Which friends make you feel good about yourself andwhich ones bring you down? These are all questionsthat ONLY YOU will be able to answer. Researchthrough experimentation and educate yourself aboutyour needs and how you can love yourself.

3. Knowing how to love yourself then requires you to takeaction and implement loving strategies into your life.Take the steps to improve and maintain your health.Books and online research are sometimes helpful butare no match for the wisdom you can access by listeningcarefully to your own self. Make the commitment to doat least one loving thing for you each day. Incorporateways to love yourself into your daily routine. Someexamples of self-love that I use are drinking 2-3 liters ofwater each day. I surround myself with positive peopleand supportive friends. I exercise in nature where I canbreathe fresh air and feel the spirit of the trees, flowingwater, and the animals. I eat foods that energize me. I replaced all my chemical cleaners with natural products.I use chemical free body care products. I filter mywater. I do all of these things because I know theymake me feel good and I found this out by payingattention to my mind, body, emotions, and spirit as I experimented on my path. I make it a priority to educatemyself on my needs. I learned (and am still learning)who I am by listening to the beat of my heart instead ofrelying on the information I had previously gatheredfrom parents and friends. I have made my health a priority

and have thus educated myself on myneeds and how I can best love me.

Keep in mind that self-education is alifelong journey. The more you knowabout you, the better you can serveyour life purpose. The better you carefor yourself, the more powerful andeffective you can be in your work. Goahead. Take it on! Educate yourself aboutYOU. Tune in to your heart, gut, mind, andsoul and listen up! W e live in a time where conflicting information swirlsabout in the media and in our brains. Experts disagree. Books contradict each other. The Internet

can be a vacuous hole with infinite links that supply confusing and sometimes false information. Such sourcesof information are questionable and even unreliable. Theonly true source of reliable information is you. More thanever, it is important to have knowledge about your body,your emotions, your life, your soul, your purpose… every-thing that has to do with YOU! For those of you who needa starting point in educating yourself about you, pleaseread the following tips.

1. Educating yourself is really a process of self-discoveryand getting to know who you are inside and out. Therefore, making the intention to become aware is yourfirst step. Be aware about how you feel when you eathealthy versus junk foods. Be aware about how yourenergy affects those around you. Develop awarenessabout how other people’s energy affects you. Be awareabout how your body feels when you exercise in natureversus exercising in the gym. Are you happy in yourbody? Do you have aches and pains? What stuckemotions are you carrying that cause these pains? Be aware. Your awareness is a form of self-educationthat can teach you about who you are, what you enjoy,what makes you miserable, and what makes you tick.

2. Once you become more aware, you may have a tendency to judge yourself and your choices. When youmake the connection that certainbehaviors evoke certain feelings, youmay be tempted to be critical ofyourself. Resist the temptation to judgeand replace your judgment withself-love. Yes, love yourself. Lovingself requires advanced self-education.Educate yourself about what youlove. Give yourself permission to findout what makes you feel your best.What brings you joy? What makesyou feel good in your body? Whatkinds of food give you energy?Which doctor is the best fit for yourneeds? How much water is optimumfor you? What nourishes your spiritand feeds your soul? Where do youfeel God’s presence most easily?

Overall, turmeric brings healingpower to your life, which is why Iuse it in so many recipes. The following recipe I created is notonly delicious, but it is rich inantioxidants: turmeric, ginger,pomegranates, and lime juice.

