As I sit here looking over the lake and seeing the green leaves bursting in bloom and the birds enjoying the peace and quiet, I’ve decide we need some simple dishes to get us through the Spring. 3 cups uncooked bow tie pasta 2 cups frozen peas 1 lb. peeled and deveined cooked medium shrimp, tails removed 1 jar (15 oz.) Alfredo sauce 1/4 cup shredded Parmesan cheese In a Dutch oven, cook pasta according to package directions, adding peas during the last 3 minutes of cooking; drain and return to pan. Stir in shrimp and sauce; heat through over medium heat, stirring occasionally. Sprinkle with cheese.

3 cups cooked chicken, chopped 2 cans (10.75 oz. each) cream chicken soup 2 cups shredded Cheddar cheese 3 cups Panko crispy bread crumbs, or any dry stuffing mix 6 tablespoons butter, melted Heat oven to 350 degrees. Place chicken in bottom of ungreased 13 x 9 inch baking dish. Spoon soup evenly over chicken and top with shredded cheese. In a medium bowl, stir together butter and breadcrumbs. Sprinkle over baking dish. Bake 35 to 40 minutes or until bubbly.
