Two Volunteer Puppy Raisers forGuide Dogs for The Blind

As they like to say at Guide Dogs for The Blind, “It takes a community to raise a puppy!” and they would love for you to join in the fun.

The Puppy Raising clubs are comprised of a group of experienced and dedicated individuals and families throughout the Sacramento area with the skills and commitment to raise, socialize and nurture specially bred and selected pups in preparation for formal training in anticipation of becoming Guide Dogs. Puppy raising is an accredited 4-H project; however, adults and non 4-H youth may also raise puppies for the Guide Dogs for The Blind organization.

It is the goal of each puppy raising club to see the potential in each and every puppy, and to support and encourage each puppy and raiser so that they can develop to their fullest potential.

These pups are raised in 8 Western states listed below, and the Dallas/Ft. Worth, Texas metropolitan area: Arizona, California, Colorado, Idaho, Nevada, Oregon, Utah, and Washington.

Raisers receive the pups when they are approximately 8 weeks old. Guide Dog puppy

raisers are responsible for teaching the puppies good house manners and basic obedience, and most importantly, socializing them to the world. Another O.J. Jury? Don’t think so…

…..Casey Anthony was found not guilty of the murder of her 2 year-old daughter Caylee Anthony. She was found guilty of 4 lesser accounts of lying to the police and based on time already served, should walk out of jail in July a free person. If you look at just about any media reports out there it seems like about 97% of America thinks the jury got it wrong in a repeat of the travesty of the O.J. murder trial but I just don’t see it.

When you start looking at the facts of the case, you have to wonder why the prosecution set the bar so high with a Murder-1 charge and how in the heck they expected to get a conviction. They had no murder weapon, no cause of death, no witnesses of physical abuse of the child and what seemed like an endless parade of “witnesses” whose testimony was refuted, disputed and convoluted. It was hard to tell who (if anyone) was telling the truth for the defense. The O.J. case on the other hand had overwhelming evidence including DNA at the crime scene, murder weapon, history of abuse, etc. The O.J. acquittal was decided on race and jury ignorance.

Was Casey Anthony a lying, manic-depressive, plotting, uncaring and unfeeling tramp? Sure seems like it. How else do you explain the pictures of her partying in the trailer park and the “Beautiful Life” tattoo she got in the weeks after her daughters supposed disappearance? It’s truly unfathomable that a parent could act this way and she deserves our scorn but don’t blame the jury or compare it to the O.J. travesty of 1994. All we can hope for is that like O.J., justice will eventually catch up to her.

Canadian Bakin’ We have been exploring the Canadian Inside Passage on our 42’ boat the About Time. Our goal was to reach the Broughtons in the northern part of mainland British Columbia. This area is only accessible by boat or seaplane and everyday is an adventure. We have been very successful with living off the land with crabbing, shrimping and fishing. Our freezer is stocked including a very nice halibut. It’s not a secret, but we have found a culinary surprise on this voyage. Canadians seem to have some kind of genetic makeup that includes baking goodies. We anchor up in a beautiful bay along with other boaters to watch the sunset and notice a vessel all dressed in flags. A big sign on the side says “CINNAMON BUNS”. It is a retired 1930’s ferry that an enterprising couple has converted to a live aboard with a bakery. We place our order and the next morning we motor over in the skiff, pick up fresh from the oven, cinnamon buns along with some other delectable’s. In this beautiful country there are small marina’s that service boaters in their very short season of July and August. They each feature some kind of specialty, but they always have something baking. Their generators fire up and we have had our choice of scones, brown bread or fresh baked pies hand delivered to our boat, still hot. It has been our duty to try each one – some have been better than others, but part of our remembrance of this trip is the aroma of those fresh baked pastries on the seas. We will be making our way South very soon and we will be navigating by cinnamon bun instruments.