Enjoy it in good health!Lemon Rice

Lemon rice is not made with lemons, butwith limes. It is a South Indian recipe, where only

limes are available. Limes are tarter in flavor thanlemons, and the tart flavor balances the spicy chilies

and ginger in this recipe. Mustard seeds add crunchiness andpungency to the dish. This recipe is not only simple to make,but also looks colorful and festive and is good enough to serveat banquets. Lemon rice gets its bright and vibrant lemoncolor from turmeric.Lemon rice is usually served at room temperature. Lime juice,ginger, chilies, and turmeric preserve this rice and keep it fromspoiling. It can be left at room temperature for a day, looselycovered. When I was growing up, it was a popular choice forkid's school lunches, picnics, and train journeys.I like to garnish lemon rice with pomegranate seeds, whichshimmer like fine jewels against the vibrant yellow bed of rice.1/3 cup vegetable oil1/8 teaspoon asafoetida2 - 3 dried red chilies such as chile de arbol1 tablespoon black mustard seeds1 tablespoon white urad dal2 tablespoons chena dal1/2 cup raw cashew nuts20 fresh or dry curry leaves1-inch piece ginger, minced1 - 3 minced fresh green chilies, such as serrano1/2 teaspoon turmeric 2 1/2 teaspoons salt1/3 cup + 2 tablespoons lime juice4 cups cooked plain white ricePomegranate seeds, for garnishHeat oil in a saucepan over medium high heat. Add asafoetidaand red chilies. When red chilies are turning one shade darker,add mustard seeds and cover with the lid until splutteringsubsides. Uncover and add white urad dal and chena dal.When white urad dal is turning golden brown, stir in cashews.As soon as cashew nuts turn one shade darker, add curryleaves. As curry leaves crisp up, add ginger, green chilies,turmeric, and salt. Fry for one minute, and turn off the heat.Let it cool for 3 minutes, add lime juice. Now stir the limejuice mixture into cooked rice, and mix thoroughly. Let the ricerest for at least 1/2 hour for flavors to mingle before serving.Garnish with fresh pomegranate seeds before serving. �

Cook's Note: (1) If you taste the rice as soon as you make it, it tastes very lemony. Butafter it sits for a half hour, the lime juice absorbs into the rice and the flavors mingle. Thenyou can adjust the seasoning if necessary. (2) Red chilies are added for flavor. They arenot meant to be eaten.

OF THE SPICE TURMERIC ORTHAT OF CURCUMIN, THE COMPOUND FOUND IN TURMERIC.Most recently, a study published in theOctober 28, 2009, issue of the BritishJournal of Cancer reveals that curcuminkills esophageal cancer cells in vitro.Scientific research indicates that turmer-ic is known to cure various elements thatcan go wrong with the human body such asovarian cancer, prostate cancer, rheumatoidarthritis, cystic fibrosis, and Alzheimer's disease.Over the centuries, and long before turmeric hit the spotlightin the west, turmeric has had a place of honor not only inIndia's traditional Ayurvedic medicine but also in Indianhouseholds. No religious rituals and auspicious ceremonies arecomplete without the use of turmeric. In the Hindu weddingceremony, for example, bride and groom pour turmeric-tinted riceover each other's heads, which signifies prosperity and fertility.Known as "the poor man's saffron" in India, turmeric is aperennial shrub. It is grown all over the Southern states ofIndia and is a member of the ginger family. Although it has aslightly pungent and bitter taste, turmeric does not change thetaste of the food tremendously. However, whatever food youadd it to turns a golden yellow color.As a spice, turmeric has had a long history as an anti-inflam-matory in India's traditional Ayurvedic medicine. Turmeric isalso widely used as an antiseptic agent. In the village I grew upin, my mother always washed meat or fish with turmeric,because it protects meat from spoilage (oxidation degradation)and protects its nutritive values because it contains the potentantioxidant curcumin. If it can protect a piece of meat, it canalso protect our body tissue. In fact, eating food rich inantioxidants such as turmeric has been shown to benefit thebody's immune system in countless ways.Turmeric is also known as a cleansing spice, which explainswhy women in Indian villages cleanse their bodies by applyingthe turmeric paste before washing.Alzheimer's disease has an important connection withinflammation --and turmeric is known to reduce that inflammation. Alzheimer's disease is characterized by thebuildup of amyloid protein "plaques'' within the brain. In studiesdone on rats, curcumin "not only reduces the amyloid, but alsoreduces the (brain's) response to the amyloid,'' according toresearcher Dr. Sally Frautschy of the University of California,Los Angeles. Almost every curry in Indian cuisine uses amoderate amount of the spice turmeric, which may helpexplain why rates of Alzheimer's disease are much loweramong the elderly individuals living in villages in India comparedto their Western peers.In India turmeric is also used as a digestive aid. The next time youhave a stomachache, you may want to consider the spice turmeric.

