ABOUT GRUNTLED PORK CRACKLING BY FOUNDER DAVE WILLISPork scratchings have always been a guilty pleasure of mine, so I thought to myself “why be guilty? What can we change?”. Now I am exceedingly proud to introduce Gruntled to an unsuspecting world! We’ve taken the finest pork and cooked it twice, which makes it lighter and less tooth breaking than traditional scratchings. We’ve then seasoned it with completely natural flavours, making sure that there’s nothing unsavoury like gluten or MSG in the bag. I’m extremely proud of the result and I am sure that if you try them, you too will be left feeling totally Gruntled!

Swiss Chocolatier, Felchlin, have launched a new Sao Palme 75% couverture which complements the existing Sao Palme range of white, milk and dark.

Origin

Sao Palme originates from the mountainous island of Sao Tome, off the Western equatorial coast of Central Africa. The fertile soil is ideal for cocoa farming. The cacao from Sao Tome has been recognised as one of the fine flavour varieties of the world by the International Cocoa Organisation (ICCO).

Flavour ProfileThe traditional and gentle roasting process brings out the original and intense aroma. Intense but well balanced cacao flavours interact with strong risretto coffee, underpinned by sweet, dried prunes and grapefruit notes. The finish is characterised by an intense black tea infusion which remains on the palate.

Due to the high content of cocoa butter, Felchlin couverture has a thin flowing viscosity, ideal for enrobing and moulding. The fantastic fluidity ensures longer workability than other couvertures.