THE ROYAL COMPANIONS OF GOLD RIVER

DANNY BEBE SONNY

On April 2011, Dog World Magazine wrote a two page article on the pure-white Bolognese. Imagine their surprise when the local Burtonfamily was told their Bolognese was featured in that Dog World Magazine, with photos. A bay area friend sent their photos in as a surprise…and it worked! Once highly sought by 14th century Italian aristocrats, continues to charm with its resounding loyalty and happy disposition the Bolognese breed are believed to have its beginnings on the ancient Mediterranean island of Malta. The Bichon Fris, Coton de Tulear, Havanese, Maltese and Bologneseall appear to have shared a common ancestor in their earliest day Bebe Burton was the first Bolognese to appear in Gold River 12 years ago.Kay Burton is also the happy owner of Sonny Boy Burton age 2 years.Ann Dunn, also of Gold River has the pleasure to be the owner of Danny, age 5. See photos. The Bolognese is very intelligent and makes a great companion. A playful, and friendly breed and will form a close bond with its owner. Their wonderfultemperament is such a joy. No wonder they were considered the greatestgift one King can give another. Long lived, these toys breed has no major health problems. They weigh 8 to12 pounds. The Bolognese Italian heritage dates back many centuries, but to keep that coat pristine white, it may be a good idea to skip the marinarasauce at dinner.

Maintaining the Marketing Edge

Business is much like the proverbial boulder at the top of the cliff, teetering on the edge of unlimited potential- where even the slightest nudge can cause it to move in forward motion, gaining momentum. Within moments, the force of its influence is widespread so that the entire landscape is transformed and that which was familiar- overturned. There is no limit to its scope of impact other than the measure of momentum it gains while in motion. Or, like countless others, the boulder sits fixed and stationary, waiting the opportune time and ideal set of circumstances to jar it loose from its holding place. Yet, all the while exposure to the elements and the test of time erode away whatever opportunities lay latent within its craggy surface. The above analogy is a true description of what Internet Search Engine Marketing is to a business in this unrelenting age of information that we now live. Businesses are either, moving and gaining momentum or they are immobile- slowly and methodically eroding away with ineffective, outdated marketing methods until little or nothing remains but the dust of bygone dreams and wasted opportunities. Search Engine Marketing (SEM) harnesses the power of global Internet exposure and places it within the grasp of average, every day businesses and business owners. Yet, Search Engine Marketing is much more than marketing to the masses. SEM is a focused, measurable medium for reaching any industry’s target market since it’s built around the specific products and services of the company and forged into a proven business model. To retain its competitive edge, today’s successful business must maintain the refined advantage of Internet marketing superiority. SEM makes this seemingly, momentous task- an ongoing reality with personalized services, measurable results and infinite possibilities. There is no limit to the scale of success waiting those willing to envision the panoramic view of unlimited potential before them… and who bravely plunge past the edge until momentum takes over…

Political Observation

School Unions and Jerry Brown: The Perfect Match Governor Jerry Brown Jr. signed the 2011-12 California State Budget on June 30, 2011, the first on-time budget in quite a number of years. To accomplish this task, Brown decided to forego his campaign promises of getting voters involved, not falling to pressure from special interest groups and avoiding accounting gimmicks. He overtly pushed a budget with input only from Democratic leaders, who everyone knows are beholden to special interests groups, and did not comply with any of his campaign promises.

Although this was anticipated, the surprise of the budget came as a trailer bill, AB 114, which clearly demonstrates Brown’s inability to genuflect to special interests.

AB 114 was snuck in to the budget without public or local school board input. As written, the bill directs schools to “…adhere to the level of state funding provided in the Budget and not assume a different, or lower, state funding level. It also provides schools authority to shorten the school year by up to 7 days…” In other words, school districts are to follow the state budget even though funding may fall short, without taking any action other than to reduce the school year. The bill, endorsed by the California Teacher’s Association (CTA), bans the layoff of teachers, regardless if school districts are facing major funding problems.

School districts across the state have been faced with a problem of being unable to purge bad or poorly performing teachers, a serious issue that is especially evident in inner-city schools. Yet Brown and the Democratic leadership in the legislature pushed and approved AB 114, upping the union’s bargaining chips. The next step, the CTA will be proposing legislation, or referendum, to raise taxes, reduce oversight of troubled schools and guarantee its control of school districts. So why bother having locally elected school districts?

Within the Mind of a Millionaire

Endurance – Can You Go The Distance?

