1 1/2 Cups Granulated Sugar

1/2 Cup Packed Light Brown Sugar

1 Cup Vegetable Oil

3 Large Eggs

2 tsp. Pure Vanilla Extract

2 1/2 Cups Flour

1/2 Cup Unsweetened Cocoa Powder

1 tsp. Salt

1 tsp. Baking Soda

1 tsp. Ground Cinnamon

2 Cups Finely Grated Zucchini, Slightly Drained

1 Cup Semisweet Chocolate Chips

Scissors

Glue

Toothpicks

WHAT YOU’LL NEED - 20 SERVINGS

WHAT TO DO

Preheat oven to 350°. In a large bowl, beat together the sugars, oil, eggs, and vanilla extract until thoroughly combined.

In a medium bowl, whisk together the flour, cocoa powder, salt, baking soda, and cinnamon. Gradually add and mix the dry ingredients into the sugar mixture.

Fold in the zucchini and the semisweet chocolate chips until they are evenly mixed into the batter.

Using a large cookie scoop (about 3 tbsps), scoop batter into the prepared muffin wells. Bake for 18-22 minutes.

While your muffins cool, make your flag toppers. Cut out all of the flags you will need.

Fold the flag in half to make a crease. Open the flag and add glue to the back, place the toothpick along the crease, and fold the flag back up around the toothpick to seal.

After you’ve made the flags, place them in each muffin and serve.
