What weighs about three pounds, is shaped like a football, and although it is an essential part of dailylife, doesn't typically get much attention? If you guessed a healthy, functioning liver, you are right.

The liver is one of several organs within the body that works to clean toxins from inside. At any moment,it can have up to 10 percent of your blood inside as it filters the toxins out. Located on the right side ofthe body, the liver rests just under the ribcage. It is unique in that while it is one of the largest organsinside the body, it is the only part of you that can regenerate if damaged, or partially removed from thebody.

Some may say that you would know right away if there was a problem with your liver, but doctors willtell you that this is not true. Liver disease is a slow-to-show condition that can affect your body for yearswithout any outward signs. Noticeable symptoms of liver disease or damage include dark urine, jaundice(yellowing of the skin or eyes), and swelling in the belly.

Conditions that affect the liver include hepatitis. There are three forms of hepatitis, two of which havevaccines. Hepatitis A is typically spread through contact with fecal matter, while Hepatitis B is spreadthrough contact with bodily fluids, and can be passed from mother to child during birth. Hepatitis Cspreads through contact with the blood of an infected individual.

There are steps that you can take to prevent these conditions and other damage to your liver. The AmericanLiver Foundation suggests that individuals maintain a healthy weight and diet, use alcohol responsibly, avoid the use of illicit drugs and avoid contact with needles. The organization urges people to get HepatitisA and Hepatitis B vaccines. There is no vaccination for Hepatitis C.

Chicken feed produced a golden egg for one Illinois candy company.

Back in 1900, Gustav Goelitz's Confectionery Company produced and sold candy corn as chickenfeed. Goelitz marketed the candy in a box branded with a rooster and the tagline: "Something toCrow About." It caught on.

According to the Goelitz website, the candy was such a success, it "carried the company throughtwo World Wars and the Depression," and saved it from bankruptcy. More than 100 years later, the fourth Goelitz generation is still selling the identical candy and recipe, although the companychanged its name to Jelly Belly Candy after its primary candy product. In honor of its roots, itdeveloped a candy corn-flavored jelly bean.

Candy corn is still a favorite Halloween treat, only it has slipped one notch to second place, withanything chocolate taking the number one honors. Manufacturers produced 9 billion pieces ofcandy corn in 2015; that's 35 million pounds. One serving amounts to 140 calories (3mini-Hershey bars); a single piece is around 3.57 calories. In case you are wondering, there is apreferred way to eat the corn. According to a survey by the National Confectioners Association,43 percent start with the narrow white end. About 10 percent begin eating the wider yellow endfirst. Companies are tinkering with the candy corn recipe and trying new flavors, like caramelapple, caramel popcorn, and cinnamon. The Zachary Confections company (sells to retail storeslike Target) makes 12 varieties, including blackberry cobbler, raspberry lemonade, cherry andpumpkin spice.

Candy corn has made its way into Oreos, M&Ms, coffee, bagels, and even a martini.

From the Chef's Cutting Board...

As all the Boys and Ghouls read this, thoughts ofHalloween are upon us. There are spooky nightsfilled with delightful fright and themed dining tokeep ghosts drooling

Here's October, another favorite month of minewith apples, pears, gourds and just heartwarmingmenus. Apple Hill in Camino, California, has beenproducing a great variety of apples lately. Many ofthe upcoming menus this month will feature applesfrom this region. Gourds of all kinds (from Pumpkinto Butternut Squash) are becoming bountiful.Expect to see more of these as well.

Our next Captain's Dinner is in the work, and invi-tations to the selected few are on their way out.The last Captain's Dinner was a phenomenal hit.I've been able to create classic dishes, with a twist(in ingredients, as well as technique). I look for-ward to doing this monthly.

In the meantime, please continue filling out com-ment cards and join us for the Food Committeeto voice any concerns that my staff and I can makebetter.

If you have any recipes, ideas or suggestions - feelfree to drop them by the dining room orfront desk. You may also email me [email protected].... Chef MJ

– Dr. Wayne DyerAs I listen to people, it’s clear that trauma and crisis abound in our collective lives. Some have a strongfaith in God on which to cling while others do not. Even when we do, an inspirational line or tworemembered or written is helpful when we’re struggling to achieve peace of mind. This month I’ve focusedon a few of Dr. Wayne Dyer’s “Inner Peace” cards. Read through some of them, select those that speakto you, examine why it does, and decide how you will apply it to your life.

Happiness, fulfillment, and purpose in life are all inner concepts. If you don’t have INNER PEACEAND SERENITY, then you have nothing.

You can reshape your thinking so that you never have to think in negatives again. You and only youchoose your thoughts.

Don’t equate your self-worth with how well you do things in life. You aren’t what you do. If you are whatyou do, then when you don’t---you aren’t!

No one can depress you. No one can make you anxious. No one can hurt your feelings. No one can makeyou anything other than what you allow inside.

Forgiveness is the most powerful thing you can do for yourself on the spiritual path. If you can’t learnto forgive, you can forget about getting to higher levels of awareness.

Stop focusing on what you do not have, and shift your consciousness to an appreciation for all that youARE and all that you DO have.

If you are suffering in your life right now, I can guarantee that this condition is tied up with some kindof attachment to how things SHOULD be going.

One of the HIGHEST PLACES you can get to is to be INDEPENDENT of the good opinions of otherpeople.

Most people are SEARCHING for happiness OUTSIDE of THEMSELVES. That’s a fundamentalmistake. Happiness is something that you ARE and it comes from THE WAY THAT YOU THINK.

You’re always alone, but you’re only lonely if you don’t like the person you’re alone with. Think positivethoughts and do high-esteem self-talk.