Continued from July 2011Definition: 1. To hold up under (hardship, pain, etc.) 2. To tolerate 1. To continue, last 2. To bare pain, etc. without flinching, persist, survive, outlast.

In other words, hold on, hang on and keep on! As I went through the years each of my businesses required sacrifice and endurance. Even when the business was making money I had to invest it back into the business to buy better equipment, advertise, inventory, or to hire employees until such time when I could be rewarded financially. There were years with no return. There were businesses that failed in between my successes that lead to a longer sacrifice between victories. What’s a few years of hard work compared to the rest of your life? What example do you want to set for your children? What is the legacy you would like to leave behind? Would it be to give up when things get tough, or to keep going in spite of adversity? Would it be to take the easy road or take life’s challenges head on? Become a person willing to endure the process until the job is done, keeping your word no matter what challenges come your way. By taking control of your day you will take control of your life, and in turn, you will be less anxious and feel better about yourself. This will allow you to put some, if not all, of your priorities in the order that satisfies you. Remember this, it is not generally the big things in our lives that affect our attitude and the direction of our life, it is usually the small things that turn into insurmountable obstacles affecting our attitude and feeling of accomplishment.

Moments of Happiness

FriendsGreat friends of mine invited me to a 4th of July weekend Bar BQ at their home.

I try to help as best I can in preparing food or moving chairs etc. There were four families. The hosts are always very giving and delightful to be around. We all share conversation and tell it like it is. No one ever gets upset. I’ve always enjoyed my visits.

This time was even more special. It was a beautiful summer evening. The guys, four of us sat at a table by ourselves before the food was ready. This doesn’t usually happen. We all four had a cold beer on that warm evening. I talked a little about happiness and the column in this newspaper. Then I shared a few of my moments of happiness. I asked each of them to share a moment of happiness. We went around the table person by person sharing and discussing a moment of happiness that we each experienced. First it was Rick, then Steve, then Art.

I’ve found that many moments of happiness are not necessarily loud raw-raw moments. As each guy shared, it seemed to be an inner calmness of time.

It’s interesting how many moments of happiness are sometimes very subtle. We don’t always recognize the moments when it’s happening. If you reflect back in your mind you may think of the moments of peace that bring you comfort. That is a moment of happiness.

That evening at that table was a moment of happiness for me.

Act Right

Make A Commitment! Webster defines commitment as “a decisive moral choice that involves a person to a definite course of action.” For about 20 years I had been an “actor” (small “a”, in quotation marks). By that I mean that I had made a portion of my income each year by acting. Whatever my “real job” was, I always made sure that it would leave me time for rehearsals and performances if I wanted to do a play, and that I would be free to do local TV and radio commercials to supplement my income. Although I had wanted to be an actor for as long as I could remember, I had never been willing to really seriously pursue it as a career. I used various excuses; “It isn’t fair to the family.” “L.A. is where you have to be, and it’s no place to raise kids.” “Someday they’ll discover me.” One afternoon I was sitting with a good friend, telling him of my latest acting triumph, another local television spot. “ You know, Charlie,” he said, “You do pretty well just screwing around with acting. What would happen if you really made a commitment to being an Actor?” Something in that simple question struck home. What would happen if I really did make a commitment to being an Actor . . . capital “A”, and no quotation marks? Perhaps the reason that I had never been able to settle into any other career was that even though I had never been willing to make that commitment to being an actor, I also had never been willing to give it up. Consequently I had moved from job to job, never really committing myself to any of them, either. After several days of thought, I came to a decision . . . . and next column I’ll share that decision with you. In the meantime, you can write to me a [email protected] it you have any questions.

Take Back Your Life

Physical, Chemical and EmotionalOld School: Life sucks then you die

New School: Life is what we decide it is and we live to 100

We must start with your philosophy or belief system concerning life. What is your personal mission statement? From this we can allow everything that comes into our lives to fit or not. Are you controlled by outside influences or is your life lived by your internal foundation? Do you believe that the new health care reform will improve the health of our citizens? Do you believe that our government will provide life, liberty and the pursuit of happiness? We need to take responsibility for our own heath, our own bodies, and our own mind. No one; doctor, clinic insurance company, government or agency will give us sparking health or well being. Health can be obtained once there are some basic principles understood. Let’s begin with the philosophy of life that runs and controls the function of the human body. There seems to be two opposing views. If you have never been exposed to the difference you will by default wind up in one of them. Look at the characteristics of the two and decide where you fit.

