstituteforbutter.Itismadefromvegetableoils,thereforeitmayaltertheendresult.Therearevarioustypesofmargarines,someofthesearebutter-margarineblendsandfatreduced.

YeastAraisingagentusedindoughs.Yeastisamicroscopiclivingorganismthatgrowsrapidlyinsuitablewarm,moistconditions.Theyeastplantfeedsonsugarandexpelscarbondioxidewhichexpandstheglutenframework.Whenfoamingyeastdonotallowthewatertemperaturetoexceed40°C,asthiswillkilltheyeast.A26˚C-30˚C,draftfreeareaismostsuitableforthegrowthofyeastduringtherisingprocess.BothDryYeastandfreshCompressedYeastmaybeusedintherecipesincludedinthisbook.(NB.7gofdryyeastisequivalentto20gofcompressedyeast).

SubstitutesIfyoufinditnecessarytosubstituteingredientsinarecipe,checkthefollowingalternatives:

1 cup self raising flour =1cupplainflourand2teaspoonsbakingpowder.

1 cup plain flour and 1 teaspoon baking powder =½cupeachofplainandselfraisingflour.

Sultanas =equalmeasureofanyotherdriedfruit.

Golden Syrup =equalmeasureoftreacleormolasses.

9.Allrecipeshavebeenkitchentested,butshouldyoufinditnecessarytovarytheingredientsorthesizeofthetinetc.allowforavariationincookingtime.Alwaystestfordonenessinbakedfoodsbeforeremovingfromtheovenorthecookingappliance.

10.Duringmixing,ingredientsmaysplashtothesidesofthebowl.Toscrapethebowl,turnthespeedcontroldialtothe'O'positionandusingaspatula,scrapethebowl.NEVERUSEAKNIFE,METALSPOONORFORK,asthismaycausedamagetothebeatersandbowl.Alightscrapingaftertheadditionofeachingredientassistsinachievingefficientmixing.

Step 1: Preparing the yeastForthedryyeasttobeactivateditneedstoferment.Todothisplacewarmmilk,sugarandthetepidwaterintoabowl,adddryyeastandmix.Standinawarmplaceuntilmixturestartsfoamingiebubbles.Thisprocesswilltakeapproximately10minutes.Besurenottooverheatthemilk.Ashottemperatureswillkillanddeactivatetheyeast.

Step 2: Preparing the doughNote:Ensuredoughhooksareinplace(refertopage4).

1.Placethedryingredientsintothemixingbowlandpositionontotheturntable.Turnthespeedcontrolswitchtospeed1.Begintograduallyaddtheliquidingredientstothebowl.

Note:Youmayfinditusefultouseaspatulatoscrapethedryingredientsfromthesidesofthebowl.

Safety Tip:Donotattempttofeedthedoughintothedoughhookswithyourhands,spatulaoranyotherutensilwhilethemixerispluggedintoapoweroutletorinoperation.

2.Astheingredientsstarttoformaball,scrapedownthesidesofthebowlifnecessarywithaplasticspatulaandremoveyourdough.

Safety Tip:Donotusethemixerneartheedgeofabenchortabletopwhereitmayfalloff.
