Theres a story about the steak...
Most hotels and restaurants in Vietnam use frozen meat, even the well established ones who use good quality imported beef. Its
easier and theres a cost saving, normally for the business. Everyone accepts it and its just the way it is. Its business as usual.
Freezing damages the cell structure of meat, causing a loss of moistness and flavour. The water in the cells freezes, formingcrystals which puncture the cells which then leaks out of the meat when thawed along with flavour. With good quality imported
meat, it still tastes OK and most people are happy. Put a sauce on for moistness and fire up the char grill no worries.
Chilled meat is far superior in taste, texture and juiciness.
Weve gone to a lot of trouble to find and offer a truly great steak. Chilled Australian Black Angus Tenderplus branded beef,