By Dan F. Deshong

For once you have tasted flight you will walk the earth with your eyes turned skywards, for there you have been and there you will long to return. Leonardo da Vinci

Making Tough DecisionsPeople use lawyers to help them make tough decisions. Oftentimes, an

unrepresented person, when faced with a decision having significant consequences and unknown or problematic legal dimensions will lack the confidence to make any decision or take any action, and so will live with whatever the “default” result is. Other unrepresented persons will simply make the wrong decision due to lack of legal input and objectivity, the qualities brought to the problem by a qualified attorney.

Social media is all the rage. From Twitter to Facebook to LinkedIn, everyone absolutely adores the potential social media promises. However, can social media actually produce tangible results for your firm or company?

I think it can, but not in acquiring new clients or customers because we have yet to figure out how to do this in a cost and time-effective manner.

But I believe it does work for employee retention and recruitment, two areas organizations do not necessarily associate with social media.

With the economy improving, all conditions point to a shortage of quality talent. Just as you want to engage your clients and customers with social media, you also should think about engaging employees and prospects in order to maintain a successful firm or business.

Encouraging employees to establish and maintain a social media presence that fully reflects their job and company responsibilities can greatly enhance the pride they take in their work. Many people and companies want to separate personal from business when it comes to social media. Not only do I think this is a mistake – it’s not practical.

In the age of the Internet, nothing is a secret – information is only a Google search away, so why not be 100 percent transparent when establishing your Facebook profile and include all aspects of your life that are public knowledge?

If you allow and encourage employees to include their role and company information in their social media identities, they will feel connected to the presence they are establishing. With an increasing amount of time being spent in social media channels, our social media identities are quickly converging with our “real life” identities.

Dear Betty,Last month my husband wrote you about my habit of

talking to him from another room. Well, we are practicing your “Walk, THEN, talk!” rule and I have to admit that it is helping. We’re being more playful in our relationship. But frankly I think there is something wrong with his hearing. The TV is up too loud for me and I find myself repeating a little too often. How do I approach this sensitive topic of hearing loss?

Mrs.Annoyed in Miners Village-

Dear Mrs. Annoyed,Congratulations on using the Walk, THEN, talk rule. I really love the

difference it makes for people in their communication with one another and how it enhances their sense of intimacy. Never underestimate the power of the little things in life.

So, you think your husband has a hearing loss? If he is a baby boomer, there is a one in six chance that he does. If he is over 65 years of age, that number increases to one in three. Undetected hearing loss is very common but very misunderstood. Most people with gradual hearing loss are not aware of the change in their hearing because they can still HEAR. It’s just that they have a hard time understanding or distinguishing conversations. What most people don’t realize is that the longer you go without treating hearing loss, the more difficult it will be to correct once it gets worse. If you or someone you love is noticing changes in their hearing, the first step is to have a thorough hearing test. Your husband may be reluctant to do this so check out my website www.AvalonHearing.com and ask him to take the Free Hearing Quiz. That’s a great place to start. Good luck!

