is an experienced bookkeeping firm with an extensive
background in the hospitality industry. We are unique be-
cause we understand all aspects of operations from the
front-of-house to the back-of-house.
Our CEO, Neeta Hemlall has spent the past 12 years in the
food service and hospitality industry as a CFO, Control-
ler, and VP of Operations. While holding these positions
she developed a labor budget variance analysis, which was
implemented at numerous restaurants, and yielded labor
savings in excess of $5MM. As technology changed, she
introduced methods using the web to help drive sales.
Mrs. Hemlall holds a Masters in Accounting from Long
Island University. She is a certified QuickBooks Pro, a
member of AICPA (American Institute of CPA’s), AIPB
(American Bookkeeping Professionals), and the New York
State Restaurant Association. Her deep knowledge base
allows us to control cost and help drive sales!
It is more essential than ever to have inventory and labor
controls in place to ensure your business is running effi-
ciently. Our financial and operational background exper-
tise lies in accounting systems, cost controls, budgeting,
forecasting, cost accounting, financial statements and
cash flow improvement.
Neema Consulting replaces the guesswork and inefficiency
with proven and reliable business models. Outsourcing
your back-of-house operations to NeeMa Consulting en-
ables your organization to dedicate more time, energy, and
financial resources to your business operation. As well as
saving on expenses such as payroll taxes, office supplies,
health insurance and the countless hours of hiring and
training new employees.
We schedule site visits at no additional cost, to discuss
everything from cash flow management to vendor price
changes. Our fees are a fraction of the costs of hiring an
in-house bookkeeper or comparable services!
weekly cash flow projectionAdequate cash flow is essential to the sur-
vival of a business. This template can help
you predict whether your business will
have enough cash to meet its obligations.
It’s an important tool for cash flow manage-
ment, letting you know when your expendi-
tures are too high or when you might want
to arrange short term investments to deal
with a cash flow surplus. This report focuses
on weekly sales trends and what the esti-
mated cash inflows and outflows would be
at the end of each week for a 3 week period.
This report is generated on a weekly basis.
monthly management analysisOwners and managers require financial
statements to make important business de-
cisions that affect its continued operations.
Financial analysis is performed on these
statements to provide management with a
more detailed understanding of the figures.
The goal in analyzing financial statements
is to assess past performance and current
financial position and to make predictions
about the future performance of a com-
pany. This template highlights areas that
need your attention such as the decrease in
sales or and increase in an expense. It ana-
lyzes the three major financial statements:
income, balance sheet, and cash flow, then
notes are provided to explain any changes.
This report is prepared on a monthly basis
and is discussed with management by the
10th of each month.

daily tip declaration sheetThis template is designed to help servers
easily calculate the portion of tips they
will share with bartenders, bussers, or other
workers that share tips. This form will also
make it easier for employees to declare
their gratuities to the IRS and can assist
with completing the IRS Form 8027. It also
serves as a Tip Declaration Record. This
report is customized to reflect your own
unique tip sharing program. There is one
sheet for each day and each shift. All the
sheets for a pay period are summed up to
one sheet so that the numbers can be easily
recorded on the payroll records.
inventory count varianceA physical count variance is the difference
between the actual quantity or volume of
an inventory item counted during the per-
formance of physical inventory count and
the quantity shown in the inventory records.
While it is not unusual that in every physical
count a variance may occur, it is important
to be able to obtain physical count variance
information by means of a variance report.
This variance report is prepared to record
and help rectify inventory control prob-
lems. As most, if not all, organizations re-
quire that variances be kept at acceptable
levels, this report can be used as the basis
for management to demand that unfound-
ed variances be investigated and the cause
be determined and resolved.

inventory controls, costmanagement, and purchasingInventory control is one of the greatest fac-
tors in a company’s success or failure. This
part of the supply chain has a great impact
on the company’s ability to manufacture
goods for sale or to deliver customer sat-
isfaction on orders of finished products.
Proper inventory control will balance the
customer’s need to secure products quickly
with the business need to control warehous-
ing costs. To manage inventory effectively, a
business must have a firm understanding of
demand, and cost of inventory.
front of houseoperational techniquesFor food and beverage businesses, the
customer is their greatest resource. All
functions and services that a business of-
fers are all geared toward catering to the
customer. However, some businesses can
fail to maximize the revenue potential of
customers. This issue can be alleviated
through the use of proper selling tech-
niques. When staff utilizes suggestive sell-
ing techniques throughout their interaction
with customers, food and beverage busi-
nesses realize increased revenue streams.
pos (point of sale) systemprogramming & managementAre any components of the system difficult
to use, or not working the way you thought
they would? POS systems can be expensive
and time consuming when there are system
issues. Sometimes businesses don’t spend
the necessary time to find the right system.
The purchase usually results in buyer’s re-
morse with confused employees or expen-
sive features that aren’t being utilized.
budgeting and forecastingA pilot would never fly a plane from Los
Angeles to New York without a flight plan.
Yet all too often, small business people
open their doors without clear plans to help
them get where they want to go. One of
the easiest ways to get there—wherever
that is—is by creating a budget and sales
forecast.
quickbooks set-up & trainingWant to switch to QuickBooks but don’t
know where to start? We know! Give us a
call and we’ll not only setup your Quick-
Books company data file, we’ll also enter
historical data and reconcile accounts. Many
try to setup their QuickBooks manually tak-
ing many days and sometimes weeks, but
we can save you time and money doing this
task for you. We have a skilled staff with
advanced knowledge in both QuickBooks
setup and accounting.
tip declarations & reportingAs if the restaurant business was not hard
enough, complying with IRS tip reporting
rules is one of the most critical and impor-
tant tasks facing restaurant owners! This is
truer today than a decade ago as the IRS is
accelerating its efforts to capture previous-
ly lost revenue in the form of income and
FICA (Social Security & Medicare) tax. As a
restaurant owner you should therefore be
aware of your responsibilities regarding the
reporting of your employee’s tips.
The HR department in any company can be its ace in the hole, if used strategically. HR is a company’s
human resource multiplier. The functions of an HR professional should focus on the company’s greatest
resource of all—its employees. Without good employees, the best business plan and ideas will fail.
In your business there are experts to oversee and advise you on various areas and departments.
For example, your CFO’s sole purpose is to keep their eye on the financial functions and decision for
the company. Without good accounting and insight on your cash flow, investments, and balance sheet
you risk making poor business decisions. Just as the financials are the foundation of your business, we
must not forget that your employees are your greatest assets. That’s why MAGNUS is here to support all
your HR needs. The reasons why HR is important can vary depending on if you look at the issue from a
manager or employee perspective.