You would think I like to cook. It’s whatI do. I am all about food - organic,local and healthy. I teach about food, how to

cook healthy food and I’m a chef. While I love my work itis because I love teaching, meeting new people and helpingpeople learn how to be healthy. The fact of the matter iscooking not my favorite thing to do. I’d rather be gardening,sewing, dancing, knitting or even cleaning. So, why do I do it?It’s simple. I learned the hard way that I wouldn’t be healthyunless I am eating the best quality, freshly prepared foods.

As is all too common these days, I grew up fairly unhealthy.I was constantly sick as a young child and as a teen suffered from depression along with a number of otherhealth issues. In my teens I began a quest to see what diethad to do with both physical and psychological problems.

As soon as I removed the junk from my diet – sugar, preservatives, chemical additives and prepared foods andstarted cooking fresh food for myself, the positive changesI experienced both physically and emotionally were quitedramatic. Organic and local foods were not available whenI began to make these changes. However, just the changeto eating whole grains, beans and vegetables and limitingmy animal food intake created such a powerful positivechange it never seemed to be worth while to go back to alifestyle that did not include cooking fresh food since thiswould lead back to illness and suffering. I had had enoughof that!

I am also the mother of five wonderful children, all ofwhom are adults now. While they were growing up I wasmore than ever committed to providing fresh food daily formy family. My personal experiences, going from poorhealth to achieving excellent health had such a strongimpact on me that there was no way I was not going toprovide the healthiest diet possible for my children. And Ihave to tell you, they were healthy little kids and continueto be very strong, healthy adults. One of them had an ear-ache, once. That’s all. Just once. And that was when hewas in middle school and was eating all sorts of junk atschool. Of course the kids had colds and fevers and anoccasional minor health issue. Nothing was ever too

serious and we were always able to resolve any problemsby adjusting their diets. I believe most of the health problemschildren are experiencing these days are due to poor dietand environment.

So, to answer the question why do I cook when it is not myfavorite thing to do and why I recommend that everyonefigure out how to include freshly prepared, local, organicfoods in their diets, here’s why:

• When you know what it is like to be ill it is a preciousthing to experience health. I like being healthy, havingenergy and being able to enjoy my life. I am in my 50’sand on no medication. This should be the norm butunfortunately it is not the case any longer.

• It was easier raising children that were healthy thanspending hours and dollars in doctor’s offices. Theamount of time I have spent in the kitchen is far lessthan the amount of time most people spend in a doctor’soffice and being sick in bed.

• Dinnertime is an important part of family time. Itestablishes a lifetime of healthy habits for the children,gives them an appreciation of good tasting, healthyfood, along with having important quality time together.

• Industrial farming is one of the world’s major pollutantsand causes of global warming. By choosing organicand local I choose a healthy future for all of us.

• While cooking might not be my one favorite things todo, eating delicious food is. Prepared food you pickupat the market is always a disappointment and loadedwith all sorts of unknowns – sugars, preservatives andchemicals and very little of it is organic so I havelearned to create healthy food that is both satisfyingand delicious.

• Cooking for me is like brushing my teeth. If I want tomaintain my health it’s necessary. It’s not glorious orgreat fun, but rather, just a natural part of my day.

So, if you’re like me and cooking is not your favorite thingto do, but it makes sense to you that fresh food is essentialfor your health, here are some suggestions to making cookingfor yourself easier:

• Cook hearty dishes that include everything but thekitchen sink. These dishes often last a while in thefridge and freeze well. Combine grains and/or beansalong with a multitude of vegetables.