Lots of business people approach mixers like speed dating. Success is measured by the speed of meeting prospects, by the number of cards you collect at the end of the event. The more the better. It’s like a race against time. In some mixers, cards are just put out on the table for grabs. As a result, you may end up with a bunch of solid cards and a vague idea whose they belong to. We now live in such a fast-paced world we expect instant results. Speed dating and mixers are therefore understandable and justifiable. However, when it comes down to relationships, whether it’s personal or business, I believe in less is more and quality over quantity. That’s why I like monthly mixers by the National Association of Professional Women (NAPW) at Coco’s where you meet a small group of dynamic women. The set date and venue breeds familiarity but a different guest speaker each time brings new information to the group. Bigger mixers definitely can be fun too. Like the one by the Greater Sacramento Vietnamese American Chamber Commerce (GSVACC) in Pho Saigon Bay on July 12. It was quite a festive atmosphere: gifts and flowers, tasty food and upbeat music, and believe it or not, the Kings gorgeous dance ladies. The guests were provided with various ways of making friends: ice-breaking bingo game, teams building, slogan competition, raffles and prizes, and anniversary and festival announcements. As I “mixed” with many familiar faces and those I became acquainted with the first time in this cozy not-so-big restaurant, I didn’t feel pressured I had to race through people. I had a delightful time to really enjoy connecting with old friends and getting to know several new ones. I appreciated Mai, the GSVACC President, and her simple opening, “The goal is to find one or two people to be friends with and probably do business with later...” Modest as it sounds, that is a very sensible goal. Instead of rushing through a bunch of vague cards knowing people on a superficial level, it is a whole lot better to build a few good relationships at a time, nurture them and they will blossom before you know it. Life doesn’t have to be a race where speed matters. It’s a journey where the quality of the people you’re with makes a huge difference.

Charley Reese’s Final column!

Charley Reese’s final column for the Orlando Sentinel... He has been a journalist for 49 years. He is retiring and this is HIS LAST COLUMN. Be sure to read the Tax List at the end. This is about as clear and easy to understand as it can be. The article below is completely neutral, neither anti-republican or democrat. Charlie Reese, a retired reporter for the Orlando Sentinel, has hit the nail directly on the head, defining clearly who it is that in the final analysis must assume responsibility for the judgments made that impact each one of us every day. It’s a short but good read. Worth the time. Worth remembering! 545 vs. 300,000,000 People -By Charlie Reese Politicians are the only people in the world who create problems and then campaign against them. Have you ever wondered, if both the Democrats and the Republicans are against deficits, WHY do we have deficits? Have you ever wondered, if all the politicians are against inflation and high taxes, WHY do we have inflation and high taxes? You and I don’t propose a federal budget. The President does. You and I don’t have the Constitutional authority to vote on appropriations. The House of Representatives does. You and I don’t write the tax code, Congress does. You and I don’t set fiscal policy, Congress does. You and I don’t control monetary policy, the Federal Reserve Bank does. One hundred senators, 435 congressmen, one President, and nine Supreme Court justices equates to 545 human beings out of the 300 million are directly, legally, morally, and individually responsible for the domestic problems that plague this country. I excluded the members of the Federal Reserve Board because that problem was created by the Congress. In 1913, Congress delegated its Constitutional

duty to provide a sound currency to a federally chartered, but private, central bank. I excluded all the special interests and lobbyists for a sound reason. They have no legal authority. They have no ability to coerce a senator, a congressman, or a President to do one cotton-picking thing. I don’t care if they offer a politician $1 million dollars in cash. The politician has the power to accept or reject it. No matter what the lobbyist promises, it is the legislator’s responsibility to determine how he votes. Those 545 human beings spend much of their energy convincing you that what they did is not their fault. They cooperate in this common con regardless of party. What separates a politician from a normal human being is an excessive amount of gall. No normal human being would have the gall of a Speaker, who stood up and criticized the President for creating deficits. The President can only propose a budget. He cannot force the Congress to accept it.

The Constitution, which is the supreme law of the land, gives sole responsibility to the House of Representatives for originating and approving appropriations and taxes. Who is the speaker of the House? John Boehner. He is the leader of the majority party. He and fellow House members, not the President, can approve any budget they want. If the President vetoes it, they can pass it over his veto if they agree to. It seems inconceivable to me that a nation of 300 million cannot replace 545 people who stand convicted -- by present facts -- of incompetence and irresponsibility. I can’t think of a single domestic problem that is not traceable directly to those 545 people. When you fully grasp the plain truth that 545 people exercise the power of the federal government, then it must follow that what exists is what they want to exist. If the tax code is unfair, it’s because they want it unfair. If the budget is in the red, it’s because they want it in the red. If the Army & Marines are in Iraq and Afghanistan it’s because they want them in Iraq and Afghanistan .... If they do not receive social security but are on an elite retirement plan not available to the people, it’s because they want it that way. There are no insoluble government problems. Do not let these 545 people shift the blame to bureaucrats, whom they hire and whose jobs they can abolish; to lobbyists, whose gifts and advice they can reject; to regulators, to whom they give the power to regulate and from whom they can take this power. Above all, do not let them con you into the belief that there exists disembodied

