HOT PICKS
With its fiery red earth, archaic mining scrub, lakes and mountains, New Caledonia’s Deep South is a land of striking contrasts and unparalleled beauty.
And the road to Yaté takes you past one of our most
breathtaking nature reserves, Parc de la Rivière Bleue:
a 9,000 hectare wilderness of unspoilt natural treasures.
Follow the trails on foot or mountain bike and wonder at
the eerie grandeur of the Drowned Forest where trees
rise like naiads to stretch pale limbs towards the sky. A
little further on, the nature trail leads you to Madeleine
Waterfalls, where you can take a refreshing dip and
admire the superb views over the falls. And if you need
a really special reason to head for Yaté, no problem…
how about the Kagu Trail on 2 June? The program
includes 4 distances and the
route is out of this world!

THOUGHT-PROVOKING!
“Je suis Noir!” (I am Black!), the new exhibition at the Tjibaou Cultural Centre, challenges preconceptions and questions our ideas about identity.
T h i s p o w e r f u l
exhibition raises
a wide range of
questions about
h u m a n d i ve r s i t y,
about culture and how we see each other. The works on
show, diverse and compelling, reveal how the artists of
the Pacific interpret themselves, explore their physicality,
faces and bodies, how they relate to and inhabit the
space around them and the colours that live within them.
A complex tapestry of forms, shapes and materials
creates a shifting, intriguing, timeless and moving vision.
Eyes wide open
The venue for the exhibition complements the theme of
perception and identity since “Je suis Noir” is held in
the Tjibaou Cultural Centre’s Bérétara Room, a Xaracuu
word meaning “admire, look”. Feast your eyes on the
5 leitmotifs of the works on display: gazes, words,
metamorphoses, illusions and stories. This fascinating
reflection on the dynamics of prejudice and identity is an
exhibition that speaks to us all.

Experience
Welcome to the crystal clear waters of Sarraméa, a charming village lying 120 km north of Nouméa.
S a r r a m é a
was founded

F e u i l l e t
family back
in the 19th century as a coffee growing settlement.
Nowadays, people come from all over New Caledonia
to buy locally grown fruit, vegetables and coffee
at the market held every 4th Sunday in the month.
The village is also famous for its wealth of nature
trails in the surrounding countryside and rainforest.
Just take the path which leaves from the Hotel
Evasion and leads you past Maison Bonnard, an
historic settlers’ house. The trail winds down into
the valley, where peaceful cows graze the rich
grass, and takes you to a superb river plunge pool
of cool sparkling water. Known locally as “le trou
feuillet” or “la cuve”, this natural swimming pool is a
favourite destination for hot tired hikers. It really is the
perfect place for a rustic picnic and an invigorating
splash. Dive from the rocks or just laze in the water,
caressed by the soothing sway of gentle currents.
A magnificent haven of natural beauty...

CALEDONIAN TASTECULTURAL PASSPORT
The chayote (Sechium edule), also known as sayote,
tayota, choko, chocho, chow-chow, merl i ton or
christophine, in memory of Christopher Columbus, is
an edible plant originating in South America. It is a large
pear-shaped vegetable, pale green or yellow in colour,
with firm flesh and a delicate nutty taste.
Chayote gratin:1 kg chayote, 1 tbsp flour, 1 tbsp butter, 1/2 glass of
milk, 4 garlic cloves, thyme, 1 tbsp oil, grated cheese,
breadcrumbs, salt, pepper. Peel the chayote, dice
them and cook in boiling water with salt, thyme, oil and
1 crushed garlic clove. Prepare a béchamel sauce by
gently heating the 3 remaining garlic cloves with the butter
and gradually mixing in flour, milk and pepper. Continue
stirring until sauce thickens. Butter a gratin dish, add the
chayote and cover with the sauce, grated cheese and
breadcrumbs. Bake for 30 minutes at thermostat 6.
Chayote salad: 2 chayote, 1 garlic clove, wine vinegar, 10 cl oil, parsley,
salt and pepper. Quarter the chayote, peel and remove the
centres. Dice finely and boil in salt water for 15 minutes.
Drain and mix in the vinaigrette (wine vinegar, salt, pepper,
garlic and chopped parsley). Serve warm.
The entrance to the Great Hut which lies at the heart of
every Kanak chiefdom is flanked by intricately carved
doorposts known as the “guardians of the house”.
The French term for these symbolic doorposts is
“chambranles”. They have no load-carrying purpose but
are decorative features with a strong symbolic power
similar to that of the roof finial atop the pointed thatched
roof. Traditional Kanak architecture is in itself symbolic
of social structure; the doorposts stand either side of the
entrance to the Great Hut which is the Clan Chief’s seat
of power and the doorway is so low (1.5 m) that visitors
must bend down as they enter, showing their respect for
those present in the hut.
Ancient skills
Kanak doorposts are traditionally sculpted by skilled
craftsmen from the massive, tightly grained wood of the
endemic tree Montrouziera cauliflora, known locally as
“houp”. Custom dictates that only wood from dead trees
should be used (such as trees blown down in a storm
or cyclone). Thus the doorposts symbolise the spirits of
bygone ancients guarding the threshold for their living
descendents.