• Steam or boil a variety of fresh veggies every couple ofdays. I have found if they are stored in glass containersthey taste fresher longer. You can eat these vegetableswith a little lemon and toasted seeds or put some saladdressing on them if you don’t like plain veggies. After afew days if they are still okay to eat but the flavor isn’tthe best, sauté the vegetables with a bit of olive oil andgarlic. Perks ‘em right up.

• Yes, there are some wonderful, organic, preparedfoods out there that you can include in your diet tomake things easier. Read labels and choose carefully.Avoid sugars in these foods.

Here are a few of my favorite everything but thekitchen sink recipes. Make sure to let the dishes coolbefore refrigerating or freezing them. Freeze in servingsize containers.

TUSCAN VEGETABLE AND BREAD SOUP2 tablespoons plus ¼ cup organic olive oil1 medium onion, finely chopped1 leek, cut in half and sliced finely1 10-ounce can kidney, chickpea or cannellini beans 2 quarts vegetable broth1 bunch lacinato kale, slice the stems finely, coarsely chop the leafy part2 ribs celery, diced½ cup Italian parsley leaves, chopped2 medium carrots, diced2 medium zucchini, diced1 small bunch of basil, leaves torn2 tablespoons organic tomato paste½ tsp oreganofreshly ground black pepper1 tsp sea salt½ pound thinly sliced day old Italian bread or organic baguettesfreshly grated Parmesan cheese

Sauté the onion and leek in 2 tablespoons olive oil for a fewminutes until the onions are translucent. Add a cup of vegetable broth and bring to a simmer. Add the other vegetables - kale, celery, carrot, zucchini, parsley and basil.Cover the pot and cook for 20 minutes. Add the beans, therest of the broth, tomato paste, oregano, and season totaste with salt and pepper. Cook for 90 minutes. It shouldnot be thick at this point.

If you have the time, let the soup rest at least a day. If not continue on with the directions:

In another stockpot, layer the soup with thin slices of dayold bread. Heat while stirring until the bread breaks apartand thickens the soup. You can add more broth or water ifneeded. When the soup is done, turn off the heat and stirin ¼ cup olive oil. Add salt and freshly ground pepper totaste. Serve with freshly grated Parmesan cheese on top(or not if you are vegan).

HEARTY WHITE BEAN CHILIAdapted from a recipe by Giada De Laurentis

2 tablespoons organic olive oil1 large onion, diced4 garlic cloves, minced2 lbs either ground seitan or frozen and then thawedtofu* see below1 teaspoon sea salt, plus more for seasoning as needed2 tablespoons ground cumin1 teaspoon whole fennel seed1 tablespoon dried oregano2 teaspoons chili powder3 tablespoons flour2 (15 oz cans) organic white beans such as cannellini (my favorite) or navy beans1 – 2 bunches greens: kale, collards, mustards, spinach,Swiss chard. Slice stems finely and the leaves into 1” pieces 1 ½ cups frozen corn, thawed4 cups water or organic vegetable stock ¼ teaspoon crushed red pepper flakesFreshly ground black pepper to taste¼ cup flat leaf parsley

*Seitan is a high protein food made from wheat. It is availableat your local natural foods store. Drain and grind in a foodprocessor until it looks like ground meat.

To use tofu for this dish - Freeze 2 cakes of firm or extrafirm tofu for 24 hours or longer and then let thaw. Put in thefood processor and grind it up. In a large heavy-bottomedpot or Dutch oven, heat the oil over medium-high heat.Add the onion and cook until translucent, about 5 minutes.Add the garlic and cook for 30 seconds. Add the groundseitan or tofu, 1 teaspoon salt, cumin, fennel seeds,oregano, and chili powder. Stir frequently and cook about5 minutes. Stir the flour into the mixture. Add the beans,greens, corn, and vegetable stock or water. Simmer for 55-60 minutes until the liquid has reduced by about halfand the chili has thickened. Add the red pepper flakes andsimmer for another 10 minutes. Season with salt and pepperto taste. Garnish with parsley when serving.