mystical forces like “the economy,” “inflation,” or “politics” that prevent them from doing what they take an oath to do. Those 545 people, and they alone, are responsible. They, and they alone, have the power. They, and they alone, should be held accountable by the people who aretheir bosses. Provided the voters have the gumption to manage their own employees... We should vote all of them out of office and clean up their mess! Charlie Reese is a former columnist of the Orlando Sentinel Newspaper. What you do with this article now that you have read it... is up to you. This might be funny if it weren’t so true. Be sure to read all the way to the end:

Tax his land, Tax his bed,

Tax the table, At which he’s fed.

Tax his tractor, Tax his mule,

Teach him taxes Are the rule.

Tax his work, Tax his pay, He works for

Tax his cow, Tax his goat, Tax his pants, Tax his coat.

What’s Cooking with Mom

Cold Noodles with Peanut or Sesame SauceA crowd-pleaser and an easy main

course on a hot day. The cucumber adds nice crunch and freshness to what is otherwise a pretty dense dish. Makes: 2 main-course or 4 side-dish or appetizer servings Time: 30 minutesIngredients:Salt 1 medium or 2 small cucumbers (optional)12 ounces fresh Chinese egg noodles or long pasta, like linguine2 tablespoons dark sesame oil1/2 cup tahini, peanut butter, or a combination2 tablespoons sugar3 tablespoons soy sauce, or to taste1 teaspoon minced fresh ginger (optional)1 tablespoon rice or white wine or other vinegarHot sesame oil or Tabasco sauce to taste1/2 teaspoon freshly ground black pepper, or more to tasteAt least 1/2 cup chopped scallion for garnish

Note: To make it more substantial, add 1/2 cup or so of small tofu cubes or cooked soybeans. Or top each serving with a few slices of grilled, roasted, or poached chicken.Directions:1. Bring a large pot of water to a boil and salt it. Peel the cucumbers if you’re using them, cut them in half lengthwise, and, using a spoon, scoop out the seeds. Cut the cucumber into shreds (you can use a grater for this) and set aside.2. Cook the noodles in the boiling water until tender but not mushy. Meanwhile, whisk together the sesame oil and tahini, sugar, soy, ginger, vinegar, hot oil, and pepper in a large bowl. Thin the sauce with hot water until it’s about the consistency of heavy cream; you will need 1/4 to 1/2 cup. Stir in the cucumber. When the pasta is done, drain it and run the pasta under cold water. Drain.3. Toss the noodles with the sauce and cucumbers. Taste and adjust the seasoning (the dish may need salt), then garnish with the scallion and serve.

Fish Sandwich with Orange-Ginger Mayonnaise

For a quick, healthy dinner, give these tasty sandwiches a try. Fish fillets are lightly coated in bread crumbs that have been seasoned with ginger and cayenne, then baked; resulting in a moist, crunchy piece of fish that is considerably lower in fat and calories than its fried cousin. A delicious topping of mayonnaise, mixed with orange marmalade and a bit of ginger makes for a fresh and fabulous fish sandwich.

Ingredients:4 fresh or frozen fish fillets (such as cod, orange roughy, or pike), about 1/2 inch (about 1 pound)Nonstick cooking spray1/4 cup fine dry bread crumbs1/4 teaspoon ground ginger1/8 teaspoon salt1/8 teaspoon ground red pepper2 tablespoons butter or margarine, melted4 lettuce leaves4 baguette-style rolls, hamburger buns, or kaiser rolls, split and toasted1 recipe Orange-Ginger Topper (see recipe below)

Directions:1. Thaw fish, if frozen. Rinse fish; pat dry with paper towels.2. Lightly coat a shallow baking pan with nonstick cooking spray; set aside. In a small bowl combine bread crumbs, ginger, salt, and ground red pepper; set aside. Place fish fillets on waxed paper. Brush tops and sides of the fish with melted butter; coat tops and sides with crumb mixture.3. Arrange the fish fillets in a single layer, crumb sides up, in prepared baking pan. Bake, uncovered, in a 450 degree F oven for 4 to 6 minutes or until fish flakes easily when tested with a fork.4. To serve, top bottoms of rolls with lettuce. Top with fish and Orange-Ginger Topper. Add roll bottoms. Makes 4 servings.5. Orange-Ginger Topper: In a small bowl stir together 1/4 cup low-fat mayonnaise dressing, 1 teaspoon orange marmalade, and 1/4 teaspoon ground ginger.

Ginger-Sesame Meat LoafMeat loaf is a hearty dish that is traditionally

made using ground beef. This recipe changes things up a bit, using chicken and an assortment of ingredients like ginger, stir-fry sauce, and lemongrass for a flavor that is distinctly Asian. Pad-thai noodles with green onions make a great side.

Ingredients:Nonstick cooking spray2 eggs, lightly beaten1 cup chopped green onion1 cup finely shredded carrot1/4 cup reduced-sodium soy sauce4 cloves garlic, minced2 Tbsp. sesame seeds1 Tbsp. finely chopped lemongrass or 2 tsp. finely shredded lemon peel (optional)1 Tbsp. grated fresh ginger2 tsp. chili powder1-1/2 lb. uncooked ground chicken8 oz. Pad Thai noodles (rice noodles)2/3 cup purchased Pad Thai stir-fry sauce2 Tbsp. chicken brothSliced green onions and/or sesame seeds (optional)

Directions:1. Preheat oven to 350F. Lightly coat an 8x4x2-inch loaf pan with cooking spray; set aside. In bowl combine eggs, onions, carrots, soy sauce, garlic, sesame seeds, lemongrass, ginger, and chili powder; add chicken. Mix well. Pat into pan.2. Bake for 60 to 70 minutes or until an instant-read thermometer inserted into center of loaf registers 165F. Let stand 10 minutes before removing from pan.3. Meanwhile, prepare noodles according to package directions; drain. Toss with 1/3 cup of the Pad Thai sauce. Return to pan; heat through. In a small saucepan heat remaining Pad Thai sauce and broth just to boiling. To serve, slice meat loaf; divide noodles among plates; top with meat loaf slices. Drizzle with Pad Thai-broth mixture. Sprinkle with onions and/or sesame seeds. Makes 8 servings.

Roasted Squash and Pepper TartDuring summer squash season,

you may be questioning your choice to plant even one plant as you try to keep up with its harvest. You may also live next to generous neighbors with the same problem, and who deposit their extras on your doorstep. This zucchini-laden pizza will make you grateful for your bounty. If you still have extras, dice and freeze the squash in quart-size freezer bags for use in winter soups and stews.

Ingredients:3 cups cups cut up squash, such as pattypan, yellow summer squash, or zucchini2 red and/or yellow sweet peppers, cut into wide strips1 large sweet onion and/or fennel bulb, cut into wedges2 Tbsp. olive oilSalt or salt and freshly ground black pepper2 oz. Parmesan cheese1/2 of a 17.3-oz. pkg. frozen puff pastry sheets (1 sheet), thawed1/2 cup halved cherry tomatoes2 Tbsp. balsamic vinegar1 Tbsp. snipped fresh thyme1 cup purchased refrigerated creamy Parmesan dressing1/4 cup finely chopped sweet onion

Directions:1. Preheat oven to 450 degrees F. Coat sides and bottom of 13x9x2-inch baking pan with nonstick cooking spray. Spread squash, sweet peppers, and onion wedges in pan. Toss with olive oil; sprinkle with salt and pepper. Roast, uncovered, 20 to 25 minutes or until tender, stirring once.2. Meanwhile, using a vegetable peeler, cut Parmesan cheese in thin strips. Set aside. On lightly floured surface, roll puff pastry to 13x9-inch rectangle. Remove baking pan from oven. Add tomatoes to pan. Toss vegetables with balsamic vinegar and half the Parmesan cheese. Spread vegetables evenly in pan. Lay pastry over vegetables, tucking in edges. Return pan to oven; bake for 15 minutes or until pastry is puffed and golden.3. Remove pan from oven; cool 5 minutes. Invert a 15x10x1-inch baking pan over pan with pastry. Carefully invert pans together; remove 13x9 pan. Transfer any vegetables that stick to finished tart. Sprinkle tart evenly with remaining cheese and 2 teaspoons of the thyme. In small bowl stir together dressing, chopped onion, and remaining 1 teaspoon thyme. Cut in squares. Serve tart warm or at room temperature with dressing.

We’ve all been brought up with the idea that every spring we should clean our homes from end to end and freshen up for our health. This might have come from the idea that in spring, things are fresh and new and cleaning the home will renew your feelings about yourself.

1. Improve Your Health Without Diets Or Pills

Pollens, mold, and mildew spores are dumped into the air at incred-ible intensity. Pollutants from car exhaust, burning fields, and cigarette smoke were also dumped into the stagnant air. All this gunk drifted into your home and when you closed the house up, where do you suppose it’s been ever since? It got trapped in your home. Thanks to today’s air tight, energy efficient homes, your family and guests have been breathing that recycled air-garbage. 2. Your Home Is Your Personal Breeding Ground For Invisible Crit-ters And Varmints In addition to the air-garbage from outside, you have uncontrolled vermin inside. Too tiny to see, dust mites live in your carpet, upholstery, bedding and drapes by the millions. By now their dead bodies and dung are in your house by the billions. They live off your dead skin as do billions of bacteria in your home, including those that cause staph and strep infections. Ever wonder why so many people get strep as soon as it cools off outside? Now you know. Plus, fleas brought into your house last summer don’t die off like they do outside when it freezes. Bacteria and germs have been breeding in the warm fibers of your carpet.

3. Does Your Bedroom Smell Like A Gerbil? Here’s Why…

Besides being Harmful to our health, all the germs, bacteria and crit-ters that live off dead skin from us and our pets, stink. They eat skin and along with other excretions, put out tainted methane gas which smells bad. 4. Heavy Soil From Outside Sifts Deep Into Your Carpet Never To Be Seen Again Until the winter rains have washed the sand soil from the roads and sidewalks, heavy soils from outside are tracked onto your carpet, wiggle down deeper than your vacuum can reach and stay there, grinding your carpet down into worthless fibers. You’ll find them in your vacuum bag.

Choosing a company can be treacherous. I’ll tell you up front that my service is not for everybody, but here are some reasons to choose me: If all you want is a cheap, brush-the-dirt-off-the-sur-face cleaning, lots of companies can help you. Choose us when you want deep, thorough cleaning. We’ll give you the fluffiest, freshest, healthiest, longest lasting, clean carpets possible . . .

Cleaning now, will get rid of sandy soils before they do lots of damage or get too deep.

5. Finally – Someone Who Can Remove Those Ugly Black Lines By The Walls, or Crevice of Steps I’ve had new clients call us to evaluate some embarrassing black lines where the carpet meets the wall and at the edges of steps and jagged lines under curtains. They told me no carpet cleaner could get them out and in some cases they had tried up to five different firms. But the black remained. I inspected these lines and found the cause to be an air filtration problem. With extra effort and knowledge on our part, the ugly black lines can be removed. I told the client this and they were apprehensive. I also told them if it didn’t come clean as I described, they would not have to pay us. How’s that for confidence? Yes, we cleaned the ugly black lines. Yes, our clients were happy. 6. Do-It-Yourself Folks Get What They Paid For… …Nothing The problems I have described here can’t be fixed very

well with any home remedy. Sure you can dust and do the basic cleaning just fine. But drapes, fine rugs and upholstery often cannot be safely cleaned except by a professional. Let’s face it. If those puny little cleaning systems could even come close to the effectiveness of a trained professional using a $55,000.00 steam cleaning system, no one would pay the money for them. But There’s Still One Thing You Should Know . . .

But There’s Still One Thing You Should Know . . .
